Here's my version for a delicious Tuscan Bean Soup that's loaded with bacon, smoked sausage and lots of beans, comfort food at its finest. This is an easy to make, hearty and delicious soup. Entirely a meal on it's own, it's perfect or fall and winter weather or busy weeknights anytime of the year!

6 slices bacon (chopped)
2 tablespoon olive oil
2 medium onions (chopped)
6 ounce smoked sausage (cut into small pieces, any smoked sausage will work)
6 cloves garlic (minced)
38 ounce cannellini beans (2 cans, rinsed and drained)
4 cups chicken broth (low sodium )
1/2 cup heavy cream
1 teaspoon paprika (sweet or smoked)
1 teaspoon fresh rosemary (chopped)
1/2 teaspoon thyme (chopped)
2 bay leaves
salt and pepper ( to taste)

Steps:

  • Cook the bacon: Add the bacon to a soup pot or a large dutch oven and fry until crispy. Transfer the bacon to a paper towel lined plate.
  • Cook onion and sausage: To the same pot add the olive oil and heat over medium-high heat. Next, add the onion and the sausage to the pot and cook until the onion is translucent and the sausage is slightly browned. Add garlic and cook until fragrant, another minute.
  • Add the rest of the ingredients: Next add in the beans, broth, heavy cream, paprika, rosemary, thyme, and bay leaves, half the cooked bacon and season with salt and pepper. Stir well.
  • Cook: Bring to a boil, then reduce heat to low and simmer for another 20 minutes. If the soup is too thick add more water, or if you want it thicker add another can of beans.
  • Garnish & Serve: Garnish the soup with remaining bacon and serve.

1/2 cup kidney beans soaked overnight or 1 (14-ounce) can store-bought beans, drained and rinsed
1/2 cup cannellini beans soaked overnight or 1 (14-ounce) can store-bought beans, drained and rinsed
3 tablespoons olive oil, plus more for drizzling on bread
1/2 pound diced pancetta
2 cups diced yellow onions
1 cup diced celery
1 cup diced carrots
4 cloves garlic, sliced
Salt and freshly ground black pepper
1 (14-ounce) can diced tomatoes
1 (14-ounce) can chick peas, drained and rinsed
2 quarts chicken stock, plus extra water if needed
2 sprigs rosemary
3 sprigs thyme
1 sprig oregano
1 bay leaf
1 teaspoon red chili flakes
2 heads Lacinata kale, stems removed and cut into bite size pieces
1 loaf Italian peasant bread, cut into thick slices
Parmigiano-Reggiano, grated, for serving

Steps:

  • Place the kidney beans in a medium pot, add water to cover by 2-inches and bring to a boil. (If using canned kidney beans, skip this step.) Turn the heat down, let simmer for 45 minutes to 1 hour, or until just-tender. Use the same process for the cannellini beans.
  • In a large soup pot, heat the olive oil over medium heat. Add the pancetta, rendering the fat and cooking until slightly crispy about 3 minutes. Saute the onion, celery, carrot and garlic for 3 to 4 minutes. Season with salt and freshly ground black pepper, to taste. Add the diced tomatoes, the cooked and drained kidney beans, cannellini beans, chick peas, and the chicken stock. Using kitchen twine, tie the herbs and the bay leaf into a bundle and add to the pot. Season with the red chili flakes, salt and pepper. Cook for 15 to 20 minutes, then add the kale. Continue cooking until the beans are completely tender.
  • Preheat the oven to 350 degrees F. Drizzle olive oil over the slices of peasant bread, season with a little salt and pepper and toast in the oven. Serve the soup in large bowls with grated Parmesan and a slice of toast.

This EASY bean soup is the answer to the "What's for dinner?" dilemma. You probably have most of the ingredients in your pantry already, and turning them into a satisfying vegetarian soup is easy-peasy.

For the soup:
3 tablespoons olive oil
2 medium carrots, thickly sliced
1 large onion, coarsely chopped
1 stalk celery, coarsely chopped
1 clove garlic, finely chopped
3 sprigs fresh oregano
1/4 teaspoon salt
Black pepper, to taste
2 (15 -ounce) cans cannellini beans or other small white beans, drained and rinsed
5 cups chicken stock or vegetable stock
4 cups baby kale or baby spinach, stems removed if tough
1 tablespoon chopped fresh oregano, for garnish
Olive oil, to serve
Extra grated Parmesan, to serve
For the parmesan toasts:
1/2 baguette, thinly sliced
Olive oil
1/2 cup grated Parmesan

Steps:

  • Simmer the soup: Add the remaining beans to the pot and stir well. Stir in the chicken stock and bring to a boil. Lower the heat, partially cover with the lid placed askew, and simmer for 20 minutes, or until the carrots are tender and the liquid is flavorful. Discard the oregano sprigs; the leaves will have fallen into the soup. Add additional salt and pepper to taste.
  • While the soup simmers, make the Parmesan toasts: Toast the bread until lightly golden on both sides. While the toast is still hot from the toaster, sprinkle with olive oil and cheese. If you have a toaster oven, return them to the toaster for 1 minute to melt the cheese; otherwise, arrange the toasts in a skillet over medium heat, cover, and warm for about 1 minute or until the cheese has melted.
  • Add the greens to the soup: Add the kale or spinach to the pot and simmering for another 2 minutes, or just until the greens wilt.
  • Serve the soup: Ladle the soup into bowls, sprinkle with oregano and more olive oil, if you like. Serve with Parmesan toasts and extra Parmesan for sprinkling.

