- Cook the pasta in boiling salted water according to package directions; drain and run under cold water to cool.
- Meanwhile, finely chop the garlic clove on a cutting board; sprinkle with salt. Using the blade of a chef's knife, press down onto garlic, smashing it to make a paste. Add the garlic paste to a large bowl with the sour cream, buttermilk, cider vinegar and scallion; season with salt and pepper. Whisk the dressing until smooth and reserve.
- Cut the kernels from the corn (breaking sheets of kernels into about 2-inch pieces, if desired). Add the corn, tomatoes, onion and arugula to bowl with dressing; gently toss to coat. Sprinkle with the bacon.

This is a good alternative to your regular pasta. I have used hidden valley ranch brand and others, all were great. I do like the fiesta ranch the best in this recipe. This is a recipe that comes together quickly. You could add warm cooked chicken chunks to this recipe for protein in the meal.

- Start a large pot of water on high, for the egg noodles.
- Meanwhile in a mixing bowl, blend salad dressing mix and salsa.
- Stir in tomatoes, oil and garlic.
- Remove as much rind as possible from brie and discard. Cut Brie into bite sized pieces and stir into tomato mixture.
- Cook noodles according to package directions, and drain. Return noodles to same pot that you cooked them in and over medium heat, pour tomato mixture over noodles, stirring just to heat and melt cheese.
- Serve immediately.

- While cooking the pasta according to the package directions, use a large skillet to thoroughly cook the bacon until it is crisp. Remove the bacon from the pan and drain off all but 2 tablespoons of bacon grease. Place bacon on sheets of paper towel to drain.
- Season the chicken with salt and pepper, then add it to the same pan to cook it through. Coon until the chicken is nicely seared, and looks golden brown.
- Add the garlic to pan, stir and cook for one minute, until fragrant.Deglaze the pan with the broth and then add the ranch dressing. Stir to combine. Add the cheese and stir until cheese is melted.
- Allow the mixture to simmer, then add the cooked pasta. You can add water to the mixture if it thickens more than you prefer. Stir to cover the pasta in the creamy sauce.

- Cook pasta according to package instructions. Remember to salt the pasta water so the noodles have some flavor. I use about 1 teaspoon salt. Drain the pasta and rinse under cold water so pasta can cool.
- In a mixing bowl combine the cooled pasta, broccoli, cucumber, tomatoes, and parmesan cheese. Stir. Add ranch and stir again to coat the noodles and veggies in the ranch.
- Serve right away or let it refrigerate for 1-2 hours before serving. Pasta salad tends to dry out in the fridge so don't leave it in there too long before serving. If needed, add some additional dressing and give it a good stir to moisten it back up.
- ** If you are making the homemade ranch dressing, I would suggest making it before you make the salad so it has plenty of time to refrigerate and get cold. Combine all the ranch dressing ingredients into a small bowl and stir with a wire whisk. It makes just enough for the salad. For leftovers, I just use store-bought ranch dressing to moisten it back up.
