1 medium zucchini, chopped
1 medium sweet yellow pepper, chopped
1 medium red onion, chopped
1 cup grape tomatoes, halved
2 garlic cloves, diced
4 tablespoons olive oil, divided
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups reduced-sodium chicken broth
1-1/2 cups quinoa, rinsed
3 tablespoons balsamic vinegar
3/4 teaspoon Dijon mustard
1/4 cup each minced fresh basil, parsley and chives

Steps:

  • Place vegetables and garlic in an ungreased 15x10x1-in. baking pan. Drizzle with 2 tablespoons oil; sprinkle with salt and pepper. Bake, uncovered, at 425° for 35-40 minutes or until tender, stirring once., Meanwhile, in a large saucepan, bring broth to a boil. Add quinoa. Reduce heat; cover and simmer for 12-15 minutes or until liquid is absorbed. Remove from the heat; fluff with a fork., Transfer vegetables and quinoa to a large bowl. Whisk the vinegar, mustard and remaining oil; drizzle over vegetable mixture. Sprinkle with herbs: toss to combine.

1 3/4 cups canned chicken broth, undiluted
2 teaspoons olive oil
2 medium leeks, finely chopped (use white portion only)
1/4 cup red bell pepper, chopped
1/4 cup yellow bell pepper, chopped
1/4 cup green bell pepper, chopped
3/4 cup carrot, finely chopped
1/2 cup celery, finely chopped
2 teaspoons minced garlic
2 tablespoons parmesan cheese, freshly grated
1/4 teaspoon salt (to taste)
1/4 teaspoon pepper, freshly ground (to taste)
1/4 cup fresh parsley, chopped

Steps:

  • Rinse quinoa with cold water according to the directions on the package; drain.
  • In a medium saucepan, combine quinoa and broth; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until quinoa is tender and liquid is absorbed.
  • In a medium skillet, heat oil over medium-high heat. Add leeks, peppers, carrots, and celery. Cook for 6 minutes or until vegetables are tender, stirring occasionally. Stir in garlic; cook 1 minute.
  • Combine vegetable mixture and quinoa. Stir in cheese, salt, and pepper. Sprinkle with parsley.

3 tablespoons extra-virgin olive oil
2 large or 4 small shallots, chopped
1 small red pepper, stemmed, seeded, deveined and chopped into 1/2-inch pieces
1 teaspoon kosher salt, plus extra for seasoning
1/2 teaspoon freshly ground black pepper, plus extra for seasoning
1 1/2 cups quinoa
1/4 cup white wine, such as pinot grigio
1 1/2 cups low-sodium chicken broth
1 packed cup arugula, chopped
1/2 cup slivered almonds, toasted and coarsely chopped
1/2 cup chopped fresh mint
1 medium cucumber, peeled, seeded and diced into 1/2-inch pieces
Zest of 1 lemon

Steps:

  • Cook's Note: To toast the almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven until lightly toasted, 6 to 8 minutes. Cool completely before using.
  • Heat 2 tablespoons of the oil in a large saucepan or a high-sided skillet over medium-high heat. Add the shallots and cook until soft, about 2 minutes. Add the bell pepper, salt and pepper. Cook until the vegetables are tender, 5 minutes. Make a space in the center of the vegetables and add the remaining 1 tablespoon of oil. Add the quinoa and cook, stirring constantly, until coated with oil, about 2 minutes. Add the wine and cook until all of the liquid has evaporated, about 2 minutes. Add the broth and bring to a boil. Cover the pan and simmer until all of the broth has been absorbed and the quinoa is tender, about 15 minutes. Keep covered and let sit for 10 minutes. Add the arugula, almonds, mint, cucumber and lemon zest and toss well. Season with salt and pepper.

3 medium beets (with some stem still attached)
olive oil
1 cup black beans, cooked in salted water until just soft & drained
1 cup quinoa, cooked in 2 c vegetable stock
1 medium zucchini, cut into large 1-inch dice
1 large red bell pepper, cut into large 1-inch dice
2 tablespoons minced shallots
2 tablespoons minced garlic
2 tablespoons minced jalapenos
1 lemon, grated zest of
2 tablespoons fresh oregano
1/4 cup extra virgin olive oil
1 lemon, juice of
kosher salt
1/2 cup minced fresh flat-leaf Italian parsley

Steps:

  • Preheat oven to 400°F Scrub beets. Place each beet on a piece of foil large enough to wrap it well. Drizzle a bit of olive oil on each beet & wrap. Place foil wrapped beets on a baking tray & roast for 1 hour 15 minutes. Let cool a bit, unwrap, cut off top & stem, peel. Cut beets into large dice while still on foil. Sprinkle with kosher salt.
  • Line a large baking tray with Reynold's Wrap foil. Place cut up zucchini & red bell pepper on tray. Drizzle with olive oil. Roast for just 15 minutes - this softens the vegetables so they are not raw without softening them too much. Remove from oven & sprinkle with kosher salt.
  • Combine cooked quinoa & cooked black beans. Add minced shallot, garlic, jalapeno, lemon zest & oregano. Stir well. Add roasted vegetables. Stir well.
  • Combine extra virgin olive oil, lemon juice & about 1/2tsp salt. Whisk well. Pour over pilaf & stir very well to combine. Add parsley & stir well one more time.

