FRENCH ONION POTATOES
This potato bake is yummy and even better the next day--if there's any leftover that is! Especially great for barbeques.

- Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13-inch baking dish with cooking spray.
- Place a layer of sliced onions on the bottom of the baking dish. Add a sprinkle of French onion soup mix and a layer of bacon pieces, followed by layers of potato slices, shredded cheese, and cream. Continue adding layers of the remaining ingredients, ending with a layer of shredded cheese on the top.
- Spray a piece of aluminum foil with cooking spray and cover the baking dish.
- Bake in the preheated oven until potatoes and onions are tender, 40 to 50 minutes. Remove foil and continue baking until nicely browned and bubbly, about 10 minutes more.

QUICK N EASY FRENCH ONION POTATOES
This can be done in the oven or the microwave. I prefer the microwave but you need to stir it every 5 minutes so the potatoes evenly cook.

Steps:
- 1. Mix all ingredients together until potatoes are covered and put into a 9 x 13 pan for the oven or a microwave safe dish for the microwave.
- 2. Oven directions: Bake at 425 for about 35 minutes or until the potatoes are soft. Microwave directions: Cook on high for 20 minutes, stirring every 5 minutes. When potatoes are soft it is done.

Steps:
- Preheat oven to 350*F.
- Wrap each potato in foil; bake about 1 hour, turning once, until tender.
- Meanwhile, in a frying pan, melt the butter over medium heat; add the onion and sugar and cook, stirring often, until golden--8-10 minutes.
- Remove pan from heat; cool for 10 minutes.
- Meanwhile, in a medium bowl, combine the sour cream with 1 Tbsp of parsely, broth granules, salt, and pepper; set aside.
- When the potatoes are baked and cool enough to handle, unwrap them and using a knife, split the skin open down long side.
- Scoop out the pulp, leaving a 1/2" thick shell.
- Add the potato pulp to the sour cream mixture; mash until smooth.
- Spoon the mixture back into the potato shells; top with additional sour cream (if using) and the onion mixture.
- Sprinkle with the remaining 1 Tbsp. parsely.

QUICK FRIED BREAKFAST POTATOES WITH ONIONS
I make these usually on a Sunday morning. I love the smell of frying onions. I do not buy the ready hash browns anymore. I do make extra to serve for another breakfast during the week.

Steps:
- 1. Wash potatoes and prick with a knife.
- 2. Microwave the potatoes for approximately 8 minutes.
- This can be done the night before. (Do not peel the potatoes).
- 3. Heat oil and butter together in skillet.
- 4. Slice the potatoes and add to the skillet and cook over medium high heat add onions, season salt, parsley after 5 minutes and continue cooking until potatoes are crispy. This takes approximately 10 minutes.
- 5 You may need to add more or less season salt depending on your potato size.

- Melt butter in a large, oven-safe skillet, over medium-high heat. Add onions and 3 tablespoons of beef broth and saute 3-4 minutes until onions are translucent. Continue to cook, stirring occasionally so the onions don't burn, for about 15 minutes longer until browned and very tender. Use tongs or a fork to transfer to a bowl and cover to keep warm.
- Drizzle the pan with oil, add the potatoes, and stir over medium heat 5-8 minutes until warmed through and crisp on the outside. Transfer to a plate and cover to keep warm.
- Return the onions to the pan. Sprinkle with flour and stir for 1 minute over medium-high heat. Add beef broth and continue to cook, stirring throughout, until mixture comes to a boil. Season with salt and pepper to taste.
