Pressure Cooker Pulled Pork Sandwiches image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 2h45m

Yield 8 to 10 servings

Number Of Ingredients 18

1/4 cup olive oil
One 5-pound pork shoulder, cut into 2-inch cubes
2 tablespoons kosher salt
2 teaspoons chili powder
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
5 cloves garlic, peeled
1 large onion, quartered
3 cups chicken stock
1 1/2 cups bottled barbecue sauce, such as Head Country
24 soft hamburger buns
Pickled Jalapenos and Onions, recipe follows
3 jalapenos, sliced
1 large red onion, sliced into half-moons
1 cup apple cider vinegar
1 teaspoon sugar
1 teaspoon kosher salt

Steps:

  • Heat an electric pressure cooker on the saute mode. When hot, add half of the olive oil. Add half of the pork along with half of the salt, chili powder, black pepper, garlic powder and onion powder. Saute until the meat is very crisp and brown, about 10 minutes. Set the meat aside on a plate. Add the remaining olive oil, meat, salt, chili powder, black pepper, garlic powder and onion powder and cook until the meat is crisp and brown, another 10 minutes.
  • Add the first half of the meat back to the pressure cooker. Add the garlic and onions and cook, stirring, for 2 minutes. Pour in the chicken stock. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on manual for 40 minutes.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. After 15 minutes, release the rest of the steam using quick release.
  • Remove the lid from the pressure cooker. Remove the pork and onions to a baking sheet. Shred the pork with 2 forks, pour over the barbecue sauce and toss to coat. Serve with the buns and Pickled Jalapenos and Onions.
  • If not serving right away, transfer to a 9-by-13-inch disposable aluminum pan, cover with foil and keep warm in the oven at 300 degrees F until ready to serve.
  • Put the jalapenos and red onions in a 16-ounce wide-mouth mason jar.
  • In a small saucepan, combine the vinegar, sugar, salt and 1 cup water. Bring to a boil, stirring until the sugar and salt are dissolved.
  • Pour the hot liquid over the veggies in the jar, screw on the lid and set aside. When it has cooled to room temperature, transfer the jar to the fridge to chill for a minimum of an hour, which will allow the vegetables to pickle. The pickles will last in the fridge for 3 days. Serve them on pulled pork sandwiches.

PORK SCHNITZEL WITH QUICK PICKLES

Pork Schnitzel With Quick Pickles image

When most people think of schnitzel, they default to veal. But pork has its merits. Pork schnitzel is not only more economical than veal, it's also richer in flavor and easier to cook (you've got a bigger margin of error when it comes to timing because pork isn't as apt to dry out). This recipe calls for panko, which are fluffy Japanese-style bread crumbs that make the coating particularly light. But any bread crumbs will work. If you don't want to make the quick pickles, serve this with a sliced up cucumber or two and/or fennel bulb with some lime wedges on the side. And if you happen to have lingonberry jam on hand, this is a great time to use it.

Provided by Melissa Clark

Categories     dinner, lunch, main course

Time 30m

Yield 4 servings

Number Of Ingredients 16

2 limes
3 small Kirby cucumbers or 1 large cucumber, peeled if you like and thinly sliced
1/3 cup very thinly sliced fennel bulb (save the fronds for garnish)
1 large shallot or 1/2 small red onion, thinly sliced
1 tablespoon light brown sugar
1/2 teaspoon kosher salt
1/2 cup flour
1/8 teaspoon cayenne
1/8 teaspoon freshly grated nutmeg
2 eggs, beaten
1 1/2 cups panko or other unseasoned bread crumbs
1 1/4 pounds boneless pork cutlets, pounded to 1/8-inch thick
Coarse kosher salt and ground black pepper
Safflower, peanut or vegetable oil, for frying
1 scallion, thinly sliced, including greens
Lingonberry jam, for serving (optional)

Steps:

  • Prepare the pickles: Grate the zest from one of the limes and juice them both. Add zest and juice to a shallow bowl along with the remaining pickle ingredients and toss well. Let sit for at least 30 minutes and up to 3 days. Chill if letting them sit for longer than 4 hours.
  • Meanwhile, prepare the pork: Mix flour with cayenne and nutmeg. Place flour mixture in one shallow dish, place eggs in a second dish, and place bread crumbs in a third dish. Season pork cutlets generously with salt and pepper.
  • Heat 1/8 inch oil in a large skillet over medium-high heat. While oil heats, dip cutlets one by one into flour (shake off any excess), then into eggs (ditto) and finally into the bread crumbs, taking care not to handle pork more than necessary (hold meat by ends).
  • When oil sizzles when a pinch of bread crumbs is thrown in, add as many cutlets as comfortably fit in one layer, leaving plenty of room around them. Swirl and tilt pan so oil cascades over top of cutlet in waves. When bottom is golden brown, 3 to 4 minutes, flip and brown the other side, swirling pan (swirling helps create air pockets, giving you lighter schnitzel). Transfer to a paper-towel-lined baking platter or baking tray and sprinkle with more salt. Repeat with remaining pork.
  • Serve pork sprinkled with scallion and drizzled with a little of the pickle juice, accompanied by the pickles and the lingonberry jam, if you like.

