1 lb beef (eg cheap sirloin, thinly sliced 1/8" thickness)
3 tbsp sugar
1" ginger (minced, about 30g/2 tbsp)
6 cloves garlic (crushed)
2 stalks lemongrass (minced, about 30g/2 tbsp)
8 Thai chilies (sliced, or other red chili of choice)
3 tbsp fish sauce (see note)
1 tbsp oyster sauce
1 tbsp oil
4 portions vermicelli
1/4 English cucumber (thinly sliced)
1/4 cup lettuce or cabbage (thinly sliced)
4 wedges lime
1/4 cup cilantro (roughly chopped)
1/4 cup mint (roughly chopped)
1/4 cup fried shallots (commercially available)

Steps:

  • At least 1 hour before (overnight is better), marinate the beef: crush 1 tablespoon of sugar, half the ginger, 2 cloves of garlic, half the lemongrass, and 1 Thai chili in a mortar and pestle. Combine with the thinly sliced beef, along with 1 tablespoon each of fish sauce, oyster sauce, and oil. Mix well, then cover and store in the fridge.
  • At the same time, make your fish sauce: combine the remaining 2 tablespoons of sugar, 1 tablespoon of ginger, 4 cloves of garlic, and 2-4 Thai chilies (as comfortable) in a mortar and pestle. Crush into a fine paste, then transfer to a jar along with 2 tablespoons of fish sauce and 1 cup of water. Store in the fridge.
  • When you are ready to eat, cook your vermicelli to the time indicated on the package (usually 3 minutes), then drain and rinse well with cold water. Set aside. Prepare your vegetables. In the photo, I used quick pickled cucumbers, purple cabbage, lettuce, cilantro, lime, and fried onions.
  • To make quick pickled cucumbers, thinly slice 1/4 of an English cucumber, then toss with 1 teaspoon salt and 1 tablespoon sugar. Let sit for 15 minutes, then rinse in cold water.
  • Heat a large nonstick skillet with 1 tablespoon of oil over medium heat. Fry your remaining 1 tablespoon of minced lemongrass until crispy and golden brown, then drain and set aside, reserving the oil.
  • Add the marinated meat to the skillet and fry until well charred on both sides. You may need to do this in batches depending on the size of your nonstick skillet.
  • Arrange vermicelli, vegetables, and beef in a bowl. Toss with 1/4 cup of the fish sauce, then top with fried lemongrass, fried shallots, a squeeze of lime, and sliced chilies, as desired.

10 lb mixed beef leg bones, shin, knuckle and marrow bones
12 oz ginger, 2 large hands, halved lengthwise
1 head large garlic, halved crosswise
4 kg medium yellow onion, halved lengthwise
8 sticks cinnamon
¼ cup whole black peppercorn
6 pods whole star anise
1 lb beef brisket
kosher salt
¼ cup fish sauce, plus more to taste
1 lb boneless sirloin steak
1 lb flat rice noodle, cooked according to package instructions
2 cups fresh mung bean sprouts
1 small red onion, very thinly sliced lengthwise
1 jalapeño, sliced into thin rounds
1 large bunch fresh thai basil
1 lime, cut into wedges
hoisin sauce
siracha

Steps:

  • Place the beef bones in a large stock pot, then add enough cold water to cover by 2 inches (5 cm). Bring the mixture to a boil over high heat and cook for 10 minutes to blanch the bones and remove any impurities.
  • Set a rack in the upper third of the oven and preheat the broiler.
  • Drain the bones in a colander and rinse under cold running water. Return the blanched bones to the stockpot.
  • Meanwhile, arrange the ginger, garlic, and onions cut-side up on a rimmed baking sheet and broil on high until the aromatics are deeply charred in spots, 5 minutes. Remove from the oven and add to the stockpot with the bones.
  • Meanwhile, combine the cinnamon sticks, peppercorns, and star anise in a medium skillet over medium-high heat and toast, shaking the pan occasionally, until the spices are darkened in spots and extremely fragrant, about 5 minutes. Add the toasted spices to the stockpot.
  • Season the brisket liberally with salt and add it to the stockpot.
  • Fill the pot with enough cold water to cover everything by 1 inch (2 cm). Bring to a boil over high heat, then reduce the heat to medium to maintain a gentle simmer, skimming off and discarding any fat that floats to the top as needed, until the brisket is fork-tender, 2-3 hours.
  • Using tongs, transfer the brisket to a plate and let cool completely. Refrigerate the brisket until ready to serve.
  • Continue to simmer the broth to get as much flavor out of the bones as possible, 3-4 hours more.
  • Using tongs, remove and discard the bones and aromatics. Slowly strain the broth through a fine mesh strainer set over a large pot. Skim and discard the fat from the broth, then stir in the fish sauce. Taste and add more as desired.
  • Thinly slice the brisket. Very thinly slice the raw sirloin steak against the grain.
  • Divide the noodles among 6-8 large bowls, then top with the brisket and raw steak. Ladle the hot broth over the noodles and meat and serve immediately with the bean sprouts, onion, jalapeño, Thai basil, lime wedges, hoisin sauce, and Sriracha alongside.

