6 slices bacon, or more to taste
1 cup shredded Swiss cheese
2 green onions, diced
4 eggs
1 ¼ cups milk
1 teaspoon Dijon mustard
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ cup shredded Swiss cheese, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Arrange tart shells in 2 muffin tins; line shell each with a layer of pie weights or dried beans.
  • Bake shells in the preheated oven until edges of crusts are lightly browned and about 75% cooked, 5 to 10 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble when cooled.
  • Divide 1 cup Swiss cheese, bacon, and green onions evenly into the tart shells.
  • Whisk eggs, milk, mustard, salt, and black pepper together in a bowl. Ladle egg mixture into each tart shell about 2/3 full. Top each tart with the remaining 1/4 cup Swiss cheese.
  • Bake in the preheated oven until egg is set in the middle of each tart and shells are browned, 25 to 30 minutes.

I decided to make a quiche so I could have something delicious to eat in the mornings for breakfast. I searched the web and found a few quiche recipes and then adapted my own from the basic ingredients. This was, to my surprise, super easy AND super delicious. Use lactose-free margarine instead of olive oil if desired, and jalapeno yogurt cheese, goat-milk Cheddar, or some combination. Enjoy!

5 green onions, chopped
2 cloves garlic, finely chopped
1 (6 ounce) bag fresh baby spinach
1 ½ teaspoons olive oil

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Heat 1 1/2 teaspoon olive oil in a nonstick oven-safe skillet over medium heat; cook and stir green onions and garlic in the hot oil until the garlic is fragrant but not browned, about 1 minute. Stir in spinach, cover skillet, and cook until spinach is wilted, about 5 minutes. Transfer spinach to a large bowl.
  • Heat 1 1/2 teaspoon olive oil in same skillet and turn heat to medium-high. Cook and stir mushrooms until lightly browned, about 5 minutes; remove from heat.
  • Squeeze any moisture from spinach mixture and stir into mushrooms. Beat eggs in a bowl until thoroughly combined. Stir eggs into the spinach-mushroom mixture; thoroughly stir in feta and jalapeno yogurt cheeses.
  • Spoon the mixture back into the skillet; use a spoon to level surface. Wipe any filling from edge of skillet above the filling with a paper towel.

1 pie pastry (for a 10-inch quiche or tart pan or 9-inch pie plate)
1 tablespoon dry breadcrumbs
8 ounces bacon, cut into 1/2 inch pieces
1 medium onion, minced
2 cups chopped portabella mushrooms
2 cups chopped fresh spinach, packed (very well dried)
1/2 teaspoon ground coriander
1/4 teaspoon ground nutmeg
2 cups grated cheddar cheese, divided use
6 ounces cream cheese
4 eggs
1 cup milk

Steps:

  • Preheat oven to 375°F.
  • Sprinkle bottom of pastry-lined quiche/tart pan or pie plate with 1 tbsp dry breadcrumbs (this will absorb any excess moisture).
  • Place bacon in a large skillet; cook over medium high heat until evenly brown; remove with slotted spoon and drain on paper toweling; set aside.
  • With 2 tbsp of the bacon fat, sauté onion and mushrooms until all the liquid released by the mushrooms has evaporated; add spinach and cook 1-2 minutes, just until spinach wilts; add reserved bacon, coriander and nutmeg and season lightly (remember there will be salt in the cheese); place in pastry and top with 1 1/2 cups cheddar cheese.
  • Beat together cream cheese, eggs and milk; season to taste; carefully pour over quiche and gently shake quiche to distribute custard.
  • Bake in preheated oven for 40-50 minutes, or until quiche is golden-brown, sprinkling with 1/2 cup of cheese 10 minutes before quiche is done (put the quiche directly on the oven floor for the last 10-15 minutes of baking to crisp up the crust); cool for 10-15 minutes before serving.

