SAUTEED RADISHES
I had too many radishes in the garden and needed a way to use them besides an addition to salad. These turn really sweet.

- Heat butter in a skillet over low heat; arrange radishes, cut side-down, in the melted butter. Season with salt and black pepper. Cook, stirring occasionally, until radishes are browned and softened, about 10 minutes.

RADISHES DIPPED IN BROWN BUTTER
These radishes are one of the trendiest snacks around to serve to friends. The browning adds extra flavour to these crunchy, seasonal delights

Steps:
- Clean the radishes well, trim any unsightly leaves, ensure they are completely dry and keep in the fridge until needed.
- Scoop one-third of the butter into a small saucepan and sizzle until it turns a hazelnut-brown colour. Remove from the heat, pour into a bowl and leave to cool completely - if it solidifies slightly, all the better.
- Put the rest of the butter in a microwaveable bowl and whisk until it is the consistency of melted chocolate. If the butter is too hard to whisk, give it a few short blasts in the microwave, whisking well between each blast until done. Stir the browned butter into the whisked butter and set aside.
- Line a tray with baking parchment, dip the radishes into the butter and lay them on the tray. Sprinkle them with sea salt before the butter hardens. Put back in the fridge until ready to serve. Arrange on a large sharing board before serving straight away while the butter is cold.

RADISH WITH BUTTER AND SALT
Sliced radish and butter, finished with a pinch of salt is a simple French snack where the butter cuts the hot pepperiness of the radish, giving you an indulgent low-carb treat in seconds. I use butter very rarely, otherwise, but it does work here. This is my homemade version of the popular French snack. Use the best radishes you can find (the greens should be bright and not wilted, and the radish should be firm) and quality butter at room temperature.

- Cut each radish in half and arrange them flat side-up. Spread a little butter on each half and finish with a pinch of salt.
- Alternatively, you can serve the trimmed radishes whole with only a little bit of the top cut off. Serve a side of room temperature butter and flakey salt in two small dishes for dipping.

SIMPLY FRENCH! RADISHES WITH BUTTER AND FLEUR DE SEL
A classic French way of serving radishes, simple and yet so good; crunchy radishes are simply served with fresh butter and sea salt. I like to serve mine with Fleur de Sel, which is the caviar of French sea salts. You will be offered this in most French homes as an aperitif snack or as an appetiser before a meal. All that is needed is some traditional French bread to accompany it for a light lunch or supper dish. Table salt is fine if you cannot source Fleur de Sel or a good sea salt. (Information on Fleur de Sel: Many consider fleur de sel, which means "flower of salt" in French, the finest type of sea salt available. Its price reflects its high quality, as it costs about 10 times more than your average sea salt and 100 times more than table salt. The delicacy with which it is hand-harvested accounts for much of the expense. Fleur de sel floats on the surface of shallow salt water marshes and is scraped off with a special rake called a lousse à de fleur. The raking must be done carefully by hand to prevent mixing the fleur de sel with the coarse gray salt beneath it. France harvests most of the world's fleur de sel, with the town of Guérande possibly being the most famous producer. Fleur de sel has a higher mineral content than table salt, a natural greyish hue, a moist texture and a violet-like fragrance. Sprinkle it on food before serving to enliven flavours.)

- Preheat the grill for high heat.
- Place the radishes, garlic, butter, and ice cube on a double layer of aluminum foil large enough to wrap contents. Season with salt and pepper. Tightly seal foil around contents.

BROWN BUTTER GLAZED RADISHES
Many people think of radishes as a raw salad topper, but cooked radishes are sweet and crisp-tender and make a quick and easy weeknight side. Brown butter adds a hint of nuttiness, and a touch of sugar caramelizes the radishes, while chopped fresh herbs and a squeeze of lemon lend brightness. Serve the glazed radishes warm or at room temperature. If you find radishes with beautiful green tops, toss the glazed radishes with the greens and a little olive oil for an out-of-the-ordinary salad.

- In a medium saucepan, bring radishes, butter, sugar, salt and 1/3 cup water to a boil over medium heat, stirring occasionally, until all the water has evaporated and the radishes are just tender, 10 to 15 minutes.
- Continue to cook, tossing the radishes in the melted butter, until the butter has browned and the radishes are golden brown, caramelized and glazed, 5 to 10 minutes more.
- Serve glazed radishes topped with herbs and a squeeze of lemon.

- Cut greens from radishes and coarsely chop. Trim radishes and cut lengthwise into 1/2-inch wedges.
- Heat 1 1/2 tablespoons butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then sauté radish wedges with salt, stirring, until crisp-tender, about 12 minutes. Transfer to a platter and keep warm, loosely covered.
- Sauté garlic in remaining tablespoon butter in skillet over moderately high heat, stirring, until fragrant, about 30 seconds. Add greens and sauté, stirring, until wilted, about 1 minute.
- Return radish wedges to skillet and stir in chives.
