Black Pepper Crusted Filet Mignon with Goat Cheese and Roasted Red Pepper-Ancho Salsa image

2 ancho chiles
3 cloves garlic, coarsely chopped
2 tablespoons pine nuts
2 teaspoons honey
2 grilled red bell peppers, cut into 1/4-inch thick strips
3 tablespoons red wine vinegar
3 tablespoons chopped fresh cilantro leaves
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 filet mignon, 8 ounces each
1 tablespoon canola oil
1 teaspoon kosher salt
4 teaspoons coarsely ground black pepper
8 ounces fresh goat cheese, cut into 4 slices
Cilantro leaves, for garnish

Steps:

  • Place the ancho chiles in a medium bowl, cover with boiling water and let sit at room temperature for 1 hour.
  • Remove the chiles from the soaking liquid, stem and coarsely chop, and combine in a blender with the garlic, pine nuts, honey and 1/4 cup of the soaking liquid. Blend until smooth.
  • Pour the mixture into a medium bowl and stir in the bell pepper strips, vinegar, cilantro, salt and pepper. Cover and let sit at room temperature for at least 30 minutes and up to 4 hours before serving.
  • Black Pepper Crusted Filet Mignon with Goat Cheese:
  • Heat your grill to high.
  • Brush the filets with the oil and season both sides of each filet with the salt and 1 side of each filet with the black pepper. Place the steaks on the grill, pepper side down and grill until lightly charred and crusty, 2 to 3 minutes. Turn the steaks over, and grill for 2 to 3 minutes longer for medium-rare.
  • Turn the steaks, once more so that the pepper side is facing up and top each filet with a slice of the cheese. Close the cover and grill until the cheese begins to melt slightly, about 1 minute.
  • Remove the steaks from the grill, let rest for 5 minutes. Top each filet with the roasted red pepper-ancho salsa. Garnish with cilantro leaves, before serving.

Pepper jelly straight out of the jar will be too thick to spread evenly, so give it a good stir to help to loosen it. You can prepare the goat cheese mixture one day in advance; place it in a baking dish and store in the refrigerator. When you're ready to serve, let the dish sit at room temperature for 20 minutes, then proceed with the recipe as directed. You can serve this cheesy spread with any crudité and bread.

  • Preheat oven to 350°F. Combine cream cheese, goat cheese, salt, black pepper, and garlic in a food processor. Process until smooth, about 1 minute, stopping to scrape down sides as needed. Transfer mixture to a medium bowl, and stir in 1/4 cup chives.
  • Spoon mixture evenly into a shallow 1 1/2-quart baking dish. Bake in preheated oven until heated through, 15 to 18 minutes. Place pepper jelly in a medium bowl, and whisk vigorously to loosen. 2 pints cherry tomatoes
3 cloves garlic, sliced
1 shallot, sliced thin
2 tablespoons oregano leaves
1 teaspoon crushed red pepper flakes
3 tablespoons olive oil
8 ounces goat cheese
8 ounces campanelle (or other shaped) pasta
2 tablespoons pesto
6 to 8 basil leaves, torn, for garnish

Steps:

  • Preheat the oven to 425°F. Bring a large pot of salted water to a boil.
  • Add the tomatoes, garlic, shallot, oregano and red pepper flakes to a 9 x 13 baking dish. Add 2 tablespoons of the olive oil and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss to combine. Nestle the goat cheese in the dish among the other ingredients and drizzle with the last tablespoon of olive oil. Bake until the tomatoes have blistered and the goat cheese has melted slightly, 22 to 25 minutes.
  • While the tomatoes and goat cheese bake, cook the pasta according to the package instructions. Drain, reserving 1/2 cup of pasta water, and set aside.
  • Remove the tomatoes and goat cheese from the oven. Add the pesto and begin tossing everything together, breaking up the goat cheese as you go and adding a little pasta water, until you have a creamy consistency. Add the cooked pasta and toss to coat. Serve hot garnished with the fresh basil.

1 tablespoon ground cumin
2 tablespoons kosher salt
2 tablespoons coarsely ground black pepper
4 (3/4-inch thick) slices goat cheese
Red Chile Sauce, recipe follows
Chopped cilantro, for garnish
2 tablespoons canola oil
1 large red onion, coarsely chopped
3 cloves garlic, coarsely chopped
2 New Mexican red chiles, lightly toasted
2 quajillo chiles, lightly toasted
1 ancho chile, lightly toasted
6 to 8 cups homemade chicken stock
1/4 cup creme fraiche
2 tablespoons maple syrup
Salt and freshly ground pepper

Steps:

