HOMEMADE SPRING ROLL WRAPPERS
This is an easy and quick recipe for making homemade spring roll wrappers. Homemade is always better.

Steps:
- Sift the flour into a mixing bowl and add salt. Mix. Add water little by little. Use more water necessary. Mix thoroughly to make a thin batter. Cover and let rest about 30 minutes.
- Next spray a non-stick pan with cooking spray or butter and heat on medium low heat. After one or two minutes turn the heat down to low and drop 1 1/2 tablespoons of the batter onto the middle of the pan. Quickly spread the batter with a spoon into a thin wrapper about 6 inches in diameter.
- Cook until the wrapper is dry and starts to shrink from the the sides of the pan. Remove the completed wrapper to a plate. Repeat this procedure until all the batter is used. Then use these to prepare your favorite spring roll recipe. Enjoy.
SPRING ROLL WRAPPERS

- Sift bread flour into a medium bowl and make a well in the center. Place egg and cold water in well. Beat with a wooden spoon until a smooth dough has formed. Use more water as necessary. Knead until elastic and pliable. Cover with plastic wrap and chill in the refrigerator 4 hours, or overnight.
- On a lightly floured surface, roll the dough into an approximately 14x14 inch square. Cut into 12 equal squares. Roll each square into a very thin 6x6 inch square. Cover with plastic wrap and refrigerate until ready to use.

QUICK HOMEMADE SPRING ROLL WRAPPERS
I wanted to make spring rolls last night & realized I was missing the main ingredient - - the wrappers! Rather than put everything back in the fridge and wait until I hit the store - -I started to experiment. This worked out great & I hope everyone else can use this in a pinch!

Steps:
- Stir together flour, cornstarch, oil, and enough water to make a thin batter.
- Lightly oil a small (6") frying pan and heat.
- Spoon 2 Tbsp of the batter into the center of the pan.
- Swirl the batter around to coat the bottom of the pan.
- Cook until the wrapper is dry and starts to shrink from the edge of the side of the pan. Do not let it change colors.
- Transfer the wrapper to a plate and cover it with a damp cloth until you have made all that you need.
- To fill: place your favorite filling slightly off center of the wrapper. Fold the sides over, then roll the wrapper up to enclose the filling. Brush around the edges with a beaten egg to seal it. Deep fry the spring roll about 4 minutes and enjoy!

OK, it's easier to go out and buy these wrappers ready made. However, I do like to make things from scratch, at least (I hope, I think, I imagine) that I know what I am eating. Besides, it's fun to experiment in the kitchen! Preparation time does not include cooling/resting time

Steps:
- Sift rice flour, flour and salt together twice.
- In a separate bowl, mix the eggs, oil and water.
- Pour this mixture into the dry ingredients to form a batter.
- Mix thoroughly to get all the lumps out.
- Cover and set aside in a cool place for an hour.
- Heat a nonstick frying pan and drizzle or spray a little cooking oil on it.
- Pour in a little batter and quickly swirl it around to make a thin pancake.
- You don't have to flip it to cook the other side and it should not brown.
- Remove it from the pan when it looks like it has set.
- Repeat until all batter is used.
- Use immediately by filling them with your choice, otherwise they keep for a day in the refridgerator.
- They freeze well, just remember to separate them with clingfilm between the wrappers.
EASY SPRING ROLLS

- Heat the oven to 200C/180C fan/gas 6. Before you get the kids cooking, put the noodles, vegetables, prawns and chicken in individual bowls for everyone to help themselves. Get everyone to wash their hands and put aprons on. Sit the kids down and give them their own mixing bowl and spoon. Let them choose which ingredients they want (noodles are essential) in their rolls and if they want to graze as they choose, that's fine - all the ingredients are cooked or can be eaten raw. Add a bit of garlic and ginger, a tiny dash of soy and sprinkling of five-spice to each bowl and let them mix everything together.
- Push the bowl aside and lay a sheet of pastry in front of each child. Ask them to spoon the filling down one side of each sheet, then give them the beaten egg and a brush so they can brush around the edges. Help them to roll the pastry up neatly by folding both sides over the filling, then rolling them up.
- Lift the spring rolls onto a baking tray, seam-side down, brush with a little more egg and sprinkle with sesame seeds, if you like. Try to remember which child made which roll to save any arguments at the end! Bake for 20-25 mins or until golden.
- While the rolls are in the oven, make the dipping sauce. Get the kids to mix all the ingredients together until the sugar has dissolved. When the spring rolls are golden and crisp, remove from the oven. Leave until cool enough to handle, cut into pieces for smaller kids, then let them eat, dipping the rolls into the sauce.