¼ cup olive oil
1 large onion, sliced
4 carrots, chopped
2 stalks celery, chopped

2 zucchini, sliced
4 (14 ounce) cans vegetable stock
1 (15 ounce) can cannellini beans
1 (14 ounce) can chopped tomatoes
1 cup chicken stock
¼ cup pesto
salt and ground black pepper to taste
1 tablespoon olive oil
1 (16 ounce) bag fresh spinach

Steps:

  • Heat 1/4 cup olive oil in a large stockpot over medium heat; saute onion, carrots, celery, and garlic until lightly browned, about 10 minutes. Add zucchini and cook until slightly softened, 3 to 4 minutes. Stir vegetable stock, cannellini beans, chopped tomatoes, chicken stock, and pesto into vegetable mixture; bring to a boil. Reduce heat to medium-low and simmer until vegetables are tender, 30 to 35 minutes. Season with salt and pepper.
  • Heat 1 tablespoon olive oil in a large skillet or frying pan over medium heat; saute spinach until wilted, about 5 minutes. Spoon sauteed spinach into each serving bowl; ladle soup over spinach.

2 ounces deli-sliced hot capicola or coppa ham, chopped
1/2 red onion, chopped
5 cloves garlic (4 minced, 1 whole)
2 carrots, halved lengthwise and thinly sliced
2 stalks celery, thinly sliced
1 15-ounce can no-salt-added cannellini beans
1 15-ounce can no-salt-added petite diced tomatoes
2 tablespoons grated parmesan cheese, plus 1 small pieceparmesan rind
Kosher salt and freshly ground pepper
4 thick slices whole-grain bread
1 small head escarole, chopped

Steps:

  • Heat 1 tablespoon olive oil in a large heavy-bottomed pot over medium-high heat. Add the capicola, red onion and minced garlic. Cook, stirring, until the onion softens, about 2 minutes. Add the carrots and celery. Cook, stirring, until slightly softened, about 5 minutes. Add the beans, tomatoes, 2 cups water, the parmesan rind, 1/2 teaspoon salt and a few grinds of pepper. Bring to a simmer, then cover and cook until the vegetables are tender, 15 to 20 minutes. Remove the parmesan rind.
  • Meanwhile, lightly toast the bread; rub both sides with the whole garlic clove and sprinkle with grated parmesan. Stir the escarole into the soup and cook, stirring occasionally, until wilted, about 5 minutes. Top each serving of soup with a piece of toast. Drizzle with the remaining 1 tablespoon olive oil.

2 scallions, thinly sliced
1 garlic clove, minced
1/2 teaspoon dried oregano
1 can (14 1/2 ounces) vegetable broth
1 can (19 ounces) white beans, rinsed and drained
1 1/2 teaspoons fresh lemon juice
Coarse salt and ground pepper
2 tablespoons freshly grated Parmesan, for serving

Steps:

  • In a medium saucepan, heat oil over medium. Add scallions, garlic, and oregano; cook, stirring frequently, until scallions begin to soften, about 3 minutes.
  • Stir in broth and beans; cook until heated through, about 4 minutes. Using a wooden spoon or potato masher, lightly mash some of the beans to thicken the soup. Stir in lemon juice; season with salt and pepper. Before serving, sprinkle with Parmesan.

As part of my pursuit of a healthier lifestyle, I am always looking for new ways to use beans. This recipe looks like it would hit the mark rather well but still taste lush. It was originally printed in the January 2008 copy of the BBC Good Food Magazine. The recipe says it can be frozen.

2 tablespoons olive oil, plus extra
olive oil, to serve
1 stick celery, chopped
1 onion, chopped
1 large carrot, chopped
1 1/4 pints vegetable stock
1 (15 ounce) can cannellini beans, drained
1 (15 ounce) can borlotti beans, drained
1 sprig fresh rosemary
1 sprig fresh thyme
1 bay leaf
5 ounces cooked ham, shredded
8 slices bacon, cooked crispy

Steps:

  • Heat the oil in a large pan, then add the chopped vegetables and some salt and pepper. Cook very gently for 10 minutes until softened but not colored.
  • Add the stock, beans, rosemary, thyme and bay leaf. Bring to the boil, then simmer for 10 minutes.
  • Lift out the herbs, then using a stick blender, whizz to a roughly chunky but creamy soup.
  • Stir in the ham and bring to a simmer.
  • Serve garnished with a few crisp slices of bacon and a swirl of olive oil.
