QUICK TURKEY CHILI

- Heat the vegetable oil in a large pot over medium-high heat. Add the tomato paste, chili powder and cumin and cook, stirring, until the mixture darkens, about 1 minute. Add 1/2 cup water, the bell pepper, scallion whites and 1 teaspoon salt. Cook, stirring, until the bell pepper is crisp-tender, about 4 minutes. Add the turkey and cook, breaking up the meat with a wooden spoon, until cooked through, about 4 minutes.
- Stir the tomatoes, chicken broth, beans and crushed tortilla chips into the pot; bring to a simmer. Partially cover and cook, stirring occasionally, until thickened, 10 to 12 minutes. Stir in all but a few tablespoons of the scallion greens and season with salt. Top with more crushed tortilla chips, sour cream, cheddar and the remaining scallion greens.

HEALTHY FLAVORFUL TURKEY CHILI
This healthy turkey chili will blow you away! It's great to bring to pot-lucks and also great to satisfy your family! I've been making it for years and when fall and winter come around I get constant requests. When feeding a large party I will sometimes add macaroni or shell pasta and some cheese. I keep some in my fridge to have for lunch, dinner and a late night snack. It's a bit addictive! Adding cinnamon really rounds out the flavor and makes is a bit different from other recipes. If you are weak with spices, you may adjust accordingly.

- Combine turkey, bell pepper, onion, oil, and garlic. You should always season as you go, so add a little salt and pepper, the crushed red pepper flakes, and paprika.
- Cook over med-high heat till turkey is browned.
- Add the diced tomatoes and beans along with the remaining ingredients.
- Allow 45 min to 2 hours to simmer.
- If desired, top with cheddar cheese and light sour cream. Serve with either cornbread or with buttered crakers.

- Place oil in a large pot and place over medium high heat. Add in onion, garlic and red pepper and saute for 5-7 minutes, stirring frequently. Next add in ground turkey and break up the meat; cooking until no longer pink. Next add in chili powder, cumin, oregano, cayenne pepper and salt; stir for about 20 seconds.
- Next add in tomatoes, chicken broth, kidney beans and corn. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens and flavors come together. Taste and adjust seasonings and salt as necessary. Garnish with anything you'd like.
- Makes 6 servings, about 1 1/2 cups each.
- Typically, McCormick's Chili Powder is used in this recipe, which is very mild. If you're using something else, I would start with 2-3 tablespoons instead of 4.
- To make this recipe in the slow cooker: Reduce the chicken broth to 1/2 cup and brown the turkey and onions before adding to the slow cooker. This is an awesome tailgating or football party recipe!

HEALTHY DELICIOUS TURKEY CHILI
This is the perfect go-to recipe if you're looking for something healthy, qulick and filling. The turkey is a learner substitution for ground beef and the fact that there is very little added salt makes it a hearth healthier option. Steps:
- Add olive oil to bottom of a large cooking pot and turn heat on medium-low.
- Add garlic to pot and cook until it starts to brown, stirring frequently (about 2 minutes).
- Add onions and cook on medium-low until golden and translucent (about 5 minutes).
- Add ground turkey and cook, stirring frequently, until cooked through.
- Combine seasonings in a small bowl, then pour over cooked turkey meat in pot, and stir.
- Pour in 2 cans of crushed tomatoes (be careful, it will splash slightly).
- Stir in light brown sugar, kidney beans, and chopped peppers.
- Simmer on medium-low heat for 30 minutes with cover on, slightly vented to allow steam to escape.
- Serve with your choice of sides!
SUPER HEALTHY TURKEY CHILI
This recipe was given to me by a friend's mom from Colombia. I've tweaked it a bit and everyone seems to love it. It's got a kick to it and is great with shredded cheese and sour cream on top. You can even serve it on nachos. Enjoy!

- Add the rest of the ingredients and mix until everything is equally distributed. Cover and cook on medium to high heat until onions & peppers are soft, mixing often.