500g block all-butter shortcrust pastry
flour , for dusting
1 tbsp olive oil
175g button mushrooms , sliced
140g baby spinach leaves, roughly chopped
5 eggs , beaten
100ml milk
200ml double cream
200g mature English cheddar , grated
2 thyme sprigs, leaves stripped

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Roll out the pastry on a lightly floured surface and use it to line a deep 22cm flan tin. Let the edges overhang, don't trim them yet. Chill in the fridge or freezer for at least 15 mins.
  • Line the tart case with baking parchment and fill it with baking beans. Place on a baking tray, then bake for 15-20 mins. Remove the beans and parchment, then return to the oven for another 5 mins to cook the base. Remove, then reduce oven temperature to 160C/fan 140C/gas 3.
  • Heat the oil in a large frying pan, then cook the mushrooms for 1 min. Add the spinach, then cook for 3 mins more or until wilted down. Combine the eggs with the milk and cream in a jug and season well. Build up the tart by sprinkling the cheese onto the base, then scatter over the vegetables and pour over the cream and egg mix. Sprinkle the thyme over the top, then bake for 40-45 mins or until set. Remove from the oven and allow to cool. Trim the pastry edges and serve in slices with the salads, below.

1 large savory piecrust, more on this later
4 slice uncured thick cut bacon, diced
1/2 medium yellow onion, diced
2 clove garlic, minced
8 oz brown or white button mushrooms, stemmed and thickly sliced
8 oz chopped frozen spinach, defrosted
6 oz gruyère cheese, freshly grated
5 oz evaporated milk, 1 small can
4 large farm fresh eggs
1/2 tsp salt, kosher variety
1/2 tsp mustard powder

1 - 2 pinch nutmeg

  • 1. PREP/PREPARE
  • 2. Chef's Tip: One of the tricks to making a good quiche is the proper balance of liquids in the recipe. There are a lot of places that liquids can hide, and ruin the dish. So, we are essentially going to precook our veggies, and remove as much hidden moisture as possible.
  • 3. Gather your Ingredients (mise en place)
  • 4. Place your pie crust in a tart pan, and blind bake in a 350f (175c) oven until it begins to brown, about 10 - 12 minutes.
  • 5. Place the crust in the fridge, and move on to the filling.

  • 7. Add the bacon to a large skillet over medium heat.
  • 8. Cook until the bacon begins to brown, and renders its fat into the skillet, about 5 - 7 minutes.
  • 9. Remove the bacon with a slotted spoon, and drain on paper towels.
  • 10. Add the onions to the skillet, and cook them in the bacon grease, until they begin to soften, about 3 - 5 minutes.
  • 11. Add the garlic, and cook until fragrant, about 60 seconds.
  • 12. Add the mushrooms, and cook until they soften and release their moisture, about 5 - 7 minutes.
  • 13. Add the spinach, and continue to cook until most of the moisture has evaporated, about 3 - 5 minutes.
  • 14. Take the skillet off the heat.
  • 15. Place a rack in the middle position, and preheat the oven to 375f (190c).
  • 16. Grate the cheese.
  • 17. Chef's Note: You could use different cheeses; however, some cheese get very oily when cooked. I choose Gruyère because it is very stable when heated, and it is a perfect complement to the other ingredients in this recipe.
  • 18. Add the eggs, evaporated milk, salt, mustard powder, pepper, and nutmeg to a bowl, and whisk to combine.
  • 19. Add the cheese, milk/egg mixture to the skillet, and mix to combine.
  • 20. Remove the tart crust from the fridge, and add the filling.
  • 21. Add to the preheated oven, and bake until bubbly, and beginning to brown, about 35 - 40 minutes.
  • 22. Chef's Note: If you really want to give this recipe an added level of flavor, sprinkle a bit of freshly-grated Pecorino Romano on the top before placing it into the oven, and then sprinkle a bit more on when you take it out.

