BROCCOLI RABE AND SALAMI PASTA
We call this one "Rabes and Salames" around the house - enjoy!

Steps:
- Bring 2 inches water in a deep skillet to a boil for broccoli rabe and 1 large pot of water to a boil for pasta. Salt the water liberally.
- Simmer the broccoli rabe in water 10 to 12 minutes, then drain. Return the skillet to medium heat with 1/4 cup extra-virgin olive oil. Add garlic and red pepper to the oil and gently cook a couple of minutes, add broccoli rabe and cook 5 minutes more.
- While the broccoli rabe cooks, drop the rigatoni into the boiling water and cook until al dente. Just before draining reserve 1 cup starchy liquid.
- Combine the ricotta, Parmesan, salami and black pepper, to taste, in a pasta bowl. Add the starchy liquid and stir. Add the broccoli rabe and pasta and toss 2 minutes to coat and combine.
PASTA SALAD WITH RICOTTA SALATA AND BROCCOLINI

- Trim and discard the bottom 1/2-inch from the broccolini. Then cut the broccolini into 1-inch pieces. Steam broccolini covered in small skillet in 1/2 inch boiling water for 3 minutes, cold shock, and drain. Combine broccolini and pasta in a bowl.
- Return pan to stove over low heat and saute shallots and garlic in oil 2 minutes. Pour warm oil over pasta and broccolini. Crumble ricotta salata over pasta. Sprinkle the pasta with thyme, salt, and pepper, and toss to combine. Adjust seasonings and garnish salad with halved grape tomatoes.

- Cook pasta according to package directions until al dente.
- Heads up, you will need to use about 1/2 cup of the starchy cooking liquid for the sauce before you drain the pasta.
- In a small mixing bowl, combine the ricotta cheese, lemon zest, salt, and a lot of freshly ground black pepper.
- Reserve the ricotta mixture on the countertop and let it come up to room temperature The flavors of the cheese and lemon will develop as the cheese warms up.
- Preheat a large skillet over medium-high heat with the EVOO.
- Add the sausage and break it up with the back of a wooden spoon into a small bite-size pieces.
- Really go at breaking the meat up; it will make a difference in the end.
- Cook the meat until brown, about 4 to 5 minutes.
- While the sausage is browning, prepare the broccoli.
- Cut the broccoli tops into small florets. Remove the fibrous outer layer of the stem (just square it off using your knife), then thinly slice the tender center portion of the stem.
- Once the sausage is brown, remove it to a paper-towel-lined plate.
- Return the skillet to the heat and add all of the broccoli and the chopped onion. Spread the veggies out in an even layer in the pan, season with some salt and pepper, and let the broccoli brown up a bit before stirring, about 2 minutes.
- Add the garlic and red pepper flakes and continue to cook 2 minutes more.
- Add the sausage back to the skillet along with the chicken stock.
- Ladle in some cooking water from the pasta and bring up to a simmer.
- Cook until the broccoli is tender and the liquids have reduced slightly, about 2 minutes.
- Add the lemon juice, parsley, and cooked, well-drained pasta.
- Toss to combine and simmer 1 last minute to allow the pasta to soak in the sauce and flavors.
- Turn the heat off, add the grated cheese, and toss to combine.
- To serve, place a large dollop of the pepper-lemon-ricotta mixture into each of 4 shallow bowls and bury it with the hot pasta.
- Once you are at the table, mix it up with a fork to distribute the ricotta cheese. Serve with extra grated cheese.
RACHAEL RAY'S THAI CHICKEN PIZZA

- Preheat the oven to 425°F Form the pizza crust on a pizza pan or cookie sheet. Top it with duck or plum sauce, spreading it around like you would pizza sauce. Sprinkle the pizza with some red pepper flakes, then top it with the cheese and bell peppers. Bake until golden and bubbly, 15 to 17 minutes.
- In a small bowl, combine the vegetable oil, soy sauce, and peanut butter with the hot sauce and grill seasoning. Use the microwave to loosen up the peanut butter if it is too cold to blend into sauce; 10 seconds ought to do it. Coat the chicken evenly with the mixture and let it stand for 10 minutes. Preheat a grill pan or nonstick skillet over medium-high heat. Cook the chicken cutlets for 2 to 3 minutes on each side, or until firm. Slice the chicken into very thin strips.
- While the chicken cooks, mix the honey and vinegar in a medium bowl. Add the cucumber and turn to coat in the dressing.
- When the pizza comes out of the oven, top it with the chicken, scallions, sprouts, and cilantro. Drain the cucumbers and scatter them over the pizza. Garnish the pizza with peanuts, cut it into 8 wedges, and serve.

- In a saucepan, heat water until boiling then add the pasta and cook for 3 minutes, after the 3 minutes add broccoli to the pot and cover. Cook for together for a further 5 minutes. Then drain and leave to one side.
- In a large saute pan, heat the olive oil and garlic over medium heat until fragrant. Once the garlic has turned golden in color add the broccoli / pasta mixture to the pan.
- Toss and coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli is slightly tender, about 5 minutes. Squeeze both halves of fresh lemon.
- In a separate pan, add a teaspoons of olive oil and cook the peanuts over medium-high heat.
- Serve the broccoli pasta on a dish, top with peanuts, Parmesan cheese, and chili flakes for an extra flourish of flavor.

RACHAEL RAY'S LEMON-BASIL PASTA
In her cookbook Express Lane Meals, Rachael Ray originally had this pasta paired with fillets of sole. Thinking it would be good just as a pasta dish, I posted this for safekeeping. I made a few very minor adjustments to make it a bit healthier. Enjoy.

- Place a large pot of water on the stove to boil , for cooking the pasta. Add salt once water is boiling, then the pasta, and cook according to package directions. Note: you will need to use a ladleful (probably 1/4 to 1/2 cup) of the starchy pasta water to make the sauce, so gather that 1/4 to 1/2 cup before draining the water.
- While pasta cooks, zest the lemon. Heat the oil in a deep skillet over medium-low heat. Add lemon zest and garlic to oil. Sweat the garlic for two minutes, then add wine.
- Reduce the wine for 30 seconds, then add the reserved ladle of pasta water and the juice of the lemon. Reduce 30 more seconds. Turn the heat off.
- Drain pasta and then transfer it to the skillet with the garlic-lemon-wine sauce. Add in the basil; toss pasta for a minute to absorb flavors. Season pasta with salt and pepper.
