QUINOA AND BROCCOLI CASSEROLE

1 1/2 cups quinoa
3 cups chicken stock
3 teaspoons kosher salt, divided
12 ounces broccoli florets, chopped
8 ounces button or cremini mushrooms, sliced
4 tablespoons unsalted butter, divided
1/2 large onion, diced
2 tablespoons dry mustard
1 1/2 teaspoons smoked paprika
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon ground white pepper
3 cups half-and-half
1 large egg
16 ounces sharp Cheddar, grated
1/2 cup mayonnaise

Steps:

  • Place the quinoa in fine sieve or strainer and rinse thoroughly under cool running water and allow to drain.
  • Position a rack in the middle of the oven and heat to 350 degrees F.
  • Bring the quinoa, chicken stock and 2 teaspoons of the salt to a boil in a medium saucepan over high heat. Reduce the heat to low, stir, cover and cook for 15 minutes. When 5 minutes remain, add the broccoli right on top of the quinoa and replace the lid.
  • Heat a large, straight-sided saute pan over high heat and add the mushrooms and 1/3 cup of water. Cook until the mushrooms collapse, 2 to 3 minutes, then add 2 tablespoons of the butter and cook until browned. Remove to a large bowl.
  • Add the remaining 2 tablespoons of butter to the pan along with the onions and the remaining teaspoon of salt. Reduce the heat to low and sweat the onions until translucent, about 5 minutes. Then stir in the mustard, smoked paprika, black pepper, cayenne and white pepper and cook for 1 minute more. Add the half-and-half to the pan and heat until warm.
  • Whisk the egg in a medium bowl and temper with 1 cup of the hot liquid, continuing to whisk to prevent curdling. Then whisk the egg mixture back into the saute pan and add the cheese, stirring until melted.
  • Add the quinoa, broccoli, mayonnaise and the melted cheese mixture to the bowl with the mushrooms and stir to combine.
  • Pour the quinoa mixture into an ungreased 9-by-13-inch glass baking dish (see Cook's Note). Bake until set and just beginning to brown, about 45 minutes or until the internal temperature reaches 205 to 210 degrees F. Cool 10 minutes before serving.

1 ¾ cups vegetable broth
1 cup quinoa
1 cup shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Combine broccoli, broth, and quinoa in a saucepan; bring to a boil. Reduce heat to medium-low, place a cover on the saucepan, and cook at a simmer until the broth has been absorbed and the quinoa is tender, 15 to 20 minutes.
  • Stir Cheddar cheese into the quinoa, replace the lid, and set aside until the cheese melts, 2 to 3 minutes; season with salt and pepper.

2 cups of quinoa
3 cups of water
8 pieces of bacon (I used turkey bacon), chopped
1 shallot, chopped
Extra Virgin Olive Oil (EVOO)
salt and pepper
3 tablespoons flour
2 cups milk
1½ cups cheddar cheese, shredded
2 cups of broccoli florets
½ cup grated Parmesan cheese

Steps:

  • Before you begin, rinse your quinoa off under cold water. Rinse and then shake dry.
  • Next, add your quinoa and water to a pot over medium-high heat on the stove. Cover and bring to a boil. Once boiling, reduce heat to low and continue to simmer covered about 10 to 15 minutes.
  • While your quinoa simmers, place your bacon pieces in a drizzle of EVOO in a skillet over medium-high heat. Allow bacon pieces to crisp up. After they're crispy, add in your chopped shallot and a pinch of salt and pepper. Saute the shallot a minute or two.
  • Next, sprinkle in your flour and whisk a minute.
  • Next, whisk in your milk and continue to whisk until sauce begins to thicken up. Once sauce starts to thicken up, whisk in your cheese and continue whisking until incorporated.
  • Take your cooked quinoa and pour it into your skillet with your bacon cheese sauce. Stir in the quinoa and stir in your broccoli florets. Sprinkle in your Parmesan cheese.
  • Remove from heat and serve immediately with maybe a little more Parm.

1/2 cup quinoa
1 cup water
5 large broccoli florets
1 small onion, diced (I like sweet red onion)
1/4 cup breadcrumbs
1/4 cup shredded cheese (cheddar, parmesan, whatever you like)
1 large egg
salt
pepper
olive oil

Steps:

  • First, cook your quinoa according to the directions on the package. I cooked mine by combining 1/2 cup of quinoa with 1 cup of boiling water, then letting it come to a boil, and simmering, covered for about 15 minutes. Once the quinoa has absorbed all the water (this shouldn't take longer than 15 minutes), put it on a plate and let it cool completely.
  • Next, saute your diced onion until it's soft and translucent. Set aside and let cool completely. Cook your broccoli until it has softened a little bit, then let it cool as well. Once the broccoli has cooled completely, dice it into small pieces.
  • Now that you have everything ready, in a large bowl, mix all the ingredients together, leaving the egg until the end. Mix well so you have a smooth, wet mixture that will allow you to make patties that will stick together.
  • Heat some olive oil in a pan, and make your patties. I made each using 1/4 cup of the mixture. Just make a ball out of the mixture, and squash it down a little bit. Cook each patty for about 7 - 8 minutes on each side on medium heat. You want the patty to develop a crust, but not to burn, so watch them carefully. Let cool for a couple of minutes before eating.
  • Enjoy!

  • Position racks in the upper and lower thirds of your oven and preheat the oven to 400 degrees F. Generously coat 2 large rimmed baking sheets with nonstick spray. Coat a 9x13-inch or similar casserole dish with nonstick spray and set aside. (The dish you see in these photos is 8 x 10 and is very full.)
  • Place 2 cups broth and the quinoa in a large saucepan, then bring to a low boil. Reduce heat to low, cover, and let cook for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and set aside.
  • While the quinoa cooks, roast the broccoli: place the broccoli in a very large bowl. Drizzle with 2 tablespoons olive oil and sprinkle with 1/2 teaspoon salt and ¼ teaspoon black pepper. Toss to coat the florets. If any seem dry, drizzle in a bit more oil as needed. Divide the broccoli between the two baking sheets, spreading it into an even layer and ensuring that the broccoli does not overlap.
  • Roast the broccoli on the upper and lower thirds of the oven for 10 minutes. Remove from the oven and use a spatula to lightly toss the broccoli and spread it back into an even layer to promote even browning. Return the pans to the oven, switching their positions on the upper and lower racks. Continue baking until the broccoli is browned and the tips are becoming crisp, about 5 to 10 additional minutes. Turn the oven down to 350 degrees F.
