Raspberry Fool is a quick and easy raspberry dessert recipe. It's essentially raspberries and cream that's been swirled together to make an elegant treat!

2 cups Driscoll's raspberries (12 ounce package)
2 tablespoons granulated sugar
2 cups whipping cream
¼ cup confectioners sugar (powdered sugar)
1 teaspoon vanilla extract*

Steps:

  • Puree 1 ½ cups of the Driscoll's raspberries in a food processor or blender with the 2 tablespoons of granulated sugar.
  • In a large bowl, add the cream, confectioners sugar and vanilla extract. Mix with an electric hand mixer or whisk by hand until stiff peaks form.
  • With a rubber spatula, gently fold in ¾ of the pureed raspberries into the whipped cream mixture, leaving visible swirls. Gently fold in the rest of the puree but be careful not to overmix. Spoon the fool into 4-6 glass cups or small bowls. Top with additional raspberries and serve.

This Raspberry Jello Salad could not be easier to make, and it looks so beautifully bright and festive on a holiday table.

2 packages of raspberry gelatin, 3 oz (two small boxes)
2 cups boiling water
2 cups applesauce
24 ounces frozen raspberries
2 cups sour cream
2 cups mini marshmallows

Steps:

  • Pour raspberry gelatin into the bottom of a 9 by 13 inch baking dish. Pour boiling water over the gelatin, and stir to dissolve.
  • Add applesauce and stir.
  • Carefully add frozen raspberries, and press them down in an even layer.
  • Cover and refrigerate, 2 hours or until set.
  • An hour or two before serving, stir sour cream and mini marshmallows together and spread over the set raspberries. Cover and refrigerate until ready to serve.

1 (10 ounce) package frozen raspberries, thawed & drained well
6 tablespoons olive oil
1/4 cup whipping cream
2 tablespoons sherry wine vinegar
1/2 teaspoon salt

Steps:

  • Place raspberries in a blender and process until smooth.
  • Pour through a strainer into a bowl and press the mixture with the back of a spoon against the sides of the strainer to squeeze out liquid.
  • Discard seeds.
  • Combine the raspberry puree, olive oil,& remaining ingredients, whisking until smooth.
  • Chill.

1 box (8-serving size) Jell-O™ raspberry-flavored gelatin
2 cups boiling water
3 cups mini pretzels, crushed
3/4 cup butter, melted
3 tablespoons sugar
1 package (8 oz) cream cheese, softened
1 cup sugar
1 teaspoon vanilla
1 container (8 oz) Cool Whip frozen whipped topping, thawed
10 oz raspberries, fresh or frozen unsweetened

Steps:

  • In medium bowl, dissolve gelatin in boiling water; set aside to cool to room temperature.
  • Heat oven to 350°F. In medium bowl, mix Crust ingredients. Press into ungreased 13x9-inch (3-quart) baking dish. Bake 10 minutes. Cool on cooling rack.
  • In medium bowl, beat cream cheese, 1 cup sugar and the vanilla with electric mixer on medium speed until smooth. Beat in whipped topping. Spread over cooled crust.
  • Spread raspberries over filling; pour cooled gelatin on top. Refrigerate 3 to 4 hours or until firm. Cut into 4 rows by 3 rows.

Delicious congealed raspberry salad with cream cheese and pretzel topping. Love the sweet with the salty, and anything with cream cheese of course. The pie filling I use is Solo brand and is a smallish can - I believe about 12 oz. This makes a pretty "red" alternative for the Holiday season. Printed off the internet some time ago so can't give proper credit.

