Polenta is a delicious, easy-to-prepare corn dish, similar to grits. I love it for its quick prep time and creamy goodness. Try this quick and cheesy polenta recipe for a great dinner.

3 cup chicken stock
1 cup milk
1/2 tsp salt
1 cup polenta
1/4 cup butter (cut into cubes)
3 oz Parmesan cheese (shredded) ((3/4 cup) can also use Asiago or Romano)

Steps:

  • In a medium saucepan over medium-high heat, whisk together the broth, milk, and salt. Bring to a low boil.
  • Stir in the polenta and reduce the heat to simmer. Cook, stirring, for 15 to 20 minutes, until the mixture is thick and creamy. Add more water if necessary to prevent sticking.
  • Stir in the butter and add the cheese in small amounts, stirring to incorporate well. Season to taste with pepper and serve.

Number Of Ingredients 8

9 cups water
1 tablespoon salt, plus extra for seasoning
2 1/2 cups yellow cornmeal or polenta
1 1/2 cups freshly grated Parmesan
1 1/2 cups whole milk, at room temperature
10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature, cut into 1/2-inch pieces
1/3 cup chopped fresh flat-leaf parsley
Freshly ground black pepper

Steps:

  • Bring the water to a boil in a large, heavy pot. Add the salt. Gradually whisk in the cornmeal. Reduce the heat to low and cook, stirring often, until the mixture thickens and the cornmeal is tender, 15 to 20 minutes. Remove the pot from the heat. Add the cheese, milk, butter, and parsley. Stir until the butter and cheese have melted. Season with salt and pepper, to taste. Transfer the polenta to a bowl and serve.

1/4 cup olive oil
6 tablespoons unsalted butter
1 clove garlic, chopped finely
2 cups vegetable stock
2 cups half and half
1/2 teaspoon crushed red pepper flakes
3/4 cup yellow cornmeal
Salt and pepper to taste
1/2 cup grated Parmesan
1/2 cup grated mozzarella

Steps:

  • In a large saucepan heat oil and butter. Add garlic and saute just until golden. Add stock, half and half and red pepper. Bring to a boil. Add cornmeal slowly, stirring continuously. Reduce heat and bring to a gentle simmer. Let simmer for about 20 minutes while stirring regularly. Mixture will become creamy and thick.
  • Remove from heat and add salt and pepper to taste. Stir in cheeses and serve immediately

Cook 20 minutes, until creamy, lifting the lid and stirring every 3 or 4 minutes to prevent sticking. Remove pot from stove, stir in pepper and butter. Gradually stir in cheese. Serve.

1/4 lb sharp white cheddar cheese, shredded
1/4 cup grated parmesan cheese
1 tablespoon chopped herbs (optional)

Steps:

  • In a pot, combine milk, broth, salt and cornmeal. Place over medium-high heat and whisk constantly until liquid is boiling. Reduce heat to low, cover and cook 20 minutes until creamy, stirring every 3-4 minutes to prevent sticking and burning.
