1 pound ground beef
1 can (16 ounces) kidney beans, undrained
1 can (15-1/4 ounces) whole kernel corn, undrained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup biscuit/baking mix
1/3 cup milk

Steps:

  • In a large saucepan, cook beef over medium heat until no longer pink; drain. Add the beans, corn and tomatoes; bring to a boil. Reduce heat. , In a small bowl, combine biscuit mix and milk just until moistened. Drop by tablespoonfuls onto simmering stew. Cover and simmer for 12 minutes or until a toothpick inserted in a dumpling comes out clean (do not lift cover while simmering). Serve immediately.

2 1/2 to3 lb beef tongue
2 medium carrots, chopped
15-20 sprig(s) fresh parsley
2 medium bay leaves
15 peppercorns
1 medium white onion, peeled and quartered
FOR THE SAUCE:
1/4 c olive oil
8 clove garlic, peeled and crushed
2 medium white onions, peeled and diced (about 2 cups)
1 large green bell pepper, diced (about 1 1/2 cups)
1 can(s) (28 ounces) diced tomatoes, drained
1/4 c chopped parsley (or 2 tablespoons dried parsley flakes)
5 c beef broth or stock
we often throw 2 or 3 chopped potatoes in while making the sauce

Steps:

  • 1. Place the beef tongue, chopped carrots, parsley, bay leaves, pepper corns and quartered onion in a 6 qt pot (or pressure cooker) with sufficient water to cover. Bring to a boil, then reduce to rolling simmer covered for 2 1/2 hours. If cooking in a pressure cooker, cook at high pressure (15 psi) for 60-75 minutes, then allow pressure to release normally.
  • 2. Remove the tongue. Peel off the skin and trim the underside a bit. Discard the first 1/4" slice from the back. Then cut 1/4" slices crosswise to tip of tongue. You then add these slices to the prepared sauce (directions following) and simmer covered for about 45 minutes after which you continue simmering for one hour uncovered, stirring occasionally. Then serve the slices covering them with the sauce.
  • 3. For the sauce: While the tongue is cooking, in a 6 quart saucepan sauté the garlic, onion and green pepper in oil. Add the tomatoes, and parsley. Simmer until the tomatoes are tender, about 10 minutes. Add the beef stock, cover the pot and simmer it for 1 hour. Remove the cover and simmer it for another hour to allow reduction and thickening, stirring occasionally. Add the tongue slices as described above to finish the cooking process.

  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

2 tablespoons canola oil
3 pounds boneless beef stew meat, preferably chuck, cut into 1- to 1 1/2-inch cubes
Kosher salt and freshly ground black pepper
2 medium yellow onions, cut into thin slices
1 bottle dry red wine
1/4 cup red wine vinegar
4 cups enriched beef stock
1/4 cup smooth Dijon mustard
12 small parsnips, peeled
4 tablespoons unsalted butter, divided
1 tablespoon dark-brown sugar
2 bay leaves
12 small carrots, peeled
2 tablespoons extra-virgin olive oil
1 cup shelled peas
Parsley for garnish
Chives for garnish

Steps:

  • Preheat the oven to 325 degrees F.
  • Cook the meat: Heat a Dutch oven over high heat and add the canola oil. Season the pieces of beef on all sides with salt and pepper. When the oil begins to smoke lightly, use a pair of metal tongs to arrange the beef in a single layer in the hot oil, making sure not to crowd the pan (you might need to cook the beef in batches). Brown the meat on all sides. When brown, add onions and steam over the beef, 2 to 3 minutes. Add the wine and vinegar and cook until all of the liquid evaporates, 10 to 15 minutes. Add stock and mustard and continue to simmer about 8 to 10 minutes more. Meanwhile, in a medium skillet, add parsnips and enough water just to cover. Add 2 tablespoons butter, brown sugar, and bay leaves and simmer until parsnips are slightly tender, 4 to 5 minutes. Drain, discard bay leaves, and set parsnips aside. In the same pan, add carrots and enough water just to cover. Add remaining 2 tablespoons butter and the olive oil. Simmer until slightly tender, 4 to 5 minutes. Drain and set aside.
  • Cook and finish the stew: Add the parsnips and carrots to the beef. Cover and place in the center of the oven. Cook until the meat is tender when pierced with the tip of a knife, 1 to 1 1/2 hours. Remove the stew from the oven and use a large spoon to skim any excess fat or impurities that form on the surface. Taste for seasoning. Allow it to "rest" for 15 minutes before serving. Stir in the peas, parsley and chives.

Steps:

  • Brown meat in a large saucepan.
  • Stir in beef broth, lemon juice, Worcestershire sauce, garlic, sliced onion, sugar & spices.
  • Bring to a boil; reduce heat. Cover and simmer until beef is nearly tender, 1 to 1 1/4 hours.
  • Stir in veggies. Bring to a boil, then simmer 30 minutes more.
  • Combine flour and water in jar. Shake until smooth. Stir into stew.
  • Cook and stir until slightly thickened and bubbly. Season to taste.

2 medium potatoes, diced
12 white pearl onions, canned
1 cup frozen peas
2 tablespoons whole wheat flour (optional)

Steps:

  • Place meat in 1 quart baking dish.
  • Brown in slow oven at 325F for 45 min, stirring occasionally.
  • Add 1 cup of water to dish.
  • Cover, bake for 1 hr or until meat is tender.
  • Meanwhile, cook carrots in remaining 2 cups water.
  • When partially cooked, add potatoes and cook until all tender.
  • Add onions and peas.
  • Put vegetables into beef dish.
  • Thicken liquid from vegs. with flour if desired.
  • Add worcestershire sauce, salt, and pepper to liquid.
  • Pour over meat and vegs.
  • Cover and return to oven for 20 minute.

1 onion (diced)
4 cloves garlic (diced)
4 cups beef broth
5-6 potatoes, diced (about 4 cups)
5-6 carrots, diced (about 2 cups)
1 buttercup squash, diced
½ tsp paprika
1 tsp sea salt
½ tsp black pepper
2 tsp Italiano seasoning
½ tbsp red wine vinegar
1 tbsp Worcestershire sauce
2 tbsp cornstarch (optional)
2 tbsp cold water (optional)

Steps:

  • Turn the Instant Pot to the saute function for 10 minutes. Add the olive oil to the bottom of the Instant Pot and add the cubed venison. After 5 minutes, add chopped garlic and diced onion. Saute until the cycle ends.
  • Add the beef broth to the Instant Pot and use a spoon to scrape any brown bits on the bottom of the pressure cooker. Next, add potatoes, carrots, squash, paprika, sea salt, pepper, Italiano seasoning, red wine vinegar, and Worcestershire sauce. Give it a final stir to mix all the ingredients well.
  • Secure the lid, set it to "sealing" or "stew" setting, and cook on high pressure for 35 minutes. Then, let the pressure release naturally for 10 minutes, then do a quick release.
  • Remove the lid and give the venison stew a good stir. If you want your stew to be thicker, mix two tablespoons of cornstarch and two tablespoons of cold water and pour it immediately into the stew. Stir until thickened.
