Quick & Easy 5-Minute Kohlrabi Coleslaw image

The sputnik of the vegetable kingdom is the star of this crunchy, refreshing coleslaw recipe.

3 tbsp mayonnaise
1 tbsp Scottish rapeseed oil
1 tbsp apple cider vinegar
1 tsp wholegrain mustard
1 tsp caster sugar
0.5 tsp celery seed
1 pinch Shetland sea salt
freshly ground black pepper (to taste)
1 medium kohlrabi (peeled)
1 medium carrot (peeled)
100 grams green cabbage
25 grams raisins ((optional))
1 celery stick (thinly sliced)

Steps:

  • Mix the mayonnaise, rapeseed oil, apple cider vinegar, mustard, sugar, salt, pepper and celery seed in a small bowl and whisk until combined.
  • Using a mandolin slicer or food processor, julienne the peeled kohlrabi and carrot and add to the bowl with the dressing.
  • Finely shred the cabbage and add to the bowl along with the raisins and celery. Stir well to coat.
  • Will keep for a day, covered, in the fridge.

I came up with this recipe when my husband decided to grow our own kohlrabi and I had never had it before. This makes a different but tasty slaw that will go well with most everything.

¾ cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon lemon juice
1 tablespoon prepared mustard
1 teaspoon white sugar
4 kohlrabi bulbs, peeled and grated
4 apples - peeled, cored, and diced
salt and ground black pepper to taste

Steps:

  • Whisk mayonnaise, vinegar, lemon juice, mustard, and sugar together in a bowl.
  • Toss kohlrabi and apples together in a large bowl; pour mayonnaise mixture over kohlrabi mixture and toss to coat. Season with salt and pepper.

KOHLRABI-BLUE CHEESE SLAW

1/4 small red onion, thinly sliced
1 green apple
Juice of 1 lemon
1/2 cup pecan halves
3 medium kohlrabies (about 2 pounds), peeled and cut into matchsticks
Kosher salt and freshly ground pepper
1 cup blue cheese dressing (see directions)
1 teaspoon sugar
1 cup shredded carrots (about 3 carrots)
1/2 cup fresh parsley, roughly chopped

Steps:

  • Soak the red onion in cold water, 10 minutes. Meanwhile, cut the apple into matchsticks and toss with the lemon juice; set aside.
  • Toast the pecans in a medium dry skillet over medium heat, stirring occasionally, about 5 minutes. Transfer to a cutting board and let cool slightly, then roughly chop.
  • Toss the kohlrabies, 1 teaspoon salt and a few grinds of pepper in a large bowl. Combine the dressing and sugar in a small bowl. Drain the onion, squeezing out any excess water, then add to the kohlrabies along with the apple, carrots, parsley and toasted pecans. Add the dressing mixture and toss to combine; season with salt and pepper. Let sit 1 hour before serving.
  • Puree 1/2 cup each crumbled blue cheese and sour cream, 1/3 cup buttermilk, 1 small garlic clove (smashed) and 1 tablespoon white wine vinegar in a blender. Transfer to a bowl and stir in 1/4 cup more blue cheese, 2 to 3 dashes Worcestershire sauce and/or hot sauce, and 1 tablespoon chopped parsley. Season with salt and pepper. (Makes about 2 cups.)

4 kohlrabi bulbs, peeled and grated
2 stalks celery, sliced thin
2 carrots, sliced thin
2 tablespoons minced fresh onion
⅓ cup white sugar
½ teaspoon salt

⅛ teaspoon celery seed
½ cup mayonnaise
4 ½ teaspoons apple cider vinegar

Steps:

  • Toss the cabbage, kohlrabi, celery, carrot, and onion together in a large bowl.

2 small kohlrabi
1 cup radish
1 tablespoon white wine vinegar
1 teaspoon sugar
2 tablespoons fresh parsley, chopped
2 tablespoons olive oil

Steps:

  • Peel two small kohlrabi.
  • Shred the kohlrabi and radishes. You may use a food processor for this. I hand grate using a cheese grater.
  • Mix 1 Tablespoon vinegar, 1 teaspoon sugar, and 2 tablespoons fresh chopped parsley in a glass bowl. Whisk in 2 Tablespoons olive oil.
  • Add shredded veggies and toss.
  • Chill for 30 minutes or more.

This coleslaw is quick, easy, and tangy. I created it myself while trying to cut down on purchased or processed foods. Prep time includes shredding the cabbage and carrots, which can be reduced if you purchase them already shredded. It makes only about 1-2 cups once it is mixed up, as the vegetables are compacted.
