NO-BAKE APRICOT SLICE



No-Bake Apricot Slice image

Recipe Adapted from Chelsea Sugar http://chelsea.co.nz

Number Of Ingredients 10

2 Cups Powdered Icing Sugar, 270 grams
1 Tablespoon Butter, Melted, 15 mls
1 teaspoon Vanilla Essence, 5 mls
2-4 teaspoons Water
¼ Cup Finely Desiccated Coconut, 22 grams (to decorate)
125 grams Butter, diced
½ Cup Soft Brown Sugar, Packed, 100 grams
½ Tin Sweetened Condensed Milk (approx 180mls)
1 Cup Dried Apricots, 190 grams, chopped
1 x 250 gram Packet of Wine Biscuits, crushed (Wine biscuits are similar to a tea biscuit, Marie Or Arrowroot)

Steps:

  • Lightly grease a 25 x 25 cm slice tin, or prepare with baking paper, and set aside.
  • Using a food processor (or with a rolling pin and a large ziplock bag), crush the biscuits to a fine or chunky crumb and set aside.
  • Chop up the apricots and set aside.
  • In a large sauce pan add the butter, brown sugar and condensed milk and heat gently until the butter has melted but do not boil, remove from the heat.
  • Add the crushed biscuits and apricots to the saucepan and combine well with a large wooden spoon.
  • Pour into the prepared tin, press mixture down firmly and smooth with the back of the spoon and then set aside and prepare the icing
  • In a medium bowl add the icing sugar, melted butter and vanilla and stir to blend.
  • Add water a teaspoon at a time, stirring well, until you have a thick but pour-able consistency.
  • Spread this over the prepared slice, then sprinkle with the coconut.
  • Place in the fridge to set, or overnight, then slice and store in the fridge until needed.

4 cups granulated sugar
1/2 cup unsalted butter
12 ounces evaporated milk
12 ounces semi-sweet chocolate chips
12 ounces sweet baking chocolate
7 ounces marshmallow cream
2 teaspoons vanilla extract
1 1/2 cups dried apricots, diced

Steps:

  • Butter a 13"x9" baking dish.
  • In 4 quart saucepan combine sugar, butter & milk, cooking over medium high heat & stirring occasionally, 10-14 minutes until mixture comes to a full boil.
  • Reduce heat to medium & boil, stirring constantly, 6-7 minutes, or until candy thermometer reaches 228 degrees F.
  • Remove from heat & gradually stir in both chocolates until melted.
  • Stir in marshmallow cream & vanilla extract, until well blended.
  • Stir in apricots, then spread into prepared pan.
  • Cool completely at room temperature.
  • Cut into 1" squares before serving.
  • Store covered in cool place.

A Hanukkah tradition, these rolled cookies are buttery and flaky, with a slick of jam in every bite. They might look rather fancy, but they're easy and fun to make. (This recipe makes 24 cookies.)

2 cups all-purpose flour
2 tablespoons sugar
1/4 teaspoon salt
2 sticks cold unsalted butter, diced
6 ounces cold cream cheese, cut into 8 pieces
3/4 cup apricot jam, divided
1/2 cup sugar, divided
1/2 cup sliced almonds, toasted, divided

Steps:

  • Dough: In a food processor, pulse flour, sugar, salt, and butter until butter breaks into pea-size pieces. Add cream cheese and process just until incorporated and a mass of dough is formed. Do not overmix or dough will be tough.
  • Turn dough out onto a work surface and knead a couple times to bring dough into a cohesive mass. Divide dough in half and form two flat, round discs; wrap each in plastic and refrigerate for 45 minutes. (At this point, dough can be frozen for several months.)
  • Filling: Lightly flour a work surface and a rolling pin, then roll one disc of dough into a 16-inch round (add more flour to prevent sticking). Evenly spread half the jam in a thin layer, stopping 1 inch from the edge of the dough. Sprinkle half the sugar over the top, followed by half the almonds.
  • Assembly: Trim the outer edge of the dough to make a clean circle all around. Cut dough like a pizza into 12 triangles. Beginning at the wide end, roll up each triangle; place formed rugelach on parchment-lined sheet trays, pointed edge down. Repeat with remaining disc of dough. Freeze for 30 minutes. Preheat oven to 350 F.
  • Bake rugelach until golden, 25-35 minutes. Remove to a wire rack, let cool, and serve.

Yummy! It's like the nicest slice I've ever made. (I like my biscuits not fully crushed and also caramelized condensed milk is good instead of normal condensed milk if you can get it).