1 cup quinoa
8 tablespoons (1 stick) salted butter
3 cloves garlic, minced
2 large carrots, peeled, halved lengthwise and cut into 1-inch pieces
2 large parsnips, peeled, halved lengthwise and cut into 1-inch pieces
1/2 red onion, cut into large chunks
1/2 butternut squash, peeled, seeded and cut into large chunks
Kosher salt and freshly ground black pepper
Juice of 1 lemon
1/4 cup pine nuts
6 ounces baby arugula leaves
1 cup Parmesan shavings

Steps:

  • Preheat the oven to 400 degrees F.
  • Prepare the quinoa according to the package directions. Set aside to cool.
  • In a small skillet over medium-low heat, melt the butter with the garlic. Turn off the heat and allow it to sit for 5 minutes.
  • Arrange the carrots, parsnips, red onion and squash on a large rimmed baking sheet. Pour over half of the garlic butter, sprinkle on some salt and pepper and toss to coat. Roast the vegetables, tossing occasionally, until they're nice and deep golden brown, 35 to 40 minutes. Set aside to cool slightly.
  • Pour the other half of the garlic butter into a bowl (reserve the skillet for the pine nuts). Add the lemon juice and some salt and pepper and whisk.
  • Add the pine nuts to the reserved skillet, set over low heat and toast, tossing occasionally, until light golden brown, 5 to 7 minutes. Set aside.
  • To assemble the salad: Add the arugula to a large bowl, followed by the roasted vegetables, buttery dressing, quinoa, pine nuts and Parmesan shavings. Toss it all together and serve while still warm or at room temperature.

2 cups trimmed and halved Brussels sprouts
2 tablespoons melted coconut or extra-virgin olive oil

2 tablespoons extra-virgin olive oil

Steps:

  • Heat oven to 425 degrees. On a rimmed baking sheet, toss squash and Brussels sprouts with 2 tablespoons melted coconut or extra-virgin olive oil and season with salt and paprika. Roast, rotating pan, until golden and tender, 25 to 30 minutes.
  • Make sauce: Pulse garlic, tahini, vinegar, 2 tablespoons olive oil, water, chives, parsley, and cilantro in a food processor until smooth. Season with salt and pepper.
  • In a large bowl, toss roasted vegetables with quinoa and 2 tablespoons sauce.
  • For each serving, toss with 1 1/4 cups spinach and adjust seasoning.

250g cherry tomatoes , halved
4 tbsp olive oil
1 onion , thinly sliced
3 sticks celery , sliced
½ tsp cumin seeds
2 garlic cloves , finely chopped
100g basmati rice (brown or white)
140g quinoa
2 x 20g packs dill , chopped
500ml chicken or vegetable stock (from a cube is fine)
50g pine nuts , toasted
white fish, such as sea bass , to serve

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Put the tomatoes on a baking sheet and drizzle with 2 tbsp olive oil and some seasoning. Roast for 15 mins, remove and set aside.
  • Heat the remaining olive oil in a large pan. Add the onion, celery, cumin and garlic, then season to taste. Fry on a medium heat for 10 mins until golden. Add the rice, quinoa, dill and stock. Cover with a lid and cook for 12-15 mins or until the rice is soft. Add the tomatoes and pine nuts, and gently stir through. Serve with white fish or a green salad.

1/2 teaspoon coarse sea salt plus additional for seasoning
1 cup quinoa, rinsed and drained 3 times
6 baby golden beets, peeled, cut into 1/3-inch cubes
3 tablespoons olive oil
2 garlic cloves, minced
1 cup 1/2-inch pieces orange bell peppers
1 cup 1/2-inch pieces red bell peppers
1/2 pound asparagus, trimmed, cut on diagonal into 3/4-inch pieces
1 cup 1/2-inch pieces trimmed baby zucchini (about 6 ounces)
Freshly ground black pepper
4 green onions, thinly sliced
1 tablespoon chopped fresh Italian parsley

Steps:

  • Bring broth and 1/2 teaspoon sea salt to boil in medium saucepan; add quinoa. Cover, reduce heat to low, and simmer until quinoa is tender and broth is absorbed, about 15 minutes. Remove from heat; fluff with fork. Cover and reserve.
  • Meanwhile, bring 1 1/4 cups water to boil in large nonstick skillet over medium heat. Add beets. Cover and cook until beets are tender, about 8 minutes. Uncover; cook until any water in skillet evaporates. Increase heat to medium-high. Add olive oil and garlic; sauté 30 seconds. Add all bell peppers, asparagus, and zucchini. Sprinkle with sea salt and black pepper. Sauté until just tender, about 8 minutes. Add cooked quinoa, green onions, and parsley to vegetables in skillet; toss to combine. Season with sea salt and pepper.

1 1/2 teaspoons snipped fresh savory or 1/2 teaspoon dried savory, crushed

6 garlic cloves, with skin
1 1/2 cups quinoa
1 (14 1/2 ounce) can vegetable broth or 1 (14 1/2 ounce) can reduced-sodium chicken broth
1 1/4 cups water

Steps:

  • Preheat oven to 400 degrees.
  • Line a 15x10x1 inch baking pan with foil; spray foil with oil.
  • Spread squash, tomatoes and onion on foil. Drizzle vegetables with oil. Sprinkle with thyme, savory and pepper.
  • Place garlic cloves to one side of foil-lined pan.
  • Bake in 400 degree oven for 20 minutes.
  • Remove garlic from pan. Set aside to cool.
  • Bake remaining vegetables for 15 to 20 min more or until tender.
  • Meanwhile, thoroughly rinse guinoa. Drain.
  • In saucepan combine broth and water. Bring to boil.
  • Stir in quinoa. Return to boil.
  • Reduce heat to low. Simmer, covered, 15 to 20 mins or until quinoa is tender and liquid is absorbed.
  • Squeeze softened garlic from each clove. Discard skin. Stir in garlic into quinoa.
  • Add roasted vegetables to quinoa mixture. Toss gently to combine.

½ cup quinoa

Steps:

  • Pour oil into a medium saucepan, and place over medium heat. Add onion, celery, and carrots; cook and stir for 10 minutes, or until vegetables are tender.