250g plain flour
1 tsp sea salt
125g cold butter , diced
1 tbsp thyme leaves
1 egg , beaten
1 tbsp olive oil , to brush the tin
1 egg yolk , to glaze
3 eggs
3 egg yolks
200ml crème fraîche
200ml milk
small handful tarragon leaves, chopped
200g smoked streaky bacon , roughly chopped
5 tbsp olive oil
1large handful red onion , chopped
2heads red chicory , shredded
250g flat cap mushroom , sliced
200g wild rocket
100g gruyère , grated
100g mature cheddar , grated

Steps:

  • To make the pastry, rub the flour, salt, butter and thyme into fine crumbs. Mix in the beaten egg and 1 tbsp ice-cold water, then draw together to a moist pastry, kneading lightly. Wrap with cling film and chill for at least 20 mins.
  • Heat oven to 190C/fan 170C/gas 5. Brush a deep, loose-bottom, 24cm tart tin with oil, then season it. Set a small ball of pastry aside and roll out the rest on a lightly floured surface to a large round, 38-40cm. Lift the pastry into the tin using the rolling pin and press into the sides. Press any cracks together and let the excess overhang.
  • Use a small ball of pastry to press the tart case into the flutes. Save a little more pastry for later (see Step 3 in the Step by step images). Prick the base lightly with a fork and chill the tart case, preferably in the freezer, for at least 30 mins. Cut out a circle of baking paper larger than the tart, scrunch it up, unravel and press into the case.
  • Fill the case with baking beans, stand on a baking sheet and bake for 20 mins. Remove the paper and beans and brush with the remaining yolk. Return to the oven for 5 mins, brush again and return for a final 10-15 mins until glazed and golden. Remove from the oven. Turn the oven to 140C/fan 120C/gas 1.
  • To make the custard, beat together the whole eggs, yolks, crème fraîche, milk and tarragon and season to taste.
  • For the filling, sauté the bacon in 1 tbsp oil until browned and beginning to crisp, about 5 mins. Add 2 tbsp oil to the pan and sauté the onion and chicory with the bacon, stirring until lightly cooked, about 5 mins. Strain any juices through a sieve, then tip into a big bowl.
  • Heat 2 more tbsp oil and stir-fry the mushrooms over a high heat for 3-5 mins. Strain and mix into the bowl. Wilt the rocket in same pan over a high heat and leave to cool.
  • Mix the cheeses and rocket into the custard and whizz with a hand blender until well mixed, then stir in the rest of the filling ingredients.
  • Put the tart case back into the oven. Leaving the shelf slightly out, ladle as much filling into the case as you can. Try to ladle the solid filling in first, then top up with custard. Push the shelf in and bake for 50 mins-1 hour until the quiche is set in the middle, turning for even baking.
  • Remove and trim the pastry edge so that it's in line with the top of the tin. This is easiest with a small, serrated knife. Cool the tart for at least 1 hour before removing from the tin and serving in slices.

8 oz. fresh mushrooms
1 (10 oz.) box frozen spinach
8 oz cooked bacon
½ tsp minced garlic
as needed non-stick spray
5 large eggs
1 cup heavy cream
2 oz. feta cheese
¼ cup grated parmesan
½ cup shredded mozzarella
Pie Crust
salt & pepper

Steps:

  • Preheat your oven to 350 degrees.
  • Thaw the frozen spinach in the microwave. Empty the box into a colander and squeeze out all of the liquid.
  • Cook the bacon until crisp, reserve some of the bacon grease to saute the mushrooms.
  • Thinly slice the mushrooms and toss in the skillet with the reserved bacon grease, add the minced garlic, and sprinkle a little salt and pepper. Turn the heat on to medium-high and saute the mushrooms for 5-7 minutes.
  • In a bowl mix the spinach, mushrooms, bacon and crumbled feta. Spread it out on the bottom of your pie crust.
  • In a medium bowl whisk together the eggs until fairly smooth. Add the cream, Parmesan, and a dash of salt and pepper. Whisk to combine. Pour this mixture into the pie dish over the bacon spinach, mushrooms, and feta.
  • Sprinkle the shredded mozzarella cheese over top.
  • Place the quiche into the preheated oven and bake until it is golden brown on top and the center is solid, approximately 45 minutes to an hour.
  • Slice and serve!

