Spicy Vegetable Lo Mein image

Skip takeout and make a healthier Chinese lo mein at home that's packed with vegetables. Make sure you drain your noodles well before adding them, as wet noodles will turn your stir-fry into a soggy mess. For a less spicy option, omit the sriracha hot sauce.

8 ounces lo mein noodles, linguine or spaghetti
1 teaspoon toasted sesame oil
12 ounces Chinese broccoli (see Tips) or broccolini
2 tablespoons reduced-sodium soy sauce
1 tablespoon Shao Hsing rice wine (see Tips) or dry sherry
1 tablespoon sriracha or other Asian hot sauce
2 tablespoons peanut oil, divided
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
6 ounces fresh shiitake mushrooms, stems removed and caps thinly sliced
Pinch of salt

Steps:

  • Bring 2 quarts of water to a boil in a large pot. Add noodles and cook according to package directions. Drain and rinse with cold water. Shake well to remove excess water. Transfer the noodles to a cutting board and roughly cut into thirds. Return the noodles to the pot and toss with sesame oil. Set aside.
  • Trim 1/4 inch off broccoli (or broccolini) stalks. If the stalks are thicker than 1/2 inch, cut in half lengthwise. Keeping them separate, cut stalks and leaves into 2-inch-long pieces. Combine soy sauce, rice wine (or sherry) and hot sauce in a small bowl.
  • Heat a 14-inch flat-bottomed wok or large heavy skillet (not nonstick) over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in 1 tablespoon peanut oil, add ginger and garlic and stir-fry until fragrant, about 10 seconds. Add mushrooms and the broccoli (or broccolini) stalks and stir-fry until all the oil is absorbed, about 30 seconds. Swirl in the remaining 1 tablespoon oil and add the noodles and broccoli leaves; stir-fry until just combined, about 15 seconds. Stir the soy sauce mixture and swirl it in. Sprinkle with salt and stir-fry until the noodles are heated through, 1 to 2 minutes.

Kosher salt
1 14-ounce package extra-firm tofu, drained and cut into 1-inch pieces
Freshly ground pepper
3 tablespoons vegetable oil
8 ounces thin whole wheat spaghetti
3 tablespoons low-sodium soy sauce
2 tablespoons oyster sauce or vegetarian oyster sauce
1 12-ounce bag broccoli florets
1 red bell pepper, cut into thin strips
1 carrot, halved crosswise and cut into thin strips
1 red jalapeno pepper, sliced (remove seeds for less heat)
2 tablespoons finely chopped peeled fresh ginger
1 teaspoon toasted sesame oil

Steps:

  • Bring a medium saucepan of salted water to a boil. Pat the tofu dry between 2 layers of paper towels; season with salt and pepper. Heat 2 tablespoons vegetable oil in a large nonstick skillet over medium heat. Add the tofu and cook, turning once, until well browned and slightly crisp, about 15 minutes; transfer to a plate.
  • Meanwhile, cook the pasta in the boiling water, 1 to 2 minutes less than the label directs for al dente. Reserve 1 cup cooking water, then drain. Mix the soy sauce, oyster sauce and 1/2 cup of the cooking water in a small bowl.
  • Add the remaining 1 tablespoon vegetable oil to the skillet. Increase the heat to high and add the broccoli. Cook, stirring, until crisp-tender, about 5 minutes. Add the bell pepper, carrot, jalapeno and ginger and cook until just softened, 2 more minutes. Add the noodles, tofu and soy sauce mixture and cook, tossing, until most of the sauce is absorbed, about 2 minutes. Stir in enough of the remaining 1/2 cup cooking water to loosen. Drizzle with the sesame oil, season with salt and toss.

The easiest lo mein you will ever make in 15 minutes from start to finish. It is so much quicker, tastier and healthier than take-out!

8 ounces lo mein egg noodles*
1 tablespoon olive oil
2 cloves garlic, minced
2 cups cremini mushrooms, sliced
1 red bell pepper, julienned
1 carrot, julienned
1/2 cup snow peas
3 cups baby spinach
2 tablespoons reduced sodium soy sauce, or more, to taste
2 teaspoons sugar
1 teaspoon sesame oil
1/2 teaspoon ground ginger
1/2 teaspoon Sriracha, or more, to taste

Steps:

  • In a small bowl, whisk together soy sauce, sugar, sesame oil, ginger and Sriracha; set aside. In a large pot of boiling water, cook noodles according to package instructions; drain well. Heat olive oil in a large skillet or wok over medium high heat. Add garlic, mushrooms, bell pepper and carrot. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in snow peas and spinach until the spinach has wilted, about 2-3 minutes. Stir in egg noodles and soy sauce mixture, and gently toss to combine. Serve immediately.

