Quick and easy gingerbread recipe, made with simple ingredients. This old fashioned, classic gingerbread cake is soft, moist, loaded with molasses & spices.

1/2 cup Butter (Unsalted)
1/2 cup Brown sugar
1 cup Molasses (Unsulphered)
1 Egg (Large)
2.5 cups All-purpose flour
1.5 tsp Baking soda
2 tsp Ginger powder
1 tsp Cinnamon powder
1/2 tsp Cloves powder
1 cup Water (Boiling hot)
1 cup Cream cheese frosting (Or whipped cream)

Steps:

  • In a large mixing bowl, cream together butter and sugar.
  • Add molasses and egg and mix until smooth.
  • In a separate mixing bowl, whisk together the flour, baking soda, ginger, cinnamon and cloves.
  • Dump this dry mixture into the wet mixture and mix until just combined.
  • Add water very carefully and mix until smooth. Don't burn yourself!
  • Pour batter in a greased and floured square pan (Dimensions 9x9).
  • Bake at 350 degrees for 40-45 minutes or until an inserted toothpick in the center comes out clean.
  • Allow it to cool down. Then, cut square slices.
  • Top off each piece with a swirl of cream cheese frosting or whipped cream and enjoy!

Ultimate easy gingerbread image

Make some gingerbread stars to hang from your Christmas tree. This biscuit dough is extremely forgiving if overworked, so it's perfect for baking with children

Number Of Ingredients 8

100g salted butter
3 tbsp golden syrup
100g dark muscovado sugar
½ tsp bicarbonate of soda
1 tbsp ground ginger
1 tsp ground cinnamon
225g plain flour
50g icing sugar

Steps:

  • Heat the butter, syrup and sugar together in a small pan until melted, stirring occasionally. Set aside to cool slightly.
  • Mix together the bicarb, ginger, cinnamon and flour in a large bowl. Pour in the buttery syrup mixture and stir to combine, then use your hands to bring together to form a dough. The dough will be soft at this point, but it'll firm up in the fridge.
  • Put the dough on a sheet of baking parchment, shape into a rectangle, and lay another sheet of parchment on top of it. Roll the dough out to a thickness of ½cm. Transfer to a baking sheet to keep it flat, leaving the parchment in place, then chill in the fridge for 1 hr.
  • Heat the oven to 190C/170C fan/gas 5 and line a large baking sheet with more baking parchment. Remove the dough from the fridge and cut out shapes using a cookie cutter. We used 9cm stars, but you can choose any shape. We also made some with smaller stars cut out of the centre to thread ribbon through and hang from a Christmas tree.
  • Place the shapes, spread apart, on the lined baking sheet, and bake for 10-12 mins. (Depending on the size of the cutters you use, they might need a few minutes more or less cooking in the oven). Leave to cool completely on the baking sheet.
  • Meanwhile, mix the icing sugar with 1-2 tbsp water - you want to create a consistency that's thick and pipeable, and not too thin or it will run. Decorate the cooled biscuits with the icing using a piping bag with a thin nozzle. Find out how to make a piping bag.

Make decorating these adorable gingerbread people even easier (and less messy!) with tubes of shop-bought icing and sweets. Get the kids involved too

175g dark muscovado sugar
85g golden syrup
100g butter
350g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
1 tbsp ground ginger
1 tsp ground cinnamon
1 egg, beaten
ready-made writing icing
chocolate buttons or small sweets (optional)

Steps:

  • Melt the sugar, golden syrup and butter in a saucepan, then bubble for 1-2 mins. Leave to cool for about 10 mins.
  • Tip the flour, bicarbonate of soda and spices into a large bowl. Add the warm syrup mixture and the egg, stir everything together, then gently knead in the bowl until smooth and streak-free. The dough will firm up once cooled. Wrap in cling film and chill for at least 30 mins.
  • Remove the dough from the fridge, leave at room temperature until softened. Heat the oven to 200C/180C fan/gas 6 and line two baking trays with baking parchment.
  • Roll out the dough to the thickness of a £1 coin, then cut out gingerbread people with a cutter. Re-roll the excess dough and keep cutting until it's all used up.
  • Lift the biscuits onto the trays and bake for 10-12 mins, swapping the trays over halfway through cooking. Leave to cool on the trays for 5 mins, then transfer to a wire rack to cool completely. Use the icing to decorate the biscuits as you wish, and stick on chocolate or sweets for buttons. Leave to dry for 1-2 hrs. Will keep for up to three days in an airtight container.

Serve this amazing cake with whipped cream. If you prefer an extreme stronger spice flavor then increase all spices by about 1/2 teaspoon. You can even add in raisins to this if you desire. This is taken from my "Holiday Favorites" folder.

2 1/2 cups flour
1 1/2 teaspoons baking soda
2 1/2 teaspoons ginger powder
2 teaspoons cinnamon
1 teaspoon allspice
1/2 teaspoon salt
1/2 cup vegetable oil
3/4 cup sugar
1 large egg
1 cup molasses
1 cup hot water (about 160F)
whipped cream

Steps:

  • Set oeven to 350 degrees F.
  • Set oven rack to second-lowest position.
  • Grease and flour a 9-inch baking dish (knock out any excess flour, can also bake in a 13 x 9-inch pan).
  • In a bowl sift together flour, baking soda, spices and salt.
  • In another bowl using an electric mixer beat oil and sugar until well combined (about 4-5 minutes).
  • Beat in egg and molasses until well combined (about 2 minutes).
  • Gradually add in flour mixture until combined.
  • Add in HOT water, beating until smooth.
  • Transfer batter to prepared baking dish.
  • Bake for about 40 minutes, or until cake tests done.
  • Cool on pan for 10 minutes, then invert to a rack to cool.
  • Serve with whipped cream.

18 ounces duncan hines spice cake mix
1 cup flour
2 eggs
1/3 cup oil
1/3 cup molasses
2 teaspoons ginger
icing, if desired

Steps:

  • Preheat oven to 375 degrees. Combine ingredients. Dough will be soft. Cover with plastic wrap and chill until firm.
  • Roll into 1/4 inch and cut with floured cutters. Place on a lightly sprayed sheet.
  • Bake 8-10 minutes or until edges start to brown. Cool on a wire rack until room temperature Decorate as desired.

Use this versatile dough to make gingerbread men and other shapes. Let the kids decorate them with icing for a perfect winter's day activity

225g plain flour, plus extra for dusting
½ tsp salt
2 tsp bicarbonate of soda
1 heaped tsp ground ginger
½ tsp cinnamon
50g unsalted butter
100g soft brown sugar
100g golden syrup

Steps:

  • Heat oven to 190C/170C fan/gas 5 and line a baking tray with baking parchment. Sieve the flour, salt, bicarb, ginger and cinnamon into a large bowl. Heat the butter, sugar and syrup until dissolved. Leave the sugar mixture to cool slightly, then mix into the dry ingredients to form a dough. Chill the dough in the fridge for 30 mins.
  • On a surface lightly dusted with flour, roll out the dough to a ¼-inch thickness. Stamp out the gingerbread men shapes with a cutter, then re-roll any off-cuts and repeat. Place your gingerbread shapes on the lined trays, allowing space for them to spread. Cook for 10-15 mins, then remove from the oven and leave to cool.
