1 loaf (1 pound) frozen bread dough, thawed
3/4 pound bulk hot Italian sausage
1/2 cup sliced onion
1/2 cup sliced fresh mushrooms
1/2 cup chopped green pepper
1/2 cup pizza sauce
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 400°; with greased fingers, pat dough onto an ungreased 12-in. pizza pan. Prick dough thoroughly with a fork. Bake at 400° for 10-12 minutes or until lightly browned. Meanwhile, in a large skillet, cook the sausage, onion, mushrooms and green pepper over medium heat until sausage is no longer pink; drain., Spread pizza sauce over crust. Top with sausage mixture; sprinkle with cheese. Bake until golden brown, 12-15 minutes. Or, wrap pizza and freeze for up to 2 months. , To use frozen pizza: Unwrap and place on a pizza pan; thaw in the refrigerator. Bake at 400° for 18-22 minutes or until golden brown.

1 cup pizza sauce
1 1/4 cups shredded mozzarella cheese, divided

Steps:

  • Remove sausage from casing and pinch into dime-sized pieces.
  • Spread sauce over crust; sprinkle with 1 cup cheese.
  • Add Italian Sausage pieces and green pepper.

1 1/2 cups warm water
4 1/2 teaspoons sugar
2 1/4 teaspoons (1 envelope) active dry yeast
3 tablespoons olive oil, plus more for the bowl
1 1/2 teaspoons kosher salt
2 cups bread flour, plus more as needed
1 3/4 cups whole-wheat flour
8 ounces pork sausage, removed from casing
6 tablespoons olive oil
1 cup tomato sauce
1 bunch kale, stemmed and chopped
8 ounces shredded mozzarella
3 ounces Parmesan, grated
2 sprigs fresh thyme, leaves picked
Zest of 1/2 lemon
Kosher salt and freshly ground black pepper
Crushed red pepper flakes, as needed

Steps:

  • For the dough: In a stand mixer fitted with the dough hook, mix together the water, sugar and yeast. Let it sit until foamy, about 5 minutes. With the mixer running on low speed, add the oil and salt, then gradually add the bread and whole-wheat flours. Increase the speed to medium high and mix, adding just enough additional bread flour so that the dough no longer sticks to the bowl, until the dough is smooth and slightly sticky, 7 to 10 minutes. (Alternatively, mix by hand and knead on a lightly floured surface.) Place the dough in an oiled bowl and turn it once or twice to coat it in oil. Cover the bowl with plastic wrap and let rise in a draft-free place for 2 hours or in the refrigerator overnight.
  • For the pizza: If the dough was refrigerated, let the dough sit at room temperature for about an hour before shaping.
  • Preheat the oven to 500 degrees F. Place a 14-inch cast-iron pan into the oven to preheat while you prepare your other ingredients.
  • Add the sausage to a medium pan over medium-high heat. Cook, breaking it up into crumbly pieces, until browned throughout and no longer pink, 5 to 8 minutes. Set aside.
  • Flour a work surface and rolling pin, then roll out the dough to a 14-inch round.
  • Remove the cast-iron pan from the oven and drizzle with 3 tablespoons of the olive oil to coat. Carefully place the dough into the pan and push the edges up against the side of the pan. Drizzle the dough with the remaining 3 tablespoons olive oil. Top with the tomato sauce in an even layer. Then, sprinkle on the kale, sausage, mozzarella, grated Parmesan, thyme, lemon zest and some salt, black pepper and red pepper flakes. Bake until the crust is golden brown, 18 to 20 minutes. Allow to cool slightly, then slice and serve straight from the pan!

1 lb pizza dough
all-purpose flour, for dusting
5 ounces fresh mozzarella cheese, thinly sliced
1/2 cup fresh ricotta
6 -8 stalks Broccolini, trimmed and cut
4 ounces fresh sausage, broken into pieces
red pepper flakes
basil leaves, for serving
lemon zest, for serving (optional)

Steps:

  • Preheat oven to 550 degrees with a pizza stone or baking sheet positioned on the middle rack.
  • Combine broccolini and one tablespoon olive oil in a medium bowl. Season with salt and pepper and toss to coat.
  • Place pizza dough on a lightly floured pizza peel or the back of a baking pan. Using floured fingers, stretch to a diameter of 12-inches. Arrange mozzarella, ricotta, broccolini, and sausage on top of dough in a rustic fashion. Season with salt, pepper, and red pepper flakes and drizzle with remaining 1 tablespoon olive oil. Shake pan to ensure that pizza doesn't stick to pan. Open oven and, in one jerky motion, shake pizza and release onto pizza stone or preheated baking sheet. 2 tablespoons olive oil
1 small zucchini, dried
3/4 cup diced kielbasa sausage (about 4 ounces)
4 mushrooms, sliced
1/4 cup chopped drained oil-packed sun-dried tomatoes
1 tablespoon chopped fresh basil or 1 teaspoon dried, crumbled
1 tablespoon chopped fresh oregano or 1 teaspoon dried, crumbled
2 small Boboli pizza shells (1 8-ounce package)
1/4 cup purchased pizza sauce
1/4 cup grated Parmesan
1/4 cup grated mozzarella
2 ounces goat cheese, crumbled

Steps:

  • Heat oil in heavy large skillet over medium-low heat. Add zucchini, sausage and mushrooms and sauté until vegetables are almost tender, about 5 minutes. Add sun-dried tomatoes and sauté until vegetables are tender, about 3 minutes longer. Remove skillet from heat; stir in basil and oregano.
  • Preheat oven to 450°F. Arrange pizza shells on small cookie sheet. Spread half of pizza sauce over each. Sprinkle each with half of Parmesan. Divide vegetable mixture between pizzas. Top each with half of mozzarella and half of goat cheese. Bake until mozzarella melts and pizzas are heated through, about 9 minutes.
