3 bacon strips, diced
1 small onion, chopped
1 garlic clove, minced
3 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon pepper
3 cups chicken broth
2 large potatoes, baked, peeled and cubed (about 2 cups)
1 cup half-and-half cream
1/2 teaspoon hot pepper sauce
Shredded cheddar cheese
Minced fresh parsley

Steps:

  • In a large saucepan, cook bacon until crisp. Drain, reserving 1 tablespoon drippings. Set bacon aside. Saute onion and garlic in the drippings until tender. Stir in flour, salt, basil and pepper. Gradually add broth. Bring to boil; boil and stir for 2 minutes. Add the potatoes, cream and hot pepper sauce; heat through but do not boil. Garnish with bacon, cheese and parsley.

1 (32 ounce) container Simply Potatoes Traditional Mashed Potatoes or 1 (32 ounce) container garlic mashed potatoes
8 cups whole milk
3 cups shredded cheddar cheese
8 -12 slices bacon (cooked, diced)
1 small mayan sweet onion (chopped)

Steps:

  • Start by heating the potato's half way in the microwave.
  • Bring 2 cups of milk to a low boil. add chopped onions.
  • Add potato's to heated milk/onions, stir until blended well.
  • Slowly add rest of milk 1 cup at a time, blending well until reaching desired consistency.
  • Add 2 cups of cheese slowly, mixing well to prevent clumping. (use rest for garnish).
  • Add half of bacon to soup mix well, (use rest for garnish).
  • Served immediately, with crusty Italian or bread of your choice :).

1 1/2 cups pepper gravy mix (about 3 envelopes)
1 cup water
1 lb frozen hash browns
6 cups chicken broth
2 cups frozen broccoli, chopped
1 1/2 cups shredded cheddar cheese
1 cup bacon, cooked and crumbled

Steps:

  • Mix pepper gravy mix and water in a small bowl and set aside.
  • In a large saucepan, mix hash browns, broth and broccoli.
  • Bring to a full boil and boil for 10 minutes.
  • Mix in gravy mixture, stir until combined.
  • Add cheese and bacon.
  • Remove from heat. Serve.
  • After boiling, you can place in a crock pot to keep warm all day. If gets too thick, dilute with milk.

1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 cup milk
3 slices OSCAR MAYER Bacon, cooked, crumbled and divided
1 cup KRAFT Shredded Cheddar Cheese, divided
1 green onion sliced, divided
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Microwave potatoes in large microwaveable bowl on HIGH 5 min., stirring after 2-1/2 min. Stir in broth and milk. Microwave 10 min., stirring after 5 min. Carefully smash potatoes with potato masher.
  • Reserve 2 Tbsp. each bacon and cheese, and 1 Tbsp. onions for topping. Stir remaining bacon, cheese and onions into soup.
  • Serve topped with sour cream and reserved ingredients.

2 cups chicken broth
1/4 cup sour cream
1/2 cup shredded cheddar cheese

1 (32 ounce) package Simply Potatoes Steakhouse Seasoned Diced Potatoes
1 (24 ounce) package Simply Potatoes Garlic Mashed Potatoes (or your choice of favor)
1 small diced onion
1 (12 ounce) package bacon (your choice of type, pork, turkey, etc.)
6 cups milk
4 tablespoons butter or 4 tablespoons olive oil
salt and pepper

Steps:

  • To make soup, in a large stock pot place 2 tablespoon of butter or olive oil, diced onions, and bacon. Sauté until the onions begin to brown and the bacon starts to crisp up. Once the onion are light brown and the bacon crisp add the milk. Bring milk up to a slight simmer, add mashed potatoes until you get the soup as thick or as thin as you would like. In the meantime, heat oven to 425 degrees, use the remaining butter or olive oil toss the diced potatoes and place on a cookie sheet. Roast until they begin to brown slightly. Remove and allow to cool. Once you have it at the right consistency to the soup, add the roasted diced potatoes and heat through.
  • Serve in bowls and top with your favorite baked potato toppings. Garnish top soup with sour cream, cheddar cheese, diced chives, or whatever you would put on your baked potato.
  • Enjoy!

1 (16 ounce) bag ore-ida steam n' mash garlic seasoned potatoes (24 ounces)
2 cups broccoli florets, frozen
1 (12 -16 ounce) jar classico creamy alfredo sauce
2 cups milk
1/4 lb bacon (optional)
1 cup cheddar cheese
1/4 cup green onion, chopped

Steps:

  • Prepare potatoes in the microwave, as directed on package.
  • While potatoes are cooking, cut bacon into small strips, chop green onions and shred cheddar cheese.
  • Fry bacon in a saucepan over medium-high heat, set aside.

Cook, stirring regularly, until potatoes are tender, about 15-20 minutes. **Stir regularly to avoid the potatoes sticking to the bottom of the pan. Lower the heat a bit under the pot if it seems to be boiling too vigorously.
  • Once potatoes are tender, still in sour cream and cook another couple of minutes to warm through. Taste soup and add additional salt as needed. If your soup tastes a bit bland, it needs salt! A little freshly ground pepper is nice, as well. (If you soup is a bit too thick for your liking, or to stretch it a little bit further, thin with. bit more broth or milk).
