"This moist, slightly sweet bread is one of my favorites to prepare in my bread machine," says Jenet Cattar of Neptune Beach, Florida. Jenet's recipe produces a smaller loaf, which is especially nice for households with one or two people.

Yield 1 loaf (1 pound).

Number Of Ingredients 8

3 tablespoons warm milk (70° to 80°)
2/3 cup ricotta cheese
4 teaspoons butter, softened
1 egg
2 tablespoons sugar
1/2 teaspoon salt
1-1/2 cups bread flour
1 teaspoon active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

IRISH SODA BREAD WITH CHEDDAR AND CHIVES

Number Of Ingredients 11

2 1/2 cups all-purpose flour, plus more for dusting
3/4 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon freshly ground black pepper
1 cup freshly grated sharp Cheddar
3 tablespoons chopped fresh chives
1 cup buttermilk
1 large egg

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
  • Add the flour, baking powder, baking soda, salt, garlic powder, onion powder and pepper to a large bowl. Whisk to break up any lumps of flour. Add the Cheddar and chives. Stir to evenly combine the ingredients. Set aside.
  • Add the buttermilk and egg to a 2-cup measuring cup. Use a fork to scramble the egg into the buttermilk.
  • Add the buttermilk mixture to the bowl with the flour mixture and use a rubber spatula to mix the ingredients until a shaggy dough forms. Turn the dough out onto a lightly floured work surface. Lightly flour your hands and knead the dough until it comes together, about 1 minute. Flip the dough so that it is seam-side down and transfer it to the prepared baking sheet. Use a serrated knife to cut a 1/2-inch-thick X on the top of the dough.
  • Bake until the bread is golden brown, 25 to 30 minutes.
  • Let cool slightly on a wire rack before slicing.

HERBED RICOTTA CHEESY BREAD



Herbed Ricotta Cheesy Bread image

Loaded with fresh rosemary, ricotta cheese, mozzarella, and Parmesan, this quick bread is bursting with flavor! Perfect with soup, chili, or just a pat of butter.

4 tablespoons unsalted butter, melted until browned
4 ounces Parmesan cheese, coarsely grated, divided
2 and 1/2 cups all-purpose flour
1 tablespoon baking powder
1 and 1/2 tablespoons fresh rosemary, very finely chopped
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly cracked black pepper
1 teaspoon salt
1 tablespoon light brown sugar
8 ounces mozzarella cheese, cubed
1 cup whole milk
1/2 cup whole milk ricotta cheese
1 large egg, at room temperature

Steps:

  • Place the butter in a small sauce pan over medium-high heat and cook for about 3 minutes - stirring almost constantly - until the butter has turned an amber gold/brown and smells slightly nutty. Remove from heat and set aside until needed.
  • Preheat oven to 350 degrees (F).
  • Spray a 9 OR 10" loaf pan with non-stick baking spray. Sprinkle half of the Parmesan cheese on the bottom of the pan and set aside.
  • In a large bowl add the flour, baking powder, rosemary, cayenne pepper, black pepper, salt, and brown sugar; mix well to combine. Add in the cubed mozzarella and toss with your hands, making sure each cube gets coated in the flour mixture. Make a well in the center of the flour. Add in the milk, ricotta cheese, and egg. Use a fork to lightly whisk the wet ingredients together, then use a rubber spatula to gently fold the wet ingredients into the dry ones. Stop folding when you can still see just a little flour. It's important not to over mix here! fold in the browned butter until just combined. Pour the batter into the prepared pan and smooth the top. Sprinkle with remaining Parmesan cheese, and bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then invert onto a plate, then flip it back (right side up) onto a cooling rack and cool for at least 30 minutes before slicing. This bread actually tastes better the longer you let it cool.

A favorite I have been making for years. This isn't a very tall loaf and yes - the amount of flour is correct. NOTE: (These days, most bread machines have much bigger pans, so if you have a larger capacity machine, you may instead wish to only mix the dough in the machine,let it rise, then bake the bread itself in a loaf pan (at 350 F for perhaps 30 minutes is a guess). This can still be baked in a larger capacity machine, it will just have an odd shape.

Steps:

  • Place all ingredients into a 1-pound capacity (or bigger) bread machine according to the directions in your manual.
  • Select the basic bread cycle and light crust.
  • After about 5 minutes, take a peek inside your machine to see if your dough is forming up a ball- if it is too wet, add up to 3 Tbsp additional flour, a spoonful at a time (or as needed based on the hunidity of the day), if too dry, add a little water.

3/4 cup plain or butter-flavored shortening, room temperature
1-1/2 cups sugar
3 large eggs, room temperature
3 large egg yolks, room temperature

6 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup 2% milk
GLAZE:
1-1/2 cups confectioners' sugar
3 tablespoons 2% milk
1/2 teaspoon almond extract (or flavor of choice)
Sliced toasted almonds or assorted sprinkles

Steps:

  • Preheat oven to 350°. Cream shortening and sugar until light and fluffy. Add eggs and egg yolks,1 at a time, beating well after each addition. Beat in ricotta and extract. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition, stirring in final 1 cup flour by hand., Turn onto a lightly floured surface; divide into thirds. Roll each into an 18-in. rope. Place ropes on a parchment-lined baking sheet and braid. Pinch ends to seal; tuck under braid. Bake until a toothpick inserted in center comes out clean, 45-55 minutes (do not overbake). Remove to wire racks to cool., Meanwhile, beat confectioners' sugar, milk and extract until smooth. Brush on bread while still warm; top with sliced almonds or sprinkles.
