This crunchy coconut shrimp is baked instead of fried, and so easy! Great for dinner or as an appetizer. I serve with orange marmalade for dipping.

1 pound large shrimp, peeled and deveined
⅓ cup cornstarch
1 teaspoon salt
¾ teaspoon cayenne pepper
2 cups flaked sweetened coconut
3 egg whites, beaten until foamy

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Lightly coat a baking sheet with cooking spray.
  • Rinse and dry shrimp with paper towels. Mix cornstarch, salt, and cayenne pepper in a shallow bow; pour coconut flakes in a separate shallow bowl. Working with one shrimp at a time, dredge it in the cornstarch mixture, then dip it in the egg white, and roll it in the coconut, making sure to coat the shrimp well. Place on the prepared baking sheet, and repeat with the remaining shrimp.
  • Bake the shrimp until they are bright pink on the outside and the meat is no longer transparent in the center and the coconut is browned, 15 to 20 minutes, flipping the shrimp halfway through.

  • In small serving bowl, mix preserves and mustard. Cover; refrigerate until serving time.
  • Arrange shrimp on serving platter.
  • Dip shrimp first into preserves mixture and place on individual serving plate; sprinkle or spoon coconut onto shrimp.

COCONUT-LIME MARINATED AND GRILLED SHRIMP

The quick and easy marinade in this recipe is a great way to use up that leftover coconut milk you have in your refrigerator. It adds a touch of sweetness to grilled shrimp and only takes 30 minutes to infuse tremendous flavor into your next dinner. Serve with steamed white rice or cold rice noodles for a light but delicious meal.

3 large limes (about 10 ounces)
One 1/2-inch piece fresh ginger
2 large cloves garlic
1/4 to 1/2 teaspoon crushed red pepper flakes, to taste
2 tablespoons canola oil
1/3 cup canned coconut milk
Kosher salt
1 pound jumbo shrimp (16/20), peeled and deveined
1 small scallion, thinly sliced

Steps:

  • Zest and juice 2 of the limes (you should have about 1 tablespoon zest and 1/4 cup juice) and add to a medium glass bowl. Peel and grate the ginger and garlic and add to the bowl along with the red pepper flakes, canola oil, coconut milk and 1 1/2 teaspoons salt. Stir to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lime into wedges. Reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels; don't worry if the coconut milk has hardened while it was in the refrigerator. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Top with the sliced scallion and serve with the reserved lime wedges.

1/3 cup cornstarch
3/4 teaspoon salt

1 cup diced pineapple
1/2 cup finely chopped red onion

Steps:

  • Peel and devein shrimp, leaving tails intact. Make a slit down inner curve of each shrimp, starting with the tail; press lightly to flatten. 2 1/2 cups chicken stock
1 1/2 cups sweetened flaked coconut
1 cup long grain rice
4 tablespoons vegetable oil
1 1/2 lbs large shrimp, peeled and deveined
salt
fresh ground black pepper
1 small yellow onion, sliced
8 leaves napa cabbage, thinly shredded
1 cup shredded carrot
1 teaspoon crushed red pepper flakes
3 large garlic cloves, chopped
fresh ginger, peeled and grated (3-inch piece)
1 red bell pepper, seeded and thinly sliced
3 tablespoons tamari
5 scallions, thinly sliced
20 fresh basil leaves, chopped
1/4 cup fresh cilantro, chopped
1 lime, juice of

Steps:

  • In a saucepan, combine 1 ½ cups chicken stock with 1 cup shredded coconut; bring to a simmer; add in the rice.
  • Return to a simmer over low heat and place a tight-fitting lid on the pan; cook the rice for 18 minutes.
  • Heat a small skillet over medium heat; add in the remaining ½ cup shredded coconut; stir frequently and toast until golden, about 2-3 minutes (once the coconut starts to brown it will go from golden to burnt quickly, so keep an eye on it).
  • Remove coconut from pan and reserve.
  • Heat a big skillet over med-high heat with a tablespoon vegetable oil.
  • Season shrimp with salt and pepper; add to the hot skillet.
  • Stir/saute for 2 minutes on each side, or until they turn pink but are not yet firm, then remove from the pan to a plate; reserve.
  • Return the skillet to the heat and add remaining 2 tablespoons oil; add in onions, cabbage, carrots, red pepper flakes, garlic, ginger, red bell pepper to the pan.
  • Cook, stirring often, for 3-4 minutes.
  • Add in the tamari and remaining cup of stock, then toss the shrimp back into the pan; stir to combine.
  • Cook the shrimp and veggies for 2 more minutes, or until the shrimp are cooked through.
  • Add the scallions, basil, half the cilantro, and lime juice; taste for seasoning, adding more tamari, salt, or pepper to taste.
  • Add the reserved toasted coconut to the cooked rice; fluff rice with a fork.
  • Serve the Thai shrimp on top of the coconut rice; sprinkle remaining cilantro over the top.