  • Preheat the grill to high. Remove the steaks from the refrigerator and let stand at room temperature for 20 minutes before grilling. Meanwhile, combine the cumin, salt, and pepper in a small bowl. Liberally season both sides of each filet with the spice mixture. Grill the filets for about 3 to 4 minutes on each side for medium doneness.
  • Meanwhile, preheat the broiler. Remove the steaks from the grill onto a baking sheet, and top each with a slice of the cheese. Place under the broiler until cheese is golden brown and soft. Alternatively, use a blow torch or kitchen torch to brown the cheese. Ladle the sauce onto each plate, place the steak in the center, and garnish with chopped cilantro.
  • Heat the oil in a medium saucepan over medium-high heat. Add the onions and garlic, and cook until soft. Add the chiles and stock, and bring to a simmer for 20 to 25 minutes, or until the chiles are soft. Transfer the mixture to a food processor and process until smooth.
  • Strain the mixture into a saute pan that has been set on high heat for a few minutes, and cook the sauce until slightly thick. Remove from the heat and stir in the creme fraiche and maple syrup. Season with salt and pepper, to taste.

1 teaspoon olive oil, plus 1 tablespoon, divided
1/4 cup walnut halves
Small pinch of kosher salt
One 10-ounce log fresh goat cheese
2 garlic cloves, minced
1 teaspoon freshly ground black pepper
1/2 teaspoon red chile powder

Steps:

  • Preheat the oven to 400 degrees F.
  • In a small nonstick pan over medium-low heat, warm 1 teaspoon of the olive oil. Once the oil begins to shimmer, add the walnuts and cook, stirring, until the walnuts are lightly browned, 4 to 5 minutes. Turn off the heat and mix in the salt. Set aside.
  • In a bowl, mix together the goat cheese, garlic, and black pepper until homogenous. Transfer to a 6- or 8-inch round or rectangular baking dish (no need to pat the cheese down) and bake for 20 to 22 minutes, until the cheese is bubbling and browned along the edges. Let the goat cheese cool for 5 minutes, then drizzle with the remaining 1 tablespoon olive oil and sprinkle the red chile powder and sauteed walnuts over the top. This dip is best eaten immediately--it doesn't reheat very well.

1/4 cascabel chile, toasted in a dry pan, ground in a coffee grinder
1/4 cup pistachio nuts, toasted in a dry pan, ground in a grinder or food processor
1/4 cup bread crumbs (Japanese panko, if available)
1 tablespoon olive oil
Balsamic Vinaigrette, recipe follows
Hot Candied Walnuts, recipe follows
1/2 cup good olive oil
1/4 cup balsamic vinegar
2 shallots, minced
1 teaspoon finely chopped fresh thyme leaves
1 teaspoon finely chopped fresh rosemary leaves
Salt and freshly ground black pepper
1 cup shelled walnuts
1/4 cup sugar
1/4 teaspoon cayenne pepper
1/8 teaspoon salt

Steps:

  • Crust the cheese with the chile, nuts, and bread crumbs and a little salt. Heat 1 tablespoon olive oil in a nonstick pan (large enough to fit all 4 disks comfortably) on medium heat. Place the crusted cheese in the pan. Heat for 45 seconds, turn with a spatula, and heat for another 45 seconds.
  • On each of 4 plates, place a round of crusted goat cheese. Drizzle with Balsamic Vinaigrette and sprinkle with the Hot Candied Walnuts.
  • Combine all ingredients and season with salt and pepper.
  • In a large saute pan on medium heat, place all ingredients. Keep the pan moving until the sugar melts and the ingredients are all melted together. (Be very cautious, can burn easily). Pour mixture onto a greased sheet pan. Leave out to cool. When cool, chop into small pieces. Set aside until needed.

  • Place the cheese in a bowl, add the pepper, lemon juice and zest and crush together with a fork.

My sister-in-law told me about this recipe which she got from Paula Dean. Goat cheese marinated in olive oil, breaded and baked. This is one of my favorite ways to eat goat cheese!

8 ounces goat cheese
2 tablespoons mixed Italian herbs
1/2 cup breadcrumbs
2 tablespoons olive oil

Steps:

  • Cut each goat cheese round in half, down the middle, like separating an oreo cookie.
  • Put in a glass dish and drizzle with olive oil, and salt and pepper to taste.
  • Cover and marinate overnight.
  • The next day, preheat oven to 400F and in a food-processor, blend white bread with italian herbs to make the bread crumbs.
  • Roll the goat cheese halves in the bread crumbs and place on a baking dish and bake for ten minutes or until the bread crust is golden brown and the cheese soft and oozing.
  • Serve with baguettes.

3 tablespoons basil chiffonade (thinly sliced fresh basil leaves), divided
1 (4 ounce) log of fresh goat cheese, halved
16 cherry tomatoes, cut in half on the diagonal
freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Drizzle about 1 1/2 teaspoons olive oil into the bottom of each 6-ounce ramekin and sprinkle about 1 tablespoon basil per ramekin over the oil. Place 1 goat cheese piece over the basil in each ramekin; surround with sliced cherry tomatoes. Top with cracked black pepper and cayenne.