125 g butter
1/2 cup soft brown sugar
190 g sweetened condensed milk
1 cup dried apricot, chopped
250 g wine biscuits, crushed
1/4 cup coconut
100 g butter
1 1/2 cups icing sugar
1 lemon, juice and rind of, grated
1 tablespoon hot water

Steps:

  • Heat 125g butter, brown sugar and condensed milk until the butter has melted.
  • Do not boil.
  • Add chopped apricots and crushed biscuits; mix well.
  • Press into a greased 20 x 30cm sponge roll tin.
  • Ice with Lemon Icing:.
  • Beat butter until pale and fluffy.
  • Add icing sugar, grated rind and lemon juice and sufficient water so that you have a fluffy light mixture.
  • Spread over the slice and sprinkle with coconut.
  • Set in refrigerator.
  • Cut into squares.

1 (250 g) packet plain sweet biscuits (vanilla wine or super wine biscuits in NZ)
1 cup dried apricot (chopped)
4 ounces butter (113g)
3 ounces brown sugar (85g)
0.5 (395 g) can sweetened condensed milk

Steps:

  • Crush the biscuits and mix with the chopped apricots.
  • In a pot melt the condensed milk, butter and brown sugar together (Do not boil).
  • Mix with the biscuits & apricots.
  • Press into a greased sponge roll/slice tin.
  • Refrigerate and cut when cold.

1-1/2 teaspoons plus 1/2 cup butter, divided
2 cups sugar
3/4 cup sour cream
12 ounces white baking chocolate, chopped
1 jar (7 ounces) marshmallow creme
3/4 cup chopped dried apricots
3/4 cup chopped walnuts

Steps:

  • Line a 9-in. square pan with foil; grease foil with 1-1/2 teaspoons butter., In a heavy saucepan, combine sugar, sour cream and remaining butter. Bring to a boil over medium heat, stirring constantly. Cook and stir until a candy thermometer reads 234° (soft-ball stage), about 5-1/2 minutes. Remove from heat., Stir in chocolate until melted. Stir in marshmallow creme until blended. Stir in apricots and walnuts. Immediately spread into prepared pan. Refrigerate, covered, overnight., Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares.

  • Place chocolate in microwave bowl.
  • Microwave on medium for 2 minutes, stirring every 30 seconds till melted.
  • Add biscuits, apricots, raisins and coconut.
  • Stir to combine.

1 cup butter, softened
1 (8 ounce) package cream cheese, softened
1 teaspoon vanilla extract
¼ teaspoon salt
2 cups all-purpose flour
¾ cup white sugar
1 cup chopped walnuts
¾ cup dried apricots, chopped
¼ cup packed brown sugar
1 ½ teaspoons ground cinnamon
½ cup seedless raspberry preserves
1 tablespoon milk

Steps:

  • In large bowl, with mixer at low speed, beat margarine or butter with cream cheese until blended and smooth. Beat in vanilla extract, salt, 1 cup flour, and 1/4 cup sugar until blended.
  • With spoon, stir in remaining flour. Divide dough into 4 equal pieces. Wrap each with plastic wrap and refrigerate until firm, at least 2 hours or overnight.
  • To Prepare Filling: In medium bowl, with spoon, stir walnuts, apricots, brown sugar, 1/4 cup plus 2 tablespoons white sugar, and 1/2 teaspoon cinnamon until well mixed.
  • Line 2 large baking sheets with foil and grease foil.
  • On lightly floured surface, with floured rolling pin, roll 1 piece of chilled dough into a 9-inch round, keeping remaining dough refrigerated. Spread dough with 2 tablespoons raspberry preserves. Sprinkle with about 1/2 cup apricot filling; gently press filling onto dough. With pastry wheel or sharp knife, cut dough into 12 equal wedges. Starting at curved edge, roll up each wedge, jelly-roll fashion. Place cookies on foil-lined cookie sheet, point-side down, about 1/2 inch apart. Repeat with remaining dough, one-fourth at a time.
  • Preheat oven to 325 degrees F (165 degrees C).
  • In cup, mix remaining 2 tablespoons sugar with 1 teaspoon cinnamon. With pastry brush, brush rugelach with milk. Sprinkle with cinnamon-sugar.
  • Bake rugelach at 325 degrees F (165 degrees C) on 2 oven racks about 30 to 35 minutes until golden, rotating cookie sheets between upper and lower racks halfway through baking time. Immediately remove rugelach to wire racks to cool. Store in tightly covered container.
