- Heat a large straight-sided skillet over medium heat until hot. Add the oil, shallots, garlic and pepper flakes, if using, then season with 1/4 teaspoon salt. Stir with a wooden spoon until the shallots are soft and fragrant, about 3 minutes. Add the olives and raisins and stir to combine. Add the chopped escarole and season with the remaining 3/4 teaspoon salt. Stir to combine and coat the escarole in the flavors. Cover with the lid and allow to steam for 5 minutes. Remove the lid and increase the heat to medium-high. Cook, stirring often, until the liquid has evaporated and the greens are tender, another 3 minutes.
SICILIAN CAULIFLOWER PASTA

- Bring a pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 3/4 cup of the cooking water, then drain the pasta. Meanwhile, trim the thick stems off the cauliflower and coarsely grate the florets on the large holes of a box grater (it's fine if some small florets remain whole). Heat the olive oil in a large skillet over medium-high heat. Add the cauliflower, raisins, garlic, red pepper flakes and 1/4 teaspoon salt and cook, stirring occasionally, until the cauliflower is crisp-tender and slightly browned, about 4 minutes. Remove the skillet from the heat and stir in the pasta, parsley, dill, lemon juice, cheese and 1/2 cup of the reserved cooking water. Add more cooking water to loosen, if needed. Season with salt. Serve with more grated cheese.

- Combine hot water and saffron in a small bowl; let sit until water turns yellow.
- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the fettuccine, bring back to a boil, and cook pasta over medium heat until cooked through but still firm to the bite, about 8 minutes. Drain.
- Heat butter in a skillet over medium heat; add cream and bring to a boil. Reduce heat to medium-low and mix Parmesan cheese, salt, pepper, and paprika into cream mixture; simmer for 1 minute.

- Drain tomatoes into a measuring cup. Reserve 1/4 cup of packing juice. Roughly chop tomatoes and set aside.
- In a medium saucepan, heat olive oil over low heat until shimmering. Add garlic and cook gently until soft but not brown. Add tomatoes, raise heat to medium, and cook tomatoes until they are soft and broken down, about 15 minutes. Add a little reserved juice if necessary, but keep the sauce very thick.
- Meanwhile, toast pine nuts in a small dry skillet over medium heat until golden, stirring (or shaking and tossing) often. Stir into the sauce along with the raisins, olive, and capers. Season sauce to taste and serve with fish or tossed with pasta.

- In a heavy based pan, heat ½ tbsp of oil and gently cook the onion, garlic and chilli until soft with half the oregano.
- Meanwhile, heat 3-4 tbsp of oil in another frying pan and start browning the aubergines. Once cooked, add to the onion mixture. Fry the raisins in another ½ tbsp oil and, when they have puffed up, add to the aubergine mix. Add the tomatoes, purée and rest of the oregano. Cook on a medium heat for 15-20 mins so all the flavours come together.
- Finally add the capers and the vinegar and leave on a low heat while you cook the pasta in plenty of boiling, salted water. If the mixture becomes very thick add 100ml of water. Toss the pasta through the aubergine sauce and sprinkle with fresh mint and the pine nuts. Let everyone grate over their own cheese.

- Heat the olive oil in a large skillet over medium heat and then add the reserved anchovy oil.
- Add the anchovies and stir vigorously to break down the anchovies, about 4 minutes.
- Add the garlic and cook another minute or two until fragrant.
- Dump the tomatoes and tomato puree into the pot, and bring to a boil.
- Reduce the heat, and cook for 10 minutes.
- Add the pine nuts, raisins, parsley, and olives and cook for another 10 minutes or until the sauce thickens.
- Season generously with black pepper, the red chili flakes, and a pinch of salt if needed.
- While the sauce is cooking, bring a large pot of lightly salted water to a boil.
- Cook the pasta until it is just "al dente".
- Drain the pasta and return it to the pot.
- Add 1/3 of the sauce to the pot with the cooked pasta and toss to coat.
- Serve the pasta either in a large, shallow serving bowl, or individual bowls with additional sauce on top.

- Season the chicken with salt and pepper. In a very large enameled cast-iron casserole, warm the olive oil. Add the chicken pieces in batches and brown over high heat, about 5 minutes per side. Remove the chicken to a platter and discard the oil from the casserole. Add the wine and vinegar and boil over high heat, stirring, until reduced by half, about 6 minutes.
- Return the chicken to the casserole and add the onions, olives, raisins and enough stock to cover two-thirds of the chicken. Tie the cloves, bay leaves, cinnamon sticks and peppercorns in cheesecloth and add them to the casserole. Bring to a simmer over moderately high heat and cover. Cook over very low heat until the chicken and onions are tender, 1 to 1 1/2 hours. Skim off the fat. Taste the cooking liquid and, if necessary, remove the solids and boil it down until it is full-flavored. Return the solids to the casserole and season with salt and pepper.
- In a small skillet, toast the pine nuts over moderately low heat until lightly browned, 3 to 4 minutes. Sprinkle the chicken with the pine nuts and serve.

- Preheat the oven to 450°. On a large rimmed baking sheet, toss the cauliflower with the curry powder, garam masala and 1/4 cup of the olive oil. Season with salt and toss again. Roast the cauliflower for about 12 minutes, until tender.
- Meanwhile, spread the almonds in a pie plate and toast for about 5 minutes, until they are golden. In a mini food processor, puree the soaked raisins with the lemon juice, 1 tablespoon of the olive oil and a pinch of salt until smooth.
- In a large saucepan of salted boiling water, cook the pasta until al dente. Drain well, reserving 3/4 cup of the cooking water.
- Wipe out the saucepan and heat the remaining 2 tablespoons of olive oil in it. Add the leek and garlic and cook over moderate heat, stirring occasionally, until softened and lightly browned, 5 to 7 minutes. Stir in the raisin puree, then add the cauliflower, pasta and the reserved cooking water and cook over moderate heat, tossing, until the pasta is coated in the sauce. Remove from the heat and stir in the 1/2 cup of parsley and the remaining 1/2 cup of golden raisins. Transfer to shallow bowls. Garnish with the almonds and chopped parsley and top with yogurt. Serve right away.