Quick & Easy Spicy Chicken Lo Mein image

1 TBSP olive oil
1 lb boneless (skinless chicken breasts, chopped into ½ inch pieces)
½ large onion of your choice (diced)
1 bottle (11.8 oz Sweet Chili Sauce)
10 oz bag matchstick carrots
12 oz box of thin spaghetti noodles
2 green onion (diced)

Steps:

  • Step OneBoil water and cook the thin spaghetti noodles according to the package directions.
  • Once done cooking, drain, and set the noodles aside.
  • Step TwoWhile the pasta is cooking, heat the olive oil over high heat in a large skillet and sauté the chicken and onion for about 5 minutes. The chicken should be seared on all sides and the onions should be softened by this point.
  • Step ThreeNext, add the matchstick carrots.
  • Pour the Sweet Chili Sauce over the chicken and veggie mixture and stir to coat.
  • Let everything simmer over medium heat for another 7-10 minutes, until the chicken is completely cooked.
  • Step FourStir the cooked noodles into the chicken mixture.

Quick Shrimp Lo Mein image

Lo Mein is a Cantonese dish meaning "stirred noodle". Traditionally Lo Mein is a variation of wonton noodles where all the components including the noodles are served separately. Lo Mein in Mandarin is known as "Ban Mein" i.e. mixed sauce noodle and not necessarily stir fried together, just tossed together. This makes for a simple satisfying supper great as a family sharing plate with other dishes. Don't be phased by what seems like a long list of ingredients - pre-cook the noodles, combine the ingredients for the sauce. Stir-fry the main ingredients and toss the noodles and ingredients in the sauce. To ensure the shrimp does not get overcooked, ensure the ingredients are added in quick succession in the wok and that all the ingredients are pre-chopped.

1 1/4 cups vegetable stock
3 tablespoons cornstarch
3 tablespoons low-sodium light soy sauce
One 12-ounce nest thin egg noodles (makes 1 pound cooked)

1 tablespoon freshly grated ginger
4 large dried or fresh shitake mushrooms, washed, presoaked in warm water for 20 minutes if dried, sliced

7 ounces choi sum, leaves and stalks cut into 2-inch pieces, or broccoli florets
1 tablespoon Shaosing rice wine
2 tablespoon toasted sesame oil
1 tablespoon dark soy sauce
1 large pinch ground white pepper

Steps:

  • For the sauce: Mix together the stock, 3/4 cup water, the cornstarch and soy sauce. Stir well and set aside. For the noodles: Bring a pot of water to a boil, and then add the noodles and cook until al dente, 3 minutes. Drain under cold running water. Add the sesame oil to prevent the noodles from sticking together.
  • Heat a wok over high heat and add the peanut oil. Add the ginger, mushrooms and garlic and toss together for a few seconds. Then add the shrimp and cook, stirring, for less than 1 minute. Add the choi sum leaves and toss together for 1 minute. As the shrimp starts to turn pink, add the Shaosing rice wine.
  • Pour in the sauce and bring to a boil; this will take 1 to 2 minutes. Quickly add the cooked egg noodles and season with the sesame oil and dark soy. Stir together well for 1 minute, making sure all the noodles are coated in the sauce. Season the ground white pepper and transfer to a serving bowl. Serve immediately.

Stir in chicken and sauce; heat through. Drain linguine; toss with chicken mixture. Top with green onions, if desired.

I made this one night when I wanted something quick and easy. I was just going to make Chow Mein from the can but I find that stuff kind of tasteless so I had to fix it up a bit. This is what I ended up with and it was pretty good. I served it with a side of ginger pears.

1 (12 ounce) package lo mein noodles (or other noodles)
2 tablespoons sesame oil
1 tablespoon garlic, minced
1/2 teaspoon red pepper flakes
1 tablespoon lemon juice
2 tablespoons low sodium soy sauce
1 (28 ounce) package canned chow mein (chicken or beef)
1 (10 ounce) can chicken, drained (or shrimp)

Steps:

  • open the veggie part of the chow mein and set to drain.
  • Put water for noodles on and prepare according to package directions.
  • While water for noodles is coming to a boil, in small skillet saute garlic and red pepper flakes in oil. Be careful not to burn the oil. When garlic is tender add lemon juice and soy sauce. Heat through.
  • While noodles are cooking, combine the drained chinese veggies with the can of chicken and the gravy/chicken part of the chow mein. Heat through.
  • Drain noodles, rinse with hot water, put noodles back in noodle pan and toss with garlic oil mixture.
  • Serve the veggie/chicken mixture over the noodles.
