A super easy marinade for chicken drumsticks. The chicken is crispy and juicy every time! A great recipe for any weeknight, family gathering, tailgating, etc!

⅓ cup olive oil
1 medium lemon, juiced
1 teaspoon Dijon mustard
1 Tablespoon honey (Note 1)
1 teaspoon Worcestershire Sauce
1 teaspoon paprika
1 teaspoon oregano
½ teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper
salt, to taste
10 medium chicken drumsticks, skin removed (Note 2)
cooking spray

Steps:

  • In a small bowl whisk together olive oil, lemon juice, Dijon mustard, honey, Worcestershire Sauce, paprika, oregano, garlic powder, onion powder, thyme, and black pepper. Add salt to your preference.
  • Pour the marinade into a large storage bag along with the drumsticks. Place in fridge for at least 30 minutes up to overnight.
  • Preheat oven to 425°F. Line a baking tray with aluminum foil and spray with non-stick cooking spray.
  • Remove chicken from the marinade, pat dry. Place chicken on the prepared baking sheet. Bake in center rack of oven for 20 minutes. Turn chicken and bake another 20-25 minutes. Internal temperature of chicken should be 165°F when cooked through.

These easy baked chicken drumsticks are a perfect wat to make juicy tender chicken the whole family will love. Made in a simple and flavorful marinade that doubles as a sauce for the perfect meal. They are a little bit sweet and a little bit salty.

1/3 cup yellow mustard
1/3 honey
1/3 fresh parsley leaves, diced
4 cloves garlic, minced
1 lemon, juice of
1 tsp salt
1/2 tsp pepper
10-12 chicken drumsticks, about 2 1/2 pounds

Steps:

  • Wisk together the yellow mustard, honey, fresh parsley leaves, minced garlic, lemon juice, salt, and pepper.
  • Place the chicken in a large zip lock bag. Pour marinade over chicken and remove as much air as possible from the bag. Seal the bag and massage marinade into the chicken.
  • Let chicken marinate in the fridge, 30 minutes or more, I find 2 hrs + is best.
  • Preheat the oven to 350 degrees F. Line a baking dish with high sides with foil.
  • Layout chicken drumsticks and marinade on your prepared baking dish. You don't want the chicken fully covered in the marinade, half the chicken should be out.
  • Place chicken in the oven and bake for 45 minutes. Take the chicken out and turn up the oven temp to 450 degrees F. Turn chicken so the bottom side that was in the sauce is now facing up.
  • Bake the chicken for 10-15 more minutes, until sauce is bubbling and skin is slightly golden. If you like a nice crispy char on your skin broil for an additional 3-5 minutes.
  • Remove chicken and let rest for 5 minutes. Serve the chicken and sauce with rice and veggies for a complete meal. Enjoy!

Baked Chicken Legs recipe with garlic, lemon and dijon. An easy and excellent chicken marinade with so much flavor. The longer you marinate this, the better (at least 6 hours and ideally overnight).

4 lbs 14 count Chicken Legs or drumsticks
1/4 cup olive oil ((Use light oil, not extra virgin))
4 garlic cloves (pressed or minced)
4 Tbsp fresh parsley (finely chopped)
3 Tbsp lemon juice from 1 large lemon
2 Tbsp dijon mustard
1 Tbsp salt ((we use fine sea salt))
1/2 tsp black pepper

Steps:

  • In a small bowl, combine all of the marinade ingredients and stir or whisk together until well blended .
  • Transfer chicken legs to a large mixing bowl or a large ziploc bag. Pour the marinade over the chicken and toss with your hands to evenly coat the chicken, pushing some of the marinade under the skin of each chicken leg for richer flavor. Cover with plastic wrap and marinate 6 hours or overnight, tossing chicken once while marinating.
  • Preheat oven to 400˚F and line a rimmed baking sheet with foil or a silpat. Arrange chicken skin-side-down and bring chicken to room temp while oven preheats. Brush chicken legs with any extra marinade left in the mixing bowl. Bake at 400˚F in the center of oven for 25 minutes skin-side-down then turn the chicken legs over and bake additional 25 minutes skin-side-up. For crispier skin, broil on high heat 2 to 3 minutes or until skins have browned.*

8 Chicken drumstick
0.5 tsp paprika (noble sweet)
1 Chili (finely chopped)
1 Tbsp honey
1 Tbsp white balsamic vinegar
1 shallot (finely chopped)
3 Tbsps olive oil
salt
freshly ground peppers
rosemary

Steps:

  • Rinse the chicken drumsticks under cold water and pat dry. Mix the paprika, chili, honey, balsamic vinegar and chopped shallot with the oil and season with salt and pepper. Line a baking tray with baking parchment and scatter with rosemary. Brush the chicken drumsticks on all sides with the marinade. Place on the baking tray and cook in a preheated oven (200°C, middle shelf) for about 30 minutes. Brush with a little more marinade after 10 minutes.
  • Serve with potatoes.

6 -8 bone-in skinless chicken thighs (1.5 to 2 pounds, total)
salt & fresh ground pepper
1/2 teaspoon paprika (smoked or sweet to taste)
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1/4 cup low sodium soy sauce
3 tablespoons sugar-free maple syrup
1 tablespoon Worcestershire sauce
2 tablespoons olive oil
1 tablespoon apple cider vinegar
4 garlic cloves, minced
sliced green onion (to garnish) (optional)

Steps:

  • Season chicken thighs with salt and pepper.
  • Combine paprika, thyme, basil, and rosemary in a small mixing bowl; rub the prepared seasoning around each chicken thigh.
  • Transfer chicken thighs to a 9x13 baking dish. Set aside.
  • In a small mixing bowl combine soy sauce, maple syrup, Worcestershire sauce,
  • olive oil, vinegar, and garlic; mix until thoroughly incorporated.
  • Pour marinade over chicken thighs.
  • Cover the chicken thighs and set in the fridge for 1 hour, or up to 8 hours.
  • Preheat oven to 425°F.
  • Remove chicken from fridge and let stand on the counter while oven preheats.
  • Remove the cover and bake chicken for 35 minutes, or until internal temperature

  • Turn on the broiler and continue to cook for 3 to 4 more minutes, or until golden brown on top.
  • Remove from oven and let stand 5 minutes on the counter.
