A super easy, super fresh, super delicious salsa. You'll never need another salsa recipe again! This has been my go-to recipe for years, it's definitely a family favorite. We make it almost every week. It's a staple recipe.

Steps:
- Combine all ingredients in a food processor and pulse in 1 second bursts until all ingredients are finely chopped.
- Serve with tortilla chips. Note that salsa always tastes best after it's been refrigerated for a few hours, so if time allows let the flavors marinate together before serving.
- Store in refrigerator up to 1 week.

SIMPLE SALSA
There are tons of salsas out there, but I haven't found one exactly like mine. (I don't like the taste of lime or lemon juice. It's similar to pico de gallo I guess.) Do yourself a favor and find authentic Mexican chips from a local restaurant to go with this! Can't beat the taste. :) Can spice this up if you want, I do this for my bf, just add some cayenne to the mix! I love this so much I can eat half the bowl in one sitting!!

Steps:
- Wash and dice tomatoes, peel and cut onion, peel and mince garlic or do what I do and use the already minced garlic (1 tsp.)!
- In a small bowl combine garlic, onion and tomatoes with cilantro, salt, and pepper (or garlic pepper salt). Stir with a spoon and mash a little, this will make it juicy, and as it sits it'll get juicer.
- Enjoy with chips or add to entrees for flavor/side dip!
RESTAURANT STYLE SALSA
Recipe video above. Just like what you get at your favourite restaurant and those jars sold alongside corn chips at the grocery store.... but it's better, healthier and cheaper! The fresh flavour is so, so good. Make it chunkier or smoother, to your taste.

- Place onion and jalapeno in the food processor first, then add remaining ingredients (start with 1/2 tbsp lime juice).
- Blitz to desired consistency - I like mine pretty smooth because you get better flavour out of the onion etc.
- Taste test with corn chip for salt and lime. Adjust if necessary.
- Refrigerate 1 hour before serving with corn chips, or other dippers (see in post for suggestions).

- Add the onion, garlic, and jalapeno to the bowl of a food processor and pulse a few times to chop until the onion pieces are about ¼-inch size.
- Drain off the liquid from the can of diced tomatoes with green chilies and discard the liquid. Add the tomatoes and chilies from the can to the food processor.

QUICK RED SALSA

- Drop the peeled garlic cloves into a running food processor through the feed tube. Leave the food processor running until the garlic is completely minced - you will hear it stop bouncing around in the processor - about 10 seconds. Put the cilantro in the food processor and chop until finely minced using one second pulses (about five pulses). Add the onion, and use one second pulses to chop to a medium dice (About 3 pulses.) Add the chipotle en adobo, scrape down the sides of the food processor, and pulse a couple more times to get anything that escaped the blades earlier.
- Add the tomatoes and the lime juice. Process until you get the consistency you want - I shoot for "just a little chunky, not quite soup" - about 30 seconds. Taste for salt - I usually add 1/2 teaspoon of kosher salt - and pulse the processor once or twice to mix the salt in if it is needed.

- Finely chop the tomatoes and coriander (stalks and all) and place into a large bowl.

QUICK SALSA
Salsa... I admit that nothing can beat fresh salsa. But, this is a great alternative to fresh tomatoes when they aren't as readily available during the winter months. So, I opt to do this version from time to time. It is quick and it uses canned diced(or whole) tomatoes. It works pretty well. The canned tomatoes have to be in their own juice, not puree (check the label). If you can, get an organic one, like Muir Glen. But really, any brand will work just fine.

- Drain tomatoes rather well over a sieve. You don't want your salsa to be too watery. In the meantime, place garlic, onion and jalapeno in a food processor. Process for 30 seconds or until finely chopped (not too fine). Add drained tomatoes and cilantro, then pulse for an additional 30 seconds or so until nicely chopped. Add salt and pepper to taste. With all the garden fresh produce, I've been on a salsa kick lately. I can make a meal out of chips and salsa.