PORK TENDERLOIN TACOS WITH PINEAPPLE AND QUICK-PICKLED RED ONIONS

Pork Tenderloin Tacos with Pineapple and Quick-Pickled Red Onions image

Provided by Justin Chapple

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 14

1 small red onion, thinly sliced
3/4 cup distilled white vinegar
4 ice cubes
Kosher salt
1 tablespoon ancho chile or chili powder
1 tablespoon smoked or sweet paprika
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon ground coriander
Freshly ground black pepper
One 1 1/4-pound pork tenderloin
2 tablespoons extra-virgin olive oil, plus more for drizzling
12 to 16 corn tortillas
Sour cream, cilantro leaves, diced pineapple, and hot sauce, for serving

Steps:

  • In a container with a tight-fitting lid, combine the onion with the vinegar, ice, and a generous pinch of salt. Close the container and shake to dissolve the salt. Refrigerate while you prepare the pork.
  • In a small bowl, whisk the chile powder with the paprika, cumin, garlic powder, coriander, 1 1/2 teaspoons salt, and 1 teaspoon pepper. Set the spice mixture aside.
  • Using a sharp knife, butterfly the pork tenderloin: Slice almost in half lengthwise, stopping about 1/2 inch from cutting through; open like a book on a work surface. Using your palm or a meat mallet, pound the tenderloin to an even thickness. Drizzle the pork with olive oil and season with the spice mixture.
  • Heat a large cast-iron skillet, grill pan or griddle over medium-high heat. Add the 2 tablespoons olive oil and then the pork. Cook, flipping once, until charred on the outside and the internal temperature reaches 140 degrees F, 6 to 8 minutes total. Transfer to a carving board and let rest for 5 minutes.
  • Meanwhile, warm the tortillas over an open flame or in the microwave; wrap in a clean kitchen towel to keep warm. Carve the pork against the grain and transfer to a platter. Serve the pork in the tortillas with sour cream, cilantro leaves, diced pineapple, hot sauce, and the pickled red onions.

SLOW-ROASTED PORK SHOULDER WITH PICKLED ONIONS

Slow-Roasted Pork Shoulder with Pickled Onions image

Categories     Sauce     Onion     Pork     Side     Roast

Yield serves 8

Number Of Ingredients 12

2 tablespoons canola oil
1 large fennel bulb, top removed, halved, cored, and thinly sliced
1 large onion, halved and thinly sliced
1/4 cup fennel seeds
1 tablespoon coriander seeds
1 tablespoon red pepper flakes
1 tablespoon chili powder
1 tablespoon ground cinnamon
1/4 cup kosher salt
1 tablespoon freshly ground black pepper
1 boneless pork shoulder (about 5 pounds), trimmed of excess fat
Pickled onions (page 235)

Steps:

  • Put a large skillet over medium heat and coat with the oil. When the oil is hot, add the fennel and onion. Cook and stir for 10 minutes, until the vegetables are soft. Remove from the heat and set aside to cool.
  • In a mortar and pestle or spice grinder, combine the fennel seeds, coriander, red pepper flakes, chili powder, and cinnamon. Mash or buzz until you have a spice powder. Put the spice powder in a small bowl and mix in the salt and pepper.
  • Put the pork, fat side up, in a roasting pan. Using a sharp knife, make small slits all over the surface of the meat. Rub the spice mixture all over the pork, inside and out, being sure to get in the incisions. Lift up the top flap and spoon the fennel and onion mixture inside the pork.
  • Preheat the oven to 300°F.
  • Pour in just enough water to film the bottom of the roasting pan. Cover the pan tightly with aluminum foil. Slow-roast the pork for 2 hours.
  • Increase the oven temperature to 425°F and roast for another hour, until the meat is falling apart. Carefully transfer the pork to a serving platter, tent with foil, and allow to rest for 10 minutes. Serve the pork with some pickled onions on top, and chow down!
