Mom's Refrigerator Sweet Pickles image

What a great way to preserve all those fresh end-of-summer garden cucumbers! This sweet pickles recipe is from my mom's recipe box, and comes together in quick and easy fashion. It has a short list of ingredients and there's no need for any fancy equipment!

7 c. thinly sliced cucumbers
1 c. thinly sliced onions, chopped into smaller pieces if desired
1 c. diced green bell pepper
1 T. pickling salt
2 c. sugar
1 c. white vinegar
1 T. celery seed
big sprig of fresh dill

Steps:

  • Combine cucumbers, onions, bell pepper, and pickling salt in large heat-proof bowl, preferably one with a lid. Stir and let sit on the counter for 1 hour. Drain. (If you don't own a mandoline, I highly recommend this one. It works so great for creating thin, even slices. Use it for the cucumbers, onions, and bell pepper in this recipe.)
  • In a medium saucepan over medium-high heat, heat the sugar, vinegar, and celery seed. Stir occasionally. When the sugar has completely melted, pour the hot mixture over the cucumbers. Add the dill. Let cool to room temperature. Place a lid on the bowl and refrigerate for 2 days before eating. Eat straight from the bowl, or transfer to jars if desired. You could also transfer the room temperature mixture to jars before refrigerating for 2 days. Pickles keep very well for a few weeks.

This recipe is based on the pickled veggies in Brown Eggs and Jam Jars by Aimee Wimbush-Bourque, but I've made it less mustardy and more garlicky to fit my family's tastes. 9 cups sliced pickling cucumbers
1 large sweet onion, halved and thinly sliced
1/4 cup canning salt
1 cup sugar
1 cup water
1 cup white vinegar
1/2 cup cider vinegar
2 tablespoons mustard seed
1 teaspoon celery seed
1/2 teaspoon whole peppercorns
12 garlic cloves, crushed
4 bay leaves

Steps:

  • In a large nonreactive bowl, combine cucumbers, onion and salt. Cover with crushed ice and mix well. Let stand 3 hours. Drain; rinse and drain thoroughly., In a Dutch oven, combine sugar, water, vinegars, mustard seed, celery seed and peppercorns. Bring to a boil, stirring to dissolve sugar. Add cucumber mixture; return to a boil, stirring occasionally. Reduce heat; simmer, uncovered, 4-5 minutes or until heated through., Carefully ladle hot mixture into 4 hot wide-mouth 1-pint jars, leaving 1/2-in. headspace. Add 3 garlic cloves and 1 bay leaf to each jar. Remove air bubbles and, if necessary, adjust headspace by adding hot pickling liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

5-Minute Sweet Pickle Relish Recipe image

My homemade sweet pickle relish recipe: ready in 5 minutes!! A great topping for hot dogs, tacos or burgers!

4 large pickled gherkins ((sweet and sour))
1 tsp caster sugar
1 tbsp mustard seeds ((pickled))
⅔ tsp ground cinnamon
½ tsp strong mustard
1 tbsp white wine vinegar
⅔ tsp onion powder
pepper

Steps:

  • 1) Add the sweet and sour pickled gherkins to a blender.
  • 2) Blend for just a few seconds until you get a rough crumble. Then add the caster sugar and ground cinnamon.
  • 3) Pulse again for another 2 to 3 seconds until you end up with a lightly coarse gherkin mixture. Remove the blade of your blender if you can or pour the blended gherkins in a mixing bowl. Then add the pickled mustard seeds, mustard, vinegar and onion powder. Season with a little pepper to taste.
  • 4) Stir the sweet pickle relish well. Cover and let the relish marinate at room temperature for an hour. Then check the seasoning again and add extra cinnamon, sugar, onion powder or pepper if necessary. Once it's seasoned enough, then pour the sweet pickle relish in a clean jar. You can store the sweet pickle relish in the fridge for up to 2 weeks.

2 tablespoons torn dill sprigs
1 teaspoon peppercorn
3 tablespoons olive oil

Steps:

  • In a medium bowl, mix vinegar, sugar, and salt, stirring occasionally, until sugar dissolves. Set aside.
  • In a nonreactive bowl, combine cucumbers, onions, dill, and peppercorns.
  • Add olive oil to reserved vinegar mixture and stir well. Pour over vegetables and toss to combine.
  • Cover bowl and refrigerate for at least 8 hours before serving.

1 c. Filtered Water
1 tbsp. Kosher Salt
1/2 lb. Sliced Cucumbers
1 clove Garlic
20 Chives, Cut Into 1-inch Pieces

Steps:

  • Combine vinegar, water, and salt in a saucepan, and bring to a boil over high heat. Cook for a few minutes, just enough to dissolve the salt.In the meantime, place cucumbers, garlic, and chives in a clean glass jar or container.When the brine is ready, pour it over the vegetables, making sure to completely cover the ingredients. Seal with a lid, let the jar cool to room temperature, then place in the refrigerator for at least one day before enjoying.The fridge pickles will keep for at least one month. Note: I recommend white or red wine vinegar, apple cider vinegar, or rice vinegar. Use a quality vinegar, not the giant plastic jugs of distilled white vinegar.

