BLACK EYED PEAS, FOR THOSE WHO USUALLY DON'T LIKE THEM,

Black Eyed Peas, for Those Who Usually Don't Like Them, image

Nobody in my family, except me, likes black eyed peas. I learned a easy way to dress them up from my grandfather many years ago. May sound a little strange until you try it, but this recipe is addicting! I have made them with low fat mayo, and they were good. I have never tried fat free mayo. This recipe works very well with field peas too. You could easily add to this basic recipe to make all kinds of black eyed pea dishes.

BLACK-EYED PEA NUTRITION, BENEFITS AND HOW TO COOK - DR. AXE

From draxe.com
Estimated Reading Time 8 mins
  • Improve Digestion. One of the biggest black-eyed pea benefits is the high levels of dietary fiber, which helps to promote regular bowel movements and improve the health of the entire body, especially the digestive system.
  • Prevent Anemia. Getting adequate iron in your diet prevents anemia, which can cause fatigue and weakness. Anemia occurs when your blood has a lower than normal number of red blood cells or if your red blood cells don’t have enough hemoglobin.
  • Lower Blood Pressure. Black-eyed peas are rich in potassium, a mineral that helps keep your blood pressure levels at healthy numbers and lowers your risk of heart disease.
  • Increase Folate Intake. Black-eyed peas are especially high in folate, which is a water soluble B vitamin that plays a slightly different role from the other B vitamins because it doesn’t participate in energy metabolism.
  • Boosts Skin and Eye Health. Black-eyed peas are surprisingly high in vitamin A. They have over a quarter of your daily vitamin A needs in one cup. Not only does vitamin A help form and maintain healthy skin and mucus membranes, but it produces the pigments in the retina of the eye.

  • Mashed Sweet Potatoes. A beautiful and delicious combination. How about some mashed sweet potatoes with our beloved black-eyed peas? As this dish is sweet, it pairs perfectly with the savory dish.
  • Macaroni and Cheese. This side dish is the definition of comfort food. It’s incredibly cheesy, and it has carbs. If you thought eating healthy was impossible, think again.
  • Rice with Sautéed Vegetables. Rice is a great side dish for black-eyed peas because it goes well with just about any meal. If you’re trying to serve yet another veggie or meat, rice will be your best friend.
  • Roasted Vegetables. A particularly delicious side dish is roasted vegetables. Roasting veggies brings out their natural sweetness, which will make your taste buds tingle with happiness.
  • Cucumber Salad. A cold side dish that will cool down your black-eyed peas is cucumbers. Now, this salad may seem like an odd choice at first, but it’s pretty delicious.
  • Cornbread. Who doesn’t love cornbread? This side dish is one of our personal favorites here at EatDelights. Cornbread is the perfect accompaniment to your black-eyed peas because it’s also light and easy to make.
  • Green Salad. Of course, we couldn’t leave green salad off of our list. If you’re looking for a fresh side dish, this salad will be perfect. It’s the best accompaniment to black-eyed peas because it provides a crispy, crunchy texture that will leave your taste buds feeling refreshed and satisfied.
  • Coleslaw. A last-minute addition to our list is coleslaw. If you’re looking for a side dish that will cool down your black-eyed peas and add some extra zing to the taste buds, coleslaw is perfect for your meal.

HOW TO 'DOCTOR UP' A CAN OF BEANS TO MAKE THEM TASTIER ...

From onegreenplanet.org
  • Basic Tips. It’s true that canned beans can have lots of salt, preservatives, and BPA in the can lining. That’s why I buy organic beans that don’t contain salt or preservatives and that come in BPA-free cans.
  • Spice Them Up. I love spices so much that even when a packaged food says it’s already seasoned, I still add my own. Adding fresh herbs and spices makes any food taste better.
  • Get Saucy. Cooking beans in sauce is a wonderful way to add flavor to even the blandest of beans. The aroma and flavor of the sauce not only covers the beans but infuses into them.
  • Make Sauce. Besides cooking beans in sauces, we can also make sauces from beans. One of my favorite sauces in Chinese cuisine is black bean sauce. Despite its name, black bean sauce is not made from black beans but from fermented black soybeans, also known as Chinese black beans.
  • Get a Head Start on Starters. Canned beans are a fast and easy way to make lots of appetizers when you’re having a party or get-together. Use canned chickpeas or step out of the box with other types of beans to make everyone’s favorite spread – hummus.
  • Let Them Stew. When you make stews and soups, all the ingredients cook for at least half an hour. Canned beans are perfect for these recipes because, besides saving you time, they will soak up all the flavors they are stewing (or souping) in.
  • Toss Them in Salads. Maybe it’s hot and you’re not in the mood to stand over a stove. Canned beans come in handy when you just don’t feel like cooking.
  • Repurpose Them. If you shy away from canned beans because you think they aren’t flavorful enough, you might consider using them when you repurpose them to make a whole other food.
  • Cook Them with Grains. Whole grains take enough time to cook so opening a few cans of beans lessens the work of making a fabulous entrée or side dish.
  • Make Desserts. One of the best ways to use canned beans is to make desserts with them. That’s right, I said desserts. You can use all kinds of veggies in sweet desserts and beans are no exception.

HOPPIN' JOHN WITH BLACK EYED PEAS: GOOD LUCK FOR THE NEW ...

SOUP RECIPES - OPRAH.COM
Sunny Anderson, one of O's food columnists, puts a new spin on the Italian classic with her Southern pasta e fagioli (that's Italian for "pasta and beans"). The usual suspects are all here—cannellini beans, tubetti pasta, rosemary—but Anderson throws in potatoes, black-eyed peas and smoky ham hock. They may be untraditional additions, but the flavors meld perfectly.
