- In a blender or food processor, puree the apricots until smooth; set aside. , In a skillet over medium heat, brown pork chops in butter for 2-3 minutes on each side; remove and keep warm. In the same skillet, saute celery until tender. Add rice, water, raisins, ginger, salt, pepper and apricot puree; bring to a boil. Remove from the heat; stir in almonds., Pour into an ungreased 13-in. x 9-in. baking dish. Place the chops on top. Cover and bake at 350° for 15-20 minutes or until the pork is no longer pink and the rice is tender.

- Place apricots in a food processor or blender; cover and process until coarsely chopped. In a large skillet, brown pork chops in butter over medium-high heat. Add apricots. Bring to a boil. - Combine apricot nectar, curry powder, and garlic powder and set aside.
- Sprinkle pork steaks with salt and pepper.
- Heat olive oil in skillet over medium heat and brown pork steaks on both sides, 2-3 minutes per side.
- CROCKPOT OPTION:.
- Dump dried apricots into crock pot and place pork steaks over apricots.
- Pour nectar mixture over pork.
- Cover and cook on high for 4 hours.
- STOVE TOP OPTION:.
- After meat is browned add dried apricots and nectar mixture to skillet.
- Bring to a boil, then reduce heat and simmer uncovered about 20 minutes, or until meat is tender.
PORK AND APRICOT CURRY
When I ran my own Pub/Restaurant this was the most asked for recipe, I never did share it with my customers but I will share it with you. Feel free to use fresh apricots if you wish or fresh peaches are as good, this is not a true, authentic curry but it is very tasty and wonderful cold the next day. PLEASE buy best curry powder you can afford or make your own.

- Fry the onion in the sunflower oil in a heavy pan until deep golden in colour.
- Add the pork and fry for further 3 mins stirring.
- Add the crushed garlic and fry for further 2 minutes.
- Now add the curry powder and cardamon pods and keep stirring until all the spices in the powder have released their scent.
- Add tomato puree and stir well then add enough water to cover all ingredients.
- Add 3/4 can of apricots and all the syrup, chicken bouillon powder, pepper and soy sauce.
- Simmer covered for 11/2 to 2 hours until pork is meltingly tender.
- Add last of apricots, coconut cream and salt if necessary.
- Cook for further 1/2 hour until sauce has thickened, taste again and add lemon juice if needed to balance the sweetness. This curry should be savoury and not too sweet.
- Best cooked the day before serve topped with fresh coriander, basmati rice, finely sliced onion rings soaked in sweet vinegar and fresh mint and diced fresh tomatoes sprinkled with lemon pepper.

- Preheat oven to 350 degrees F (175 degrees C). Oil a large casserole dish. Combine flour and red pepper flakes in a large resealable plastic bag; add pork, seal, and shake to coat.
- Heat oil in a large skillet or wok over medium-high heat. Brown tenderloin in hot oil, stirring frequently. Drain meat on paper towels, then arrange in the bottom of the prepared casserole dish.

- Combine the white wine vinegar, sugar, apricots, coconut milk, onion, garlic, hot pepper sauce, Worcestershire sauce, cinnamon, red curry paste, mild curry paste, and coconut into a saucepan over medium heat; bring to a boil, stirring constantly. Reduce heat to a simmer and cook until the onion is translucent and the apricots are soft, about 10 minutes.
- Pour the mixture into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the sauce moving before leaving it on to puree. Puree in batches until smooth. Pour the blended sauce back into the saucepan, and bring to a simmer over medium-low heat. - Heat vegetable oil in heavy large skillet over medium heat. Add chopped shallots and sauté until golden brown, about 5 minutes. Mix in red curry paste and fresh ginger and cook 1 minute. Add chicken tenders and sauté until cooked through, about 6 minutes. Using tongs, transfer chicken to bowl.

- Pour orange juice over apricots.
- Add preserves, brown sugar, and curry powder and stir gently. Set aside.