This easy Bacon Spinach and Feta Quiche recipe makes a great easy meal for the whole family. It's simple to put together and it's also freezer friendly too. Both regular and Thermomix instructions are included.

1 & 2/3 cups plain flour
145 grams butter (cold and cut into cubes)
2 tbsp cold water
1 cup milk
5 eggs
1/2 tsp salt
1/2 tsp pepper
1 cup baby spinach leaves
100 grams feta (crumbled)
1 cup tasty cheese (grated)
4 rashers short cut bacon (diced)
100 grams cherry tomatoes (cut in half)
2 cloves garlic (crushed)
1 tbsp onion flakes

Steps:

  • Place the flour and butter into a large bowl and use your fingertips to rub the butter into the flour. Continue until the mixture resembles bread crumbs.
  • Slowly add the water and use a butter knife to combine.
  • Turn the mixture out onto a floured bench and knead until the mixture comes together and is smooth. If your dough is too dry, add a little extra water.
  • Cover the dough with cling wrap and place into the fridge for 30 minutes to chill. In the meantime you can preheat your oven to 190 degrees.
  • Lightly dust a rolling pin and your bench with flour and roll the pastry out until it's approximately 3 - 4mm thick - use your pie tin (I used a 22cm one) as a guide to how big your pasty needs to be, you want to allow a 3cm border of pastry around your dish for the sides.
  • Carefully place your pasty into your pie dish and gently press the pastry against the edges. Trim off any excess, but do leave approximately 1/2 cm of pastry hanging over the tin as it will shrink.
  • Place a sheet of baking paper on top of the pasty and top with baking weights or rice. Cook for 14 minutes before removing the baking paper and weights and cook for a further 6 minutes.
  • To make your quiche mixture, in a large jug combine the milk, eggs and salt and pepper and mix well.
  • Sprinkle the baby spinach, bacon pieces, crumbled feta, onion flakes, tomatoes and grated cheese over the par-cooked pastry base and carefully pour the milk mixture over the top. Place into the oven and cook for 35 - 40 minutes or until golden on top and cooked through.

Steps:

  • Prepare pie crust per recipe instructions. Par-bake pie shell at 400°F for 10 minutes or until it just begins to brown.
  • Saute bacon until crispy and then cool on paper towels to absorb the grease. Saute onions and garlic in the leftover bacon grease until the onions become translucent. Add mushrooms and cook until they are golden brown. Add spinach and stir it into the other ingredients. The spinach should wilt in only a few minutes. Remove from heat, add bacon, and allow to cool to room temperature.

Remove the pie crust from freezer and thaw until just soft enough to easily prick with a fork, about 10 minutes. (If there are any cracks in the crust, see note below on how to patch them up.) Prick the bottom and sides all over with a fork. Place the crust on a baking sheet to make it easy to move in and out of the oven. Bake on until lightly golden, 10 to 15 minutes. Keep an eye on it; if it puffs up while cooking, gently prick it with a fork so it will deflate. (If it cracks while baking, see note below for instructions on how to patch it up.)   • In a medium nonstick sauté pan over medium heat, cook the bacon, stirring occasionally, until crisp, about 10 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain. Pour off all but one tablespoon of fat from the pan. Add the shallots and cook over medium-low heat until soft and translucent, 3 to 4 minutes. Do not brown. Remove the pan from the heat and set aside.
  • In a medium bowl, whisk the eggs. Add the heavy cream, salt, cayenne pepper, and nutmeg; whisk until evenly combined.
  • Spread the shallots evenly over the bottom of the cooked crust. Top with half of the bacon, all of the Gruyère, and then the remaining bacon. Pour the egg/cream mixture over top.
  • Slide the quiche (still on the baking sheet) into the oven and bake at 325°F for 45 to 50 minutes, until the custard is set and lightly golden. Serve hot or warm.
  • Note: Don't panic if your crust has cracks -- you can easily fix it. Make a smooth paste by mixing 1 tablespoon of flour with 1 tablespoon of water. Use your fingers to patch up and fill any cracks, then proceed with the recipe. If the crust cracks while blind baking, patch it afterwards and place it back in the oven for a minute or so to set. It should be good as new.
  • Make-Ahead Instructions: This quiche can be fully prepared up to a day ahead of time and refrigerated. To reheat: Cover the quiche with aluminum foil and heat in a preheated 300°F oven for 35 to 45 minutes, or until hot in the center.
  • Freezer-Friendly Instructions: The cooked quiche can be frozen for up to 3 months. After baking and cooling the quiche, wrap it in a layer of plastic wrap and then a layer of aluminum foil. Remove the quiche from the freezer about 24 hours prior to eating. Remove the plastic wrap and reheat it, covered with foil, in a 300°F oven for 35 to 45 minutes, or until hot in the center.

