There is a recipe where the cheese is melted directly on a griddle and then scooped onto a plate, another where it's baked in the oven or placed under the broiler. You can also make it in a small skillet right on top of the stove or on the grill where you make your steaks.

1 Tablespoon vegetable oil
5 ounces Mexican Chorizo (casings removed.)
12 ounces Monterey or Oaxaca Cheese (grated (2 1/2 cups))
6 Flour tortillas (or)
12 ounces tortilla chips (for serving)
1 1/2 cup of Roasted Salsa

Steps:

  • Preheat oven to 350 degrees. Place a skillet over medium heat, add the oil if using. Most Mexican chorizos have enough fat and won't need the vegetable oil. Add the chorizo and cook, stir frequently to cook evenly and avoid it from sticking to the bottom. It'll take about 6-7 minutes to cook.
  • Once cooked, remove the excess fat from the skillet or place the cooked chorizo over a paper towel to absorb the fat.
  • Place the chorizo in an oven proof dish, setting aside 2 tablespoons to garnish when ready to serve. I divided the chorizo and cheese into 2 small clay pots, but you can use a large oven proof dish.
  • Place the grated cheese over the chorizo and bake for about 10-12 minutes or until the cheese is melted and bubbling. Do not overcook or it will have a chewy texture.
  • Remove form oven and place over a heat proof surface. Serve warm with salsa and plenty of flour tortillas or tortilla chips.

2 poblano chile peppers
1 tablespoon extra-virgin olive oil
8 ounces fresh chorizo, casings removed
1/2 cup chopped scallions
2 tablespoons all-purpose flour
1/2 cup lager
2 cups grated cheddar cheese (about 8 ounces)
Tortilla chips, for serving

Steps:

  • Preheat the broiler. Put the poblanos on a broiler pan and broil, turning occasionally, until charred all over, about 10 minutes. Transfer to a bowl, cover with a plate and let steam until cool enough to handle, about 10 minutes. Scrape off the charred skin with a paring knife and remove the stems and seeds; chop the peppers and set aside.
  • Heat the olive oil in an 8- or 9-inch cast-iron skillet over medium heat; add the chorizo and cook, breaking up the meat with a wooden spoon, until cooked through, about 5 minutes. Add the scallions and poblanos and cook until the scallions are wilted, about 2 minutes. Add the flour and cook, stirring to coat, 1 minute.
  • Add the lager and bring to a boil; cook until thickened, about 1 minute. Add the cheese, a handful at a time, stirring until melted before adding more. Transfer the skillet to the broiler and broil until browned and bubbling, 1 to 2 minutes. Serve with chips.

2 tablespoons cider vinegar
2 tablespoons tarragon vinegar
1 tablespoon paprika
2 teaspoons garlic powder
2 teaspoons guajillo powder
2 teaspoons black pepper
2 teaspoons kosher salt
1 teaspoon ground cumin
1/2 bunch fresh cilantro, minced
1 large Spanish onion, finely sliced
1 clove garlic, minced
2 tablespoons vegetable oil
1/2 bunch fresh cilantro, minced
1 teaspoon kosher salt
1/2 teaspoon dried thyme
1/2 cup cider vinegar
1 teaspoon kosher salt
1 teaspoon white sugar
2 to 3 Fresno chiles, sliced into rings
One 8-ounce bag or 1 cup shredded Monterey Jack cheese
One 8-ounce bag or 1 cup shredded mozzarella
Corn tortilla chips or flour tortillas, for serving

Steps:

