4 radishes, thinly sliced
2 Red Delicious apples, cored, seeded and thinly sliced and tossed with 2 teaspoons lemon juice
1/2 red onion, thinly sliced
1 head romaine lettuce or red leaf lettuce, chopped
3 tablespoons red wine vinegar
2 teaspoons sugar
1 teaspoon salt
1/4 cup extra-virgin olive oil
1/2 cup sour cream
1 teaspoon poppy seeds
2 tablespoons chopped dill or 2 teaspoons dried dill

Steps:

  • Combine radish, apple (coated in lemon to retard browning) and onion with chopped lettuce. In a small bowl, combine vinegar with sugar and salt. Whisk in oil, stir in sour cream, poppy and dill. Drizzle dressing evenly over salad and serve.

2 tablespoons fresh orange juice
1 tablespoon fresh lemon juice
1/2 teaspoon honey
1 tablespoons olive oil
1 celery rib, sliced thinly on a diagonal
6 radishes, sliced into thin wedges
1 green apple, sliced into thin wedges
1 tablespoon parmesan cheese, for serving

Steps:

  • Whisk the orange juice, lemon juice, honey, and olive oil together in a medium bowl.
  • Add the radishes, apple slices, and celery and toss well to get it all coated in the dressing. Transfer the salad to a serving platter and grate a small amount of Parmesan cheese over the top.

1/4 cup cider vinegar
1/2 cup extra-virgin olive oil
1 shallot, minced
Salt and freshly ground black pepper
2 bunches arugula, thick stems removed, rinsed and dried
1/2 pound radishes, thinly sliced on mandoline
1 red apple, peeled, cored and finely diced

Steps:

  • Whisk together vinegar, olive oil, shallot, salt and pepper. Toss arugula, radishes and red apple together. Toss salad with dressing right before serving.

2 Granny Smith apples, quartered and thinly sliced
2 medium fennel bulbs (about 1 pound), quartered and thinly sliced, plus 1/2 cup fennel fronds
1 cup fresh dill, picked
8 ounces radishes (watermelon or regular), quartered and sliced (see Cook's Note)
1/2 English cucumber, quartered and sliced
1 head butter lettuce, torn in big pieces
One 4-ounce block Pecorino cheese, shaved
1/4 cup apple cider vinegar
2 teaspoons honey
1 teaspoon Dijon mustard
1/2 shallot, finely chopped
Kosher salt and freshly cracked black pepper
1/3 cup olive oil

Steps:

  • For the salad: Place the apple, sliced fennel and fennel fronds in a large bowl. Add the dill, radish and cucumber and toss all together.
  • On a larger platter, layer the butter lettuce and top with the sliced veggies.
  • For the apple cider vinaigrette: Add the vinegar, honey, mustard, shallot, a big pinch of salt and a few grinds of pepper in a small bowl and whisk together. While whisking, slowly pour in the olive oil until fully combined. Taste and add more salt and pepper, if needed.
  • Drizzle the vinaigrette over the salad and top with the Pecorino.

Small red mild radish are a favorite salad ingredient with many Germans. One of the many salad variations we usually eat. We prefer the mild nutty flavor of a medium-priced walnut oil to the fruity flavor of olive oil, the grainy texture of the country-style mustard and some tang from the vinegar, but feel free to use what you like best. I often sub the onions with 1 tablespoon chives.

10 -12 cups salad greens, torn into bite-sized pieces (we like romaine)
3/4 cup red radish, cut into 1/16 inch slices
1/4 cup green onion, cut into 1/8 inch slices
1 tablespoon cider vinegar
1 1/2 tablespoons apple juice (100% juice)
1 teaspoon country-style dijon mustard
1 pinch salt
1 pinch pepper
3 tablespoons walnut oil
1 pinch sugar (optional)

Steps:

  • Put salad greens in a large bowl. Arrange radish and onions on top.
  • For the dressing mix all ingredients except oil in a small bowl until blended.Stirring constantly with a fork or small whisker add oil gradually until emulsified. Taste. If too sour add a little sugar.
  • Pour dressing over salad and toss well.
  • Note: Country-style mustard gets hotter when you prepare the dressing in advance. If you do so, you should consider reducing the amount of mustard used.