Steps:

  • Preheat oven to 375°.
  • Cook bacon in a big skillet until semicrisp; drain on paper towels.
  • Discard all but 1 tablespoon bacon fat from the skillet; add oil to skillet and heat over medium heat.
  • Add in mushrooms and onion; cook/stir until the mushrooms are lightly browned and the onion is tender, about 5 minutes.
  • Add in parsley and garlic; cook 1 minute.
  • Season with salt and pepper; remove from heat.

Mushroom stems, leftover from Bacon Stuffed Mushrooms recipe, chopped
5 eggs
1/2 cup milk
1 tablespoon freshly chopped parsley leaves
1 teaspoon freshly chopped thyme leaves
Salt and freshly ground black pepper
1/2 cup grated mozzarella cheese
1 frozen, pre-made pie shell in the foil pie plate

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large skillet over medium heat, add the bacon and cook until crisp. Remove from pan and drain on a brown paper bag or paper towels and reserve the fat in the pan. Chop the bacon when cooled and reserve.
  • To the same skillet with reserved bacon fat, add the onions and mushroom stems and cook until the onions are translucent and the mushrooms are browned, about 5 minutes.
  • In a large bowl mix together the eggs, milk, herbs and salt and pepper, to taste. Stir in the cheese, the reserved bacon and the mushroom mixture.
  • Pour the filling into the pie crust. Put on a baking sheet and bake until the quiche has set and top and crust has browned, about 30 to 35 minutes.

1/2 teaspoon minced garlic
1 (10 ounce) box frozen spinach
4 large eggs
1 cup milk
2 ounces feta cheese
1/4 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese

Steps:

  • STEP 1: Preheat your oven to 350 degrees. If your frozen spinach is not already thawed, thaw it in the microwave. Empty the box into a colander and let it drain while you begin to prepare the rest.
  • STEP 2: Quickly rinse the mushrooms and slice them thinly. Place the sliced mushrooms in a skillet coated with non-stick spray, add the minced garlic, and sprinkle a little salt and pepper. Turn the heat on to medium-high and saute the mushrooms until they release all of their moisture and no more water remains on the bottom of the skillet (5-7 minutes).
  • STEP 3: Spray a pie dish with non-stick spray. Squeeze the rest of the water out of the spinach and spread it out on the bottom of the pie dish. Next add the cooked mushrooms and crumbled feta.
  • STEP 4: In a medium bowl whisk together the eggs until fairly smooth. Add the milk, parmesan, and another small sprinkle of pepper. Whisk to combine. (This step can be completed while the mushrooms are cooking) Pour this mixture into the pie dish over the spinach, mushrooms, and feta.
  • STEP 5: Sprinkle the shredded mozzarella cheese over top. Place the pie dish on a baking sheet for easy transfer into the oven. Place the quiche into the preheated oven and bake until it is golden brown on top and the center is solid. Every oven is different but this should take between 45 minutes and an hour. Slice and serve!
