RASPBERRY FOOL (RASPBERRIES AND CREAM)
Raspberry Fool is a quick and easy raspberry dessert recipe. It's essentially raspberries and cream that's been swirled together to make an elegant treat!

Steps:
- Puree 1 ½ cups of the Driscoll's raspberries in a food processor or blender with the 2 tablespoons of granulated sugar.
- In a large bowl, add the cream, confectioners sugar and vanilla extract. Mix with an electric hand mixer or whisk by hand until stiff peaks form.
- With a rubber spatula, gently fold in ¾ of the pureed raspberries into the whipped cream mixture, leaving visible swirls. Gently fold in the rest of the puree but be careful not to overmix. Spoon the fool into 4-6 glass cups or small bowls. Top with additional raspberries and serve.

RASPBERRY JELLO SALAD
This Raspberry Jello Salad could not be easier to make, and it looks so beautifully bright and festive on a holiday table.

- Pour raspberry gelatin into the bottom of a 9 by 13 inch baking dish. Pour boiling water over the gelatin, and stir to dissolve.
- Add applesauce and stir.
- Carefully add frozen raspberries, and press them down in an even layer.
- Cover and refrigerate, 2 hours or until set.
- An hour or two before serving, stir sour cream and mini marshmallows together and spread over the set raspberries. Cover and refrigerate until ready to serve.

- Pour through a strainer into a bowl and press the mixture with the back of a spoon against the sides of the strainer to squeeze out liquid.
- Discard seeds.

- Chill.

- In medium bowl, dissolve gelatin in boiling water; set aside to cool to room temperature.
- Heat oven to 350°F. In medium bowl, mix Crust ingredients. Press into ungreased 13x9-inch (3-quart) baking dish. Bake 10 minutes. Cool on cooling rack.
- In medium bowl, beat cream cheese, 1 cup sugar and the vanilla with electric mixer on medium speed until smooth. Beat in whipped topping. Spread over cooled crust.
- Spread raspberries over filling; pour cooled gelatin on top. Refrigerate 3 to 4 hours or until firm. Cut into 4 rows by 3 rows.

RASPBERRY AND CREAM SALAD
Delicious congealed raspberry salad with cream cheese and pretzel topping. Love the sweet with the salty, and anything with cream cheese of course. The pie filling I use is Solo brand and is a smallish can - I believe about 12 oz. This makes a pretty "red" alternative for the Holiday season. Printed off the internet some time ago so can't give proper credit.

Steps:
- Pour the raspberry gelatin into a mixing bowl and combine with boiling water until gelatin is melted.
- Add the raspberry pie filling.
- Pour into a glass 9x13" pan and place in the refrigerator until set.
- With a mixer, combine the cream cheese, sugar and whipped topping until smooth and thoroughly mixed.
- Spread over the set gelatin mixture.
- Combine the melted margarine, pretzels, walnuts and sugar until well mixed.
- Sprinkle the topping over the cream cheese layer.

RASPBERRY CREAM PIE

- Preheat the oven to 350 degrees F.
- To make the crust, crush the cookies in a food processor (or smash in a ziptop bag with a rolling pin). Stir in the melted butter until combined. Pour into a regular pie pan and press the crumbs all over the pan and up the sides. Bake just long enough for it to set, 3 to 4 minutes. Let cool completely.
- Put the raspberries on a plate or in an empty pan. Smash them with a fork, then sprinkle on the sugar. Stir together and allow to sit for 15 minutes.
- In the bowl of an electric mixer, combine the raspberry yogurt with the instant vanilla pudding mix (just the powder itself). Beat on low until combined, about 1 minute. Pour in the heavy cream and whip on low for 30 seconds. Stop the mixer and scrape down the bowl with a rubber spatula. Turn the mixer on medium-high speed and beat until thick, about 2 minutes.
- Turn off the mixer, then fold in the raspberries until just combined. Pour into the cooled crust and spread evenly. Freeze until very firm, about 2 hours. Cut into slices and top each slice with cookie crumbs, dollops of whipped cream and extra raspberries.

- Pour jello into a large bowl (helps with splatters while mixing). Add 2 cups of boiling water and stir to dissolve.
- Add 8 ounce softened and chopped cream cheese to dissolved, hot jello. Let stand for 5 minutes for cream cheese to soften. Use hand mixer (or blender) on LOW speed to thoroughly combine. (TIP: A blender or immersion blender makes the least amount of mess and blends in the cream cheese best. If you don't have a blender, place the mixing bowl in the sink and beat it in there with a hand mixer. You will have yourself a kitchen counter clean up!) Mix until smooth and large lumps are no longer visible. (This will take a couple minutes to mix and some very small lumps may remain).
