- In a medium bowl, combine softened cream cheese and ranch dressing mix packet. Stir until well-blended.
- Slice cucumbers into relatively thin slices (I cut mine to approximately 1/4").
- Slice baguette into medium slices (mine were about 1/2"). For a "daintier" sandwich, trim off crusts.
- Spread cream cheese mixture onto one slice of bread. (I prefer a generous layer of the cream cheese mixture!).
- Place 4-5 cucumber slices on top of cream cheese.
- Spread cream cheese mixture onto a second piece of bread and place the bread on top of the cucumbers, cream cheese side down.
- Repeat!
- NOTE: I recently made this recipe for a bridal shower bruch I hosted. I knew the morning of the shower would be crazy, so I sliced the cucumbers and mixed up the cream cheese spread the night before. It tasted great and made things so much easier on the morning of the shower!

CUCUMBER SANDWICH

- Cut off all the edges on your loaf of light wheat bread and toss the edges back into the bag. Cut the left over bread squares diagonally.
- Cut the cucumbers into slices.
- Add 1/2 the package of ranch powder into the cream cheese and mix thoroughly. (Make sure your cream cheese is soft, otherwise it's hard to mix evenly.)
- Taste the cream cheese mixture to make sure you don't need to add any more ranch. But beware not to add too much ranch because it will make the spread salty.
- Apply a layer of the cream cheese spread onto a triangle of the bread, place a cucumber ontop of the spread and cap it with another triangle.
- Go ahead and eat this triangle to taste-test how the rest will come out!
- **With the edges of the bread, you can cut into cubes and make croutons, or bake the sticks with some garlic salt and use them as dippers for your favorite dips!!**
EASY CUCUMBER PARTY SANDWICHES
These easy, beautiful, yummy sandwiches are perfect for brunches, tea parties or spring and summer lunches. Can be prepared ahead of time and assembled just before serving. This is an easy appetizer to prepare the day before, except for the assembly. The cream cheese mixture is actually better after about 8 hours. Feel free to experiment with the dressing; we prefer the buttermilk dressing but ranch or Italian works great, too. Also, cocktail bread can be substituted for the hand-cut bread, which will save 10 to 15 minutes.