2 (6 ounce) packages raspberry gelatin powder or 2 (6 ounce) packages Jello gelatin
4 cups boiling water
2 (12 ounce) cans raspberry pie filling
1 cup sugar
1 (8 ounce) package cream cheese, room temperature
1 (12 ounce) container whipped topping, light is fine (Cool Whip)
2 cups crushed pretzels
1 cup crushed walnuts
2 tablespoons sugar
1/4 cup melted margarine

Steps:

  • Pour the raspberry gelatin into a mixing bowl and combine with boiling water until gelatin is melted.
  • Add the raspberry pie filling.
  • Pour into a glass 9x13" pan and place in the refrigerator until set.
  • With a mixer, combine the cream cheese, sugar and whipped topping until smooth and thoroughly mixed.
  • Spread over the set gelatin mixture.
  • Combine the melted margarine, pretzels, walnuts and sugar until well mixed.
  • Sprinkle the topping over the cream cheese layer.
  • Keep refrigerated until ready to serve.

25 chocolate sandwich cookies, such as Oreos, plus chocolate sandwich cookie crumbs, for serving
4 tablespoons butter, melted
1 generous cup raspberries, plus more for serving
3 tablespoons sugar
Two 6-ounce containers raspberry yogurt
One 3.4-ounce package instant vanilla pudding mix
1 cup heavy cream
Whipped cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the crust, crush the cookies in a food processor (or smash in a ziptop bag with a rolling pin). Stir in the melted butter until combined. Pour into a regular pie pan and press the crumbs all over the pan and up the sides. Bake just long enough for it to set, 3 to 4 minutes. Let cool completely.
  • Put the raspberries on a plate or in an empty pan. Smash them with a fork, then sprinkle on the sugar. Stir together and allow to sit for 15 minutes.
  • In the bowl of an electric mixer, combine the raspberry yogurt with the instant vanilla pudding mix (just the powder itself). Beat on low until combined, about 1 minute. Pour in the heavy cream and whip on low for 30 seconds. Stop the mixer and scrape down the bowl with a rubber spatula. Turn the mixer on medium-high speed and beat until thick, about 2 minutes.
  • Turn off the mixer, then fold in the raspberries until just combined. Pour into the cooled crust and spread evenly. Freeze until very firm, about 2 hours. Cut into slices and top each slice with cookie crumbs, dollops of whipped cream and extra raspberries.

5 cups boiling water
2/3 cup sugar
4 boxes (10 oz. each) frozen raspberries
4 Tablespoons lemon juice
1/2 pint whipping cream
1 package (8 oz.) Philadelphia Cream Cheese, softened
1/3 cup powdered sugar
1 teaspoon vanilla
1/4 teaspoon salt

Steps:

  • Dissolve Jell-O in boiling water. Add sugar, stir until dissolved. Add frozen berries and lemon juice. Mix well and chill until mixture starts to congeal.
  • Whip cream. Beat together softened Kraft Philadelphia Cream Cheese, powdered sugar, vanilla, and salt. Blend whipped cream with cream cheese mixture.
  • Place 1/2 of thickened raspberry mixture in an 8 x 8 plastic or glass pan. Place cream mixture on top and then remaining raspberry mixture. Refrigerate several hours or overnight.

1 (6 ounce) box raspberry Jell-O gelatin (for diabetic, use sugar free jello)
2 cups raspberries (can use fresh or frozen if using frozen thaw completely and drained)
1 (8 ounce) carton Cool Whip (for diabetic, use sugar free or low sugar coolwhip)
1 (8 ounce) package cream cheese

Steps:

  • Beat cream cheese til smooth and creamy with mixer.
  • Mix all ingredients in order given, into cream cheese.
  • Stir with wooden spoon (not mixer as it will be running).
  • Keep in refrigerator until set, about 4 hours. Can use any other flavors, example like: Orange with orange jello mix, or can use can of fruit cocktail mix (juices must be drained), etc.

  • Add 8 ounce softened and chopped cream cheese to dissolved, hot jello. Let stand for 5 minutes for cream cheese to soften. Use hand mixer (or blender) on LOW speed to thoroughly combine. (TIP: A blender or immersion blender makes the least amount of mess and blends in the cream cheese best. If you don't have a blender, place the mixing bowl in the sink and beat it in there with a hand mixer. You will have yourself a kitchen counter clean up!)