QUICK PICKLED SWEET ONIONS

I use these in egg salad and on toast and on pickle trays and, sadly enough, I eat them right out of the jar. The pickling solution is really concentrated so they only need about 1 day before they're good, but a week makes them perfect.

2 medium onions, as strong as you can find them, cut into rings
1 1/2 cups white vinegar
1/2 cup white sugar
3 tablespoons salt
7 peppercorns

Steps:

  • Bring all ingredients except onions to a boil.
  • Reduce heat and gently boil for one minute.
  • While mixture is boiling, cram onion rings into a glass jar as tightly as you can. Don't worry if the rings break. This is not a pretty pickle.
  • Remove boiling mixture from stove and pour directly into the jar. Allow bubbles to rise to the surface, then refill as needed leaving 2cm headroom.
  • Screw lid on gently and allow to cool on counter top.
  • Once cooled, refrigerate for up to one month.
  • This is not a sterilized pickle. Do not store unrefrigerated!

3 tablespoons kosher salt
2 tablespoons sugar
2 cups cold water
1¾ to 2 pounds Kirby cucumbers (about 6), cut into halves or spears
2 tablespoons coriander seeds
6 large garlic cloves, peeled and halved
1 teaspoon mustard seeds
¼ teaspoon red pepper flakes
16 dill sprigs

Steps:

  • Combine the vinegar, salt and sugar in a small non-reactive saucepan (such as stainless steel, glass, ceramic or teflon) over high heat. Whisk until the salt and sugar are dissolved. Transfer the liquid into a bowl and whisk in the cold water. Refrigerate brine until ready to use.
  • Stuff the cucumbers into two clean 1-quart jars. Add the coriander seeds, garlic cloves, mustard seeds, red pepper flakes, dill sprigs, and chilled brine into jars, dividing evenly. If necessary, add a bit of cold water to the jars until the brine covers the cucumbers. Cover and refrigerate about 24 hours, then serve. 6 kirby cucumbers or 2 regular cucumbers
1/4 cup kosher salt
1 cup water
1 cup rice vinegar
1/2 cup sugar
1 tablespoon coriander seed

1 tablespoon whole allspice berries
1 cinnamon stick
3 cloves
1 bay leaf

Steps:

  • Wash and dry the cucumbers. Using a sharp knife or a mandolin, slice the cucumbers thinly and place in a colander. Sprinkle with salt and toss to coat. Place the colander over a bowl and allow it to sit, covered, for about 1 hour. Rinse off the salt and dry the cucumber slices well. Place them into a sterilized quart jar.
  • In a small saucepan add the remaining ingredients. Stir to dissolve sugar and bring to a boil. Remove from heat and allow it to cool. Pour the brine over the cucumbers in jar. Cover and refrigerate at least 4 hours, preferably overnight. Will keep, refrigerated, for about 2 weeks.

SWEET CHUNK PICKLES



Sweet Chunk Pickles image

  • Wash and dry cucumbers. Put cucumbers in a clean pickling container. Add salt and 1/2 cup vinegar to 2 quarts water. Bring to a boil; cool. Pour over cucumbers. Weight cucumbers under brine. Cover and let stand 2 weeks in a cool place. Drain, discarding brine, and cut cucumbers into 1-inch chunks. Cover with cold water; let stand 24 hours. Rinse well and drain. Tie spices in a cheesecloth bag; add to remaining ingredients. Bring to a boil; pour over cucumbers. Let stand 24 hours. Drain, reserving pickling liquid. Bring pickling liquid to a boil and pour over pickles. Let stand 24 hours. Repeat the last step three times. Pack pickles into hot jars, leaving 1/4-inch head space. Remove spice bag. Bring pickling liquid to a boil. Pour hot liquid over pickles, leaving 1/4 inch head space. Remove air bubbles. Adjust caps. Process pints and quarts 15 minutes in boiling water bath.

  • In a medium saucepan, combine the sugar, cider vinegar, white vinegar, spices and kosher salt. Bring to a boil and reduce heat to Medium. Stir until the sugar has dissolved, approximately 3 to 5 minutes.
  • Divide the vinegar mixture between the two sterilized, hot mason jars (place in boiling water or run through the dishwasher). Fill jars with water, if needed, so that the cucumbers are completely covered with liquid. Screw lids onto jars and set in a cool place. The lids will pop as they seal. Refrigerate for a minimum of 1 hour or up to 2 months.