2 lb thick rib eye steak, boneless, cut into 1-inch (2 1/2 cm) cubes
10 cloves garlic, minced
3 tablespoons brown sugar
5 tablespoons soy sauce, divided
2 tablespoons oyster sauce
1 tablespoon fish sauce
freshly ground black pepper, to taste
1 tablespoon granulated sugar
2 tablespoons white vinegar
2 tablespoons water
1 red onion, sliced into rings
2 bunches watercress
3 roma tomatoes, sliced
2 tablespoons vegetable oil
fresh cilantro, for garnish
white rice, cooked, for serving

Steps:

  • In a large bowl, combine the beef, garlic, brown sugar, 3 tablespoons of soy sauce, oyster sauce, fish sauce, and black pepper. Toss to combine. Let marinate at room temperature for 30 minutes.
  • In small bowl, combine the granulated sugar, remaining 2 tablespoons of soy sauce, white vinegar, and water. Add the red onion slices and coat the red onions in the dressing thoroughly. Set aside to soak.
  • On a platter, arrange the watercress and tomato slices.
  • Preheat a large wok or skillet over high heat, then add the vegetable oil. When the oil is shimmering, swirl the oil around in the pan. Add half of the beef cubes and sear on all sides, shaking the pan, until the meat is slightly charred and medium rare, 3-5 minutes. Set the meat aside and repeat with remaining beef.
  • Arrange the beef on the bed of watercress and tomatoes. Top with the dressed red onions and fresh cilantro.
  • Serve with domed white rice. For a full meal, serve alongside Vietnamese crepes, spring rolls, and banh mi sandwiches.

The vampire in me love rare red meat. I barely cook my meat, but for the non-vampires, please use your meat thermometer to reach desired meat doneness. 130 degrees for rare, 140 or medium rare, if you like well done meat, I don't think this dish is for you.

1 lb beef tenderloin
2 teaspoons fresh ginger, grated
2 tablespoons fish sauce
1/4 cup rice, roasted and pulverized (optional)

Steps:

  • Select the finest piece of beef tenderloin.
  • Bring beef to room temperature by putting covered beef on the counter for about 15-20 minutes.
  • Prepare ice water bath - put some ice cubes in cold water in a bowl.
  • Heat grill or oven broiler to high.
  • Sear the outside of the beef, all around, until outside is light brown. I only sear the outside of my beef because I like my beef moo.ing rare. If you like your meat more cooked, please use the meat thermometer to reach desired doneness: 130 degrees for rare, 140 for medium rare --
  • Remove meat and dip in ice water for a couple of seconds to stop cooking.
  • Dry meat with paper towel.
  • Wrap in plastic wrap and refrigerate until ready to serve.
  • Sharpen your knife, and slice beef thinly.
  • Mix grated ginger and fish sauce to make sauce.
  • Sprinkle roast rice powder over sliced beef, serve with sauce for dipping. Serve with white rice.
  • To Roast rice:.
  • Heat heavy skillet on medium heat.
  • Add dry grains of rice and reduce to low heat. Stirring frequently to roast until evenly brown to release aroma.
  • Once rice is medium brown, remove from skillet and grind in blender or food processor until a fine powder is achieved. In the old days, this is done with mortar and pestle. Thank goodness for technology.

SHIRLEY'S PERFECT RARE ROAST BEEF

My mom showed me how to make the perfect roast beef, and I mean PERFECT! I love my roast beef rare to med-rare, and this is how I do it. IMPORTANT: Take your roast out of the fridge, and let it set to get it to room temperature before baking! If you like really rare bake for 15 mins. at 500. If you like your roast beef cooked med-rare, put in for 18 mins. at 500. If you like it well done, then just burn the darn thing LOL. What's nice about this roast is, if someone likes it done a little more, please keep in mind that the end pieces will be done a little more. ***(The roast in the series of photos that I took was a 2.75 lb. bottom of the round roast. I baked it at 500 for 15 mins., then turned the oven off and left it in the oven for 1 hour for a rare roast.) The cooking time is 5 minutes per pound but I couldn't reflect that in the cooking time in the TIME section for the recipe, at the bottom so I just put in 15-30 mins, depending on size of the roast you use (3-6 lb)

roast beef, tenderloin, tip, eye round, bottom round, rump, any you like (you can use any size roast, just adjust the baking time in the oven 5 mins. per lb.)
1 onion, cut into thin rings
garlic powder

Steps:

  • Preheat oven to 500 degrees. Wait for a few minutes before you put your roast in, so it gets as hot as possible.
  • Put the roast in a shallow pan. (I use a cookie sheet).
  • Cut onion into thin rings, and put all over the top and sides of the roast using toothpicks if necessary. I sit a few slices on the bottom of my roast too.
  • Sprinkle roast generously with garlic powder, or to your liking. DO NOT SALT roast, or you will dry it out.
  • Put roast in the oven on the middle rack.
  • Bake at 500 degrees for 5 minutes per pound, then shut off oven, and let sit in the oven for 1 hour. DO NOT under any circumstances open the oven door! VERY IMPORTANT!
  • After you turn off the oven and your roast has baked for l hour, take it out of the oven, and let sit for 15 minutes, to allow juices to distribute in the roast.
  • I use my electric knife to cut my roast, and place on a serving dish.
  • Don't forget to make the gravy!
