1 fully cooked rump half, bone-in ham (6 lb)
1 can (16 oz) jellied cranberry sauce
1/3 cup apple juice
1/4 cup port wine or apple juice
2 tablespoons lemon juice
1 tablespoon Dijon mustard
2 teaspoons sugar
2 teaspoons grated lemon peel
2 teaspoons grated orange peel
1/4 teaspoon white pepper
1/4 teaspoon ground ginger

Steps:

  • Heat oven to 325°F. Place ham on rack in shallow roasting pan. Add 1/4 to 1/2 inch water to pan. Cover pan.
  • Bake 45 minutes. Uncover pan; bake 45 minutes to 1 hour 15 minutes longer or until meat thermometer inserted in center, but not touching bone, registers 140°F.
  • To make sauce, in small saucepan, mix all remaining ingredients with wire whisk until well blended. Cook over medium heat 10 minutes or until cranberry sauce is melted and mixture is thoroughly heated, stirring frequently. Cut ham into slices. Serve with sauce.

This makes a wonderful quick meal that takes only minutes to put together, the sauce amounts listed is enough for 2-3 ham slices, you may double or triple for more slices --- I have even made this using grape jelly in place of the cranberry sauce, if desired you may brown the ham slices on both sides before adding to the sauce, this is *very* good! :)

1 (14 ounce) can whole cranberry sauce (can use jellied cranberry sauce but the whole is better)
1 -2 green onion, chopped
2 -3 tablespoons water
1 tablespoon Dijon mustard
2 teaspoons brown sugar
1/4 teaspoon ground ginger
1/2 teaspoon ground black pepper
2 slices cooked ham (can use more)

Steps:

  • In a skillet melt the butter over medium heat.
  • Add in whole cranberry sauce, green onions, water, mustard, brown sugar, ginger and black pepper; bring to a boil, mixing constantly then simmer about 3 minutes.
  • Adjust the ginger, brown sugar and pepper to taste if desired.
  • Add in the ham slices and cook for 3-4 minutes.

2/3 cup brown sweetener
1/4 cup apple cider
1/2 teaspoon cinnamon
fully cooked spiral sliced ham

Steps:

  • Preheat oven to 350 degrees F. Add cranberry sauce, brown sweetener, apple cider & cinnamon to a small saucepan. Heat over low heat, stirring until the sugar is dissolved. Add spiral sliced ham in a baking pan or casserole dish. Spoon 1/2 cup cranberry glaze over the ham. Bake for 45 minutes. Remove from oven and glaze again. Continue baking until the internal temperature of the ham reaches 140 degrees. This will take about 10-15 minutes per pound of fully cooked ham. Serve any leftover cranberry glaze overtop ham slices.

  • Drain all fruit; RESERVE all liquid.

1 cup pineapple juice, unsweetened
1/4 cup brown sugar, firmly packed (plus 1 tbsp!!)
1 tablespoon dry mustard
2 tablespoons lemon juice
1 teaspoon onion salt
2 teaspoons soy sauce
2 1/2 inches thick slices smoked ham
4 slices fresh pineapple

Steps:

  • Combine the pineapple juice, brown sugar (don't forget the extra tablespoonful!), mustard, lemon juice, onion salt, and soy sauce in a medium saucepan, stirring well. Bring to a boil, reduce heat. Simmer, uncovered for 5 minutes; stir frequently. Remove sauce from heat, and set aside.
