MIXED BERRY SYRUP

This delicious homemade mixed berry syrup is a fabulous topping for pancakes, waffles, French toast, crepes, or dessert. It's so easy to make and ready in 5 minutes or less!

1 cup blueberries (fresh or frozen (thaw first if using frozen))
1 cup blackberries (fresh or frozen (thaw first if using frozen))
1 cup raspberries (fresh or frozen (thaw first if using frozen))
1 cup agave syrup
2 tablespoons butter

Steps:

  • In a medium saucepan over low heat, heat syrup and butter until butter is melted.
  • Stir in berries and heat to boiling, stirring continuously. Reduce heat to medium and continue cooking and stirring for 5 minutes. The mixture will remain thin while it's hot.
  • Remove from heat. Place a heat-proof fine gauge strainer over a medium heat-proof bowl and pour hot syrup mixture into strainer. Press mixture through strainer with a heat proof spatula or spoon to remove seeds. Discard seeds and any remaining pulp.
  • Allow syrup to cool for 15-20 minutes. It will thicken as it cools. Serve with your favorite pancakes, waffles or French toast.

Quick and easy to make, this mixed berry sauce is delicious spooned over cheesecake, vanilla ice cream, pancakes, or waffles.

1 lb fresh strawberries, hulled and thinly sliced
6 oz (1 dry half pint) fresh raspberries
6 oz (1 dry half pint) fresh blueberries
6 oz (1 dry half pint) fresh blackberries
1 tablespoon fresh lemon juice, from 1 lemon
¾ cup sugar

Steps:

  • Combine all of the berries in a large bowl and stir gently to combine. Spoon about ⅔ of the mixed berries into a medium saucepan; transfer the remaining berries to a small bowl and refrigerate until ready to serve.
  • Add the lemon juice and sugar to the berries in the sauce pan. Bring to a gentle boil over medium heat and cook until the fruit is syrupy, about 5 minutes.
  • Transfer the hot berry mixture to a blender and purée until smooth. Set a fine mesh strainer over a bowl. Pour the sauce into the strainer and use the back of a soup ladle and circular motions to force the sauce through the strainer and into the bowl. Discard the seeds that remain in the strainer. Refrigerate the berry sauce until cold or ready to serve.
  • Before serving, add the reserved berries to the sauce and stir to combine. If the sauce seems too thick, add a few tablespoons of water, a little at a time, until the desired consistency is reached.
  • Freezer-Friendly Instructions: The sauce can be frozen in an airtight container for up to 3 months.

1 cup each raspberries, blueberries, and sliced strawberries
1 tablespoon granulated sugar
2 tablespoons unsalted butter, melted, plus 4 teaspoons for the dishes
3 extra-large eggs, at room temperature
1/2 cup milk
1/2 cup all-purpose flour
1 teaspoon pure vanilla extract
1 teaspoon grated orange zest
3/4 teaspoon kosher salt
Maple syrup and confectioners' sugar, for garnish

Steps:

  • Preheat the oven to 425 degrees.
  • Gently combine the berries and sugar in a small bowl and set aside while you make the pancakes. Place 4 (6- to 7-inch) individual gratin dishes on two sheet pans. Place 1 teaspoon of butter in each gratin dish and set aside.
  • Place the eggs in the bowl of an electric mixer fitted with a whisk attachment and beat on medium speed until mixed. Add the milk and combine. Slowly add the flour, vanilla, orange zest, 2 tablespoons melted butter, and the salt and mix just until smooth. Whisk by hand if the mixture is lumpy.
  • Place the gratin dishes in the oven for 3 minutes, until the butter is hot and bubbly. Make sure the butter covers the bottom of each dish. Immediately divide the batter equally among the gratin dishes and bake for 12 to 14 minutes, until puffed and lightly browned. Divide the berries among the dishes, drizzle with maple syrup, dust with confectioners' sugar, and serve hot.

500g frozen mixed summer fruits
100g caster sugar
1 tsp vanilla extract
250ml full-fat milk
2 eggs
4 tbsp sunflower oil , plus extra for frying
175g plain flour
4 tsp baking powder
1 tbsp caster sugar

Steps:

  • To make the compote, put all the ingredients into a medium saucepan with 1 tbsp water. Stir and simmer gently over a low heat for 15 mins until warm and syrupy.
  • Meanwhile, make the pancakes. Mix the milk, eggs and oil in a bowl. In another bowl, mix the flour, baking powder, sugar and 1 tsp salt. Stir the dry ingredients together, then slowly pour in the wet ingredients until just combined.
  • Heat a non-stick frying pan and add about 1 tsp oil. Pour in about 75ml of the pancake batter. When bubbles form on top, flip the pancake over and brown the other side. Keep the heat on medium so the middle cooks. Keep warm in a low oven while continuing to make pancakes with remaining batter.
  • Serve warm pancakes topped with warm or room temperature compote.
