With a few simple shortcut ingredients, you can have warm and cheesy homemade quesadillas on the dinner table in less than half an hour. If you need to master the basic steps of how to make chicken quesadilla, this is the place to start.

6 oz refrigerated cooked Southwest-flavor chicken breast strips (from 9- or 12-oz package)
1/2 cup Old El Paso™ Thick 'n Chunky salsa
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 inch; 8 tortillas)
Cooking spray
2 cups finely shredded Colby-Monterey Jack cheese blend (8 oz)
1/4 cup sour cream

Steps:

  • Cut chicken into bite-size pieces. In small bowl, mix chicken and salsa.
  • Spray 1 side of 1 tortilla with cooking spray; place sprayed side down on work surface. Layer with one-fourth of the chicken mixture and 1/2 cup of the cheese. Top with another tortilla; spray top of tortilla with cooking spray.
  • Cook in 10-inch nonstick skillet over medium heat 4 to 6 minutes, carefully turning after 2 minutes, until golden brown. Repeat with remaining tortillas, chicken mixture and cheese. To serve, cut quesadillas into wedges. Serve with sour cream and, if desired, additional salsa.

1 cup shredded chicken
2 Tbsp cream cheese
1 1/2 tbsp tomato paste
3 garlic cloves, minced
1/3 tsp cumin
1/3 tsp coriander
1/2 tsp crushed red pepper
1 jalapeno, chopped
1/2 cup chopped arugula
handful basil leaves or some chopped dill
1/2 cup shredded cheese
2 flour tortillas

Steps:

  • In a small bowl mix the cream cheese, garlic, tomato paste, cumin, coriander and crushed red pepper, a tsp of water until smooth.
  • Add the chicken, basil (or dill), chopped jalapeno and the arugula to the mix.
  • Spread 1/2 of the mixture on one half of a flour tortilla and top with cheese of your choice - mine was mozzarella. Repeat for the other tortilla.
  • Fold each tortilla in half and toast in a non-stick pan with olive oil until golden brown. Flip and toast on the other side as well.
  • Slice in 3-4 pieces and serve like this, or with guacamole.

I'm from the Imperial Valley which is pretty much home for the Special Quesadilla. Normally these can take a decent amount of time to prepare but this way is much simpler. Can be made as main course entree with beans and rice as sides or cut up for appetizers served with guacamole and salsa. The recipe is for 1 special quesadilla but I will usually make an entire package (12 tortillas) and that will be good for 6 servings depending on how hungry everyone is.

Number Of Ingredients 5

1 uncooked flour tortilla
1/4 cup shredded monterey jack cheese or 1/4 cup Mexican blend cheese
1 egg
2 tablespoons water
oil

Steps:

  • Prepare an egg wash by mixing 1 egg with 2 tablespoons of water. Set aside.
  • Take 1 uncooked tortilla and add approximately 1/4 cup of the shredded cheese (more if you want it to be cheesier).
  • Fold tortilla in half.
  • Apply egg wash to the inside edge of the quesadilla.
  • Use your thumb to squeeze the quesadilla shut along the edges.
  • Heat oil in a skillet over medium heat. The oil should be approximately 1/2 inch deep in the skillet.
  • Once the oil is hot carefully place the quesadilla into the oil. It should begin to lightly bubble as soon as it's place inside the oil. If it doesn't, the oil probably isn't hot enough.
  • After 20-30 seconds flip the quesadilla over. The cooked side should be a golden brown.
  • After 20-30 seconds remove the quesadilla and place on a plate with 2-3 paper towels to absorb any excess oil.
  • Serve hot.
  • Can be cut into halves or quarters if serving as appetizers.

2 flour tortillas
3/4 cup shredded cheddar cheese

Steps:

  • Lay one tortilla on a cookie sheet.
  • Spread cheese over the tortilla, being careful not to spill it out onto the cookie sheet.
  • Cover with second tortilla.
  • Bake at 350 degrees (F) for about 10 minutes, or until tortilla begins to turn golden brown.
  • Cut with a pizza cutter into quarters (or eighths) and serve hot with salsa, sour cream or quacamole.

225 g cheddar cheese
8 wholewheat tortillas
4 spring onions, trimmed and sliced
10 sun-dried tomatoes, drained and chopped
200 g sweetcorn, tinned drained
1 teaspoon sunflower oil
50 g minced meat, cooked (optional)

Steps:

  • Sprinkle the cheese onto 4 tortillas, leaving a 2cm border, then scatter the spring onions, tomatoes, optional meat and sweetcorn.
  • Put the remaining tortillas on top and press lightly together.
  • Grease a non-stick frying pan with a little oil and place one quesadilla in the frying pan and cook for 2-3min over a medium heat-or if botom is golden brown.
  • Carefully turn over and cook for a further 2 mins basically till cheese is melted.
  • Repeast for the other quesadillas.
  • Cut into quarters and serve with homemade sour cream and chive dip.

1 to 2 teaspoons canola oil
2 flour tortillas (6 inches)
1/2 cup shredded cheddar cheese, divided
1/2 cup cubed cooked chicken, turkey, pork or beef
1/4 cup sliced fresh mushrooms
1/2 cup shredded Monterey Jack cheese, divided
Sour cream and salsa, optional

Steps:

  • Heat oil in a nonstick skillet, add one tortilla. Layer with half the cheddar cheese, all of the chicken and mushrooms and half the Monterey Jack cheese. Top with the second tortilla. Cover and heat until cheese melts and bottom tortilla is crisp and golden brown., Turn over; sprinkle remaining cheese on top.
