CHORIZO QUICHE
I had a pie crust to use and some black beans, so came up with this recipe. Be sure to use the Mexican style fresh chorizo, not the Spanish smoked & cured variety.

Steps:
- Preheat oven to 350°F Roll out pie crust and place in pie plate; set aside.
- Heat a skillet over medium-high and saute chorizo, breaking into smaller chunks, for 4-5 minutes or until mostly cooked through. Add onion and cook until onion is soft and chorizo is cooked all the way through. Stir in beans.
- Place cheese in crust then add onion, chorizo & bean mixture.
- Beat eggs and milk together until slightly foamy then add salt and pepper. Pour into pie shell.
- Bake until brown and puffed, about 50 minutes. Remove from oven and cool on wire rack for 15 minutes before cutting and serving.

QUICK CHORIZO
This is quick recipe for Chorizo. I usually make this for Chorizo and eggs on weekends. Although it is so easy you could make it any day of the week.

Steps:
- Dice the onion small to fine.
- In a large skillet or cast iron skillet. Sweat the onion with 1 tablespoon of oil on med heat for 4-5 minutes.
- Add the garlic and sweat for 1 minute.
- Add the pork sausage, increase the heat to med/high and cook until done. While cooking use the back of spoon to crumble the sausage into small bits.
- Decrease the heat to med/low and add the spices (paprika, salt, pepper, garlic, onion, chili, and cumin powders). Stir until well incorporated. cook for an additional 1-2 minutes.
- Add the red wine vinegar and stir well. Cook for another 2-3 minutes.
