This moist and perfectly sweet Lemon Sourdough Cake uses sourdough discard to make the cake moist with a springy light texture. This cake freezes well.

1 cup sourdough starter discard
1 cup milk ((any milk will work, plant based etc))
1 cup sugar
3/4 cup oil ((any neutral oil))
2 eggs ((beaten))
2 teaspoons vanilla
1/2 cup lemon juice
2 tablespoons lemon zest ((packed))
2 2/3 cups flour
2 teaspoons baking soda
1 teaspoon salt

Steps:

  • Preheat the oven to 350F and grease a 9x13" pan.
  • In a large bowl, whisk together the sourdough starter, milk, sugar, oil, eggs, vanilla, lemon juice and lemon zest to combine.
  • In a medium bowl, whisk together the flour, baking soda and salt to combine. Slowly add the flour mixture to the first large bowl and stir together to combine until smooth (you can use a hand mixer if desired).
  • Transfer the batter to the prepared pan and spread it out until smooth. Bake for approximately 35 minutes, until a toothpick inserted in the centre comes out clean. Cool and serve or freeze any leftover cake for up to 1 month in a sealed container.

Don't be daunted by making a sourdough bread starter at home - this easy cheat's version makes a lovely loaf without the stress

Number Of Ingredients 5

100g strong white bread flour
100g organic dark rye flour
0.5 x 7g sachet fast-action dried yeast
400g strong white bread flour
0.5 x 7g sachet fast-action dried yeast

Steps:

  • To make your starter, place all the ingredients in a bowl and add 250ml cold water. Mix together thoroughly with a spoon until you have a spongy mixture, then cover with cling film and leave at room temperature at least overnight, but up to 24 hrs if you have time.
  • To make the bread dough, tip the ingredients into a clean bowl and add 1 tbsp fine salt, 200ml cold water and your starter. Bring all the ingredients together to a dough, adding a splash more water if too stiff, then tip out onto a lightly floured surface and knead for at least 10 mins until smooth, elastic and springy (this will take 5-7 mins in a mixer with a dough hook). Place the dough in a clean, lightly oiled bowl, cover with cling film and leave until doubled in size - about 1 hr at room temperature, 3 hrs in the fridge (see tips, below).
  • Tip the dough onto a floured surface and gently shape into a round - you don't want to knock too much air out of the dough. Dust a piece of baking parchment heavily with flour and sit the dough on top. Cover with a tea towel and leave to prove for 1 hr until doubled in size.
  • Heat oven to 220C/200C fan/gas 7. Place a sturdy flat baking tray on the middle shelf of the oven and a smaller tray with sides underneath. Dust the dough with flour and slash with a utility knife. Slide the bread onto the hot tray on top and throw a few ice cubes (or pour some cold water) onto the tray below - this creates a burst of steam, which helps the bread form a nice crust. Bake for 25-30 mins until the loaf sounds hollow when tapped on the bottom. Leave the bread to cool completely.

1 1/2 cups unbleached all-purpose flour
1/4 cup granulated sugar
2 1/2 teaspoons baking powder
1 cup ripe sourdough starter
1 large egg
3/4 cup milk
1/3 cup canola oil
1 cup fresh or frozen blueberries
zest from 1 large orange

Steps:

  • Preheat oven to 400 degrees.
  • In a large bowl, combine flour, sugar, and baking powder.
  • Add sourdough starter, egg, milk, and oil. Stir quickly untildry ingredients are almost completely moistened.
  • Gently stir in blueberries and zest.
  • Fill greased muffin pans 2/3 full.
  • Bake for 20-25 minutes.
  • Remove from oven, tip muffins out of tins, and enjoy!
  • Makes about 12 regular sized muffins or 18-20 mini muffins.

1 cup ripe sourdough starter
2 large eggs
1/3 cup canola oil
2 cups unbleached, all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking soda
2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon vanilla extract
8 ounce can crushed pineapple
1 cup raisins
1 cup broken walnuts (divided)
1 Tablespoon brown sugar

Steps:

  • Preheat oven to 350 degrees.
  • Combine all ingredients except the brown sugar and ¼ cup walnuts. Stir to combine. The combination of baking soda and sourdough starter will cause the dough to bubble up.
  • Grease a 10-12 cup Bundt pan.Sprinkle the bottom with the brown sugar and ¼ cup walnuts.
  • Spoon the batter into the pan and bake for 40-50 minutes or until a toothpick inserted in the middle comes out clean.
  • Remove from oven. Cool on a rack for10 minutes; then turn out of the pan and cool completely before slicing.