  • For the chorizo pork sausage: Preheat the oven to 400 degrees F.
  • Combine the pork, vinegars, paprika, garlic powder, guajillo powder, pepper, salt, cumin and cilantro in a large bowl. Mix well using hands or a wooden spoon.
  • Spread mixture over a baking pan and roast until cooked through, 15 to 20 minutes. Drain excess fat.
  • For the rajitas: Saute onions and minced garlic with vegetable oil in a skillet on medium-high heat until onions are translucent, 4 to 5 minutes. Add cilantro, salt and thyme and continue to cook 2 minutes.
  • For the escabeche: Combine vinegar, salt, sugar and 1/2 cup water in a small saucepan and bring to a boil. Place chile rings in a mixing bowl (remove seeds if desired to lessen heat). Pour boiling liquid over chiles and refrigerate until chilled, up to overnight.
  • For the queso fundido: Preheat the oven to 350 degrees F.
  • Layer a 9-by-6-inch casserole dish with onion rajitas, 2 cups cooked chorizo pork sausage and cheeses. Place 4 to 6 pickled chiles on top.
  • Bake 10 to 12 minutes. Transfer to a broiler and continue to cook until browned. Serve with corn tortilla chips or flour tortillas and extra pickled chiles!

Canola oil
Zest of 1 lime
3/4 teaspoon plus 1 pinch kosher salt
Twelve 6-inch corn tortillas, each cut into 6 wedges
1 small onion, finely chopped
1 small jalapeno pepper, seeded, if desired, and finely chopped
1 plum tomato, seeded and finely chopped
1/2 cup Mexican lager-style beer (such as Corona)
12 ounces muenster or Monterey Jack, grated (about 3 1/2 cups)
4 ounces sharp white Cheddar, grated (about 1 1/2 cups)

Steps:

  • Pour oil to a depth of 2 inches into a medium saucepan. Heat over medium-high heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. In a small bowl, mix the lime zest and 3/4 teaspoon salt together. Working in batches, fry the tortilla wedges until golden and crisp, about 1 minute, and transfer them to a paper towel-lined baking sheet with a slotted spoon. Sprinkle the chips with the lime salt while they are still hot. Set aside.
  • Heat 1 tablespoon canola oil in a 10-inch cast-iron or ovenproof skillet over medium-high heat. Add the onions, jalapeno and a pinch of salt and cook until the onions just start to brown, about 5 minutes. Add the tomato and cook until softened, about 1 minute. Add the beer and cook until all the liquid has evaporated, about 7 minutes. Remove the skillet from the heat. Toss the muenster and Cheddar together and add them to the skillet. Stir once or twice to combine.
  • When ready to serve, preheat the broiler. Place the skillet under the broiler until the cheese is bubbling and lightly browned on top, 2 to 3 minutes. Serve hot with the chips.

7 ounces dried chorizo, diced small
1 jalapeño, seeded and finely chopped
2 tablespoons chopped cilantro
2 scallions, finely chopped

1 pound Monterey Jack cheese, grated
Sliced bread, if serving as sandwiches
Extra virgin olive oil, if serving as sandwiches
Tortilla chips, if serving as dip
Lime wedges, if serving as dip

Steps:

  • Heat a small skillet over medium-high heat. Add the chorizo and cook, stirring, until browned, 4 to 5 minutes.
  • In a medium bowl, mix the jalapeño, cilantro, scallions and salt. Add the cheese and toss well.
  • If serving as dip, skip to Step 4. If serving as sandwiches: drizzle slices of bread with oil and brown in a toaster oven. Top with chorizo, then the cheese mixture. Return to toaster oven and toast until bubbling.
  • If serving as dip: heat the broiler. Combine the chorizo and cheese mixture and pour into a shallow baking or gratin dish. Broil until melted and bubbling, about 4 to 5 minutes. Serve with the chips and lime wedges on the side.

