GRILLED CHICKEN RANCH BURGERS

3/4 cup ranch salad dressing
3/4 cup panko bread crumbs
3/4 cup grated Parmesan cheese
3 tablespoons Worcestershire sauce
3 garlic cloves, minced
3 teaspoons pepper
4 pounds ground chicken
3 tablespoons olive oil
16 hamburger buns, split
Optional toppings: Tomato slices, lettuce leaves, sliced red onion, sliced cucumber, sliced avocado and ranch dip

Steps:

  • In a large bowl, mix the first 6 ingredients. Add chicken; mix lightly but thoroughly. Shape mixture into sixteen 1/2-in.-thick patties. Brush both sides with oil; refrigerate, covered, 15 minutes to allow patties to firm up., Grill burgers, covered, over medium heat or broil 3-4 inches from heat 5-6 minutes on each side or until a thermometer reads 165°. Serve on buns with desired toppings.

8 boneless, skinless chicken thighs
100ml buffalo hot sauce
2 tsp sweet smoked paprika
3 tbsp maple syrup
1 tbsp white wine vinegar
1½ tsp garlic granules
30g butter, melted and cooled
4 slices monterey jack cheese, cut in half
4 brioche burger buns, split
1 pointed spring cabbage, finely sliced
1 small red onion, thinly sliced
2 celery sticks, finely chopped
50g mayonnaise
50g soured cream
1 tbsp white wine vinegar
¼ bunch of chives, finely sliced

Steps:

  • Tip the chicken into a large bowl. Mix the hot sauce with the paprika, maple syrup, vinegar, garlic granules and butter in a separate bowl. Pour this over the chicken, toss, cover and chill overnight.
  • The next day, make the ranch slaw. Tip the cabbage, onion, celery, mayonnaise, soured cream, vinegar and chives into a medium bowl, then season to taste and mix until everything is well-combined.
  • Light the barbecue. When the coals are ashen, put the chicken on the grill and cook for 8 mins on each side, basting with the leftover marinade as you go. Alternatively, cook the chicken under a hot grill for 8-10 mins on each side, basting with the marinade. When the chicken is cooked through, put half a slice of cheese on each piece and leave to melt for 1 min. Put two chicken thighs on the base of each bun, spoon over some slaw and sandwich with the bun tops.

I don't remember where I got this recipe but I make the patties ahead and freeze them. They can be cooked frozen on the grill. Serve on crusty rolls with your favorite condiments. Can also use ground turkey but not even close to as tasty as the chicken. No other seasoning is needed other than the ranch dressing mix.

1 lb lean ground chicken
1 (1 ounce) package ranch dressing mix, dry (Hidden Valley)
1/2 cup fresh breadcrumb
1/2 cup mushroom, chopped fine

Steps:

  • Mix all ingredients together. Mixture will be wet.
  • Be sure to spray or oil grill and do not turn chicken patties until well browned.
  • Form into patties and grill or pan fry.
  • I usually cook about 3-4 minutes on each side, a little longer may be needed if frozen. Juice will run clear when done.

Grill over medium-hot coals 5 to 6 minutes until no longer pink in center (160 degreesF). Place on sesame seed buns with lettuce, tomato and red onion slices, if desired. Serve with a generous amount of additional salad dressing.