1 tablespoon olive oil
4 ounces Mexican chorizo
1 small onion, finely diced
1 green bell pepper, seeded and finely diced
1 yellow bell pepper, seeded and finely diced
1/4 cup tequila (optional)
1 pound Monterey Jack cheese, grated
8 ounces white Cheddar cheese, grated
Chili powder
2 Roma tomatoes, finely diced
Kosher salt
1/4 cup chopped cilantro leaves, for serving
Tortilla chips, for serving
Carrot sticks and cauliflower florets, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • In a 9-inch cast-iron skillet, heat the olive oil over medium heat. Add the chorizo and cook, crumbling it as you go, until browned and cooked through.
  • Remove the chorizo from the skillet and drain it on paper towels (chorizo is very greasy!). Pour off any excess fat from the skillet.
  • Without cleaning the skillet, add the onion and bell peppers.
  • Cook the veggies over medium-high heat, stirring frequently, until they brown and soften, about 5 minutes. Turn off the heat and stir in the tequila, if using. Turn the heat back on to medium-high and cook until the vegetables are golden brown and the liquor has reduced, 2 to 3 minutes more. Remove the vegetables from the skillet and set them aside. Turn off the heat.
  • Mix the cheeses together, then cover the bottom of a medium ovenproof skillet with one-third of the cheese mixture . . .
  • Add one-third of the vegetables . . .
  • And one-third of the chorizo.
  • Continue with two more layers, ending with chorizo. Sprinkle the top with chili powder.
  • Bake until the cheese is totally melted, hot, and slightly bubbling around the edges, 4 to 5 minutes. Watch it constantly, as you don't want the cheese to get overly melted and hard. But you want it to be sizzling!
  • Top with the tomatoes, a sprinkle of kosher salt, and the cilantro.
  • Serve immediately with tortilla chips . . .
  • Or carrot sticks and cauliflower florets if you want to avoid chips!

6 ounces chorizo or spicy Italian sausage, casings removed
1/4 cup chopped onion
1 large clove garlic, minced
2 cups grated Oaxaca or mozzarella cheese
6 flour tortillas or soft tacos, warmed

Steps:

  • Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.
  • In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onions and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.
  • Put half of the cheese in the baking dish and sprinkle with half of the chorizo mixture. Repeat with the remaining cheese and chorizo mixture. Bake until the cheese is bubbling, about 20 minutes. Serve with flour tortillas for soft tacos.

2 tablespoons olive oil
1/2 small onion, chopped
1 garlic clove, minced
1 jalapeno, seeded and diced
2 ounces chorizo sausage
4 ounces mozzarella cheese, cubed
4 ounces monterey jack cheese, cubed
3 ounces goat cheese, crumbled
6 small flour tortillas

Steps:

  • Preheat oven to 400 degrees. Place an 8 inch casserole in oven while preparing the fundido.
  • Heat oil in skillet over medium high heat until slightly smoking. Add onion, garlic and pepper and cook for one minute stirring constantly.
  • Add chorizo and break up while coooking for about 10 minutes.
  • Remove the casserole from oven. Spread the cheeses over hot bottom of dish. Return the dish to oven and bake until cheese is just melted, about five minutes.
  • Remove from oven and sprinkle chorizo mixture over top. Return to oven and heat for about three minutes.
  • Serve with warmed tortillas.

5 large poblano chiles
1 1/4 lbs chorizo sausage, links, casings removed (about 8)
5 large garlic cloves, chopped
24 green onions, chopped
2 1/2 cups chopped fresh cilantro
1 1/4 lbs monterey jack cheese, coarsely grated (about 5 cups)
1 1/4 lbs mozzarella cheese, coarsely grated (about 5 cups)
2 1/2 tablespoons cornstarch
2 cups low sodium chicken broth

Steps:

  • Char chilies directly over gas flame or in broiler until blackened on all sides.
  • Enclose inpaper bag 10 minutes.
  • Peel, seed, and coarsely chop chiles.
  • Saute sausage and garlic in very large skillet over medium high heat unti browned, breaking into pieces, about 20 minutes.
  • Add green onions; stir until wilted, about 5minutes.
  • Remove from heat.
  • Mix in cilantro and poblano chiles.
  • Toss both cheeses and cornstarch in large bowl until coated.
  • Bring 2 cups broth to simmer in large pot over medium-high heat.
  • Add cheese by cupfuls, whisking until each addition is almost melted before adding the next.
  • Remove from heat.
  • Stir in chorizo mixture. Thin with more broth by 1/4 cupfuls if too thick. Season with salt and pepper.
  • Transfer to bowl; serve with tortilla chips.
