ANCHO CHILI AND HONEY BBQ SAUCE



Ancho Chili and Honey BBQ Sauce image

This Ancho Chili and Honey BBQ Sauce recipe uses dried Ancho, Chipotle, and Pasilla Chilies to create a sweet, smokey, sauce with a little heat on the finish. The dried chilies and honey form a thick BBQ sauce with deep, complex flavors, and little texture.

2 Ancho chilies
1 Chipotle chili
1 Pasilla chili
1 cup chili water from soaking the dried chilies
1/2 large white onion
3 clove garlic
32 oz ketchup
1/2 cup honey
1/4 cup molasses
2 tbsp brown sugar
1/4 cup lemon juice
1/4 cup lime juice
1/3 cup apple cider vinegar
1 tbsp Worcestershire sauce
1/2 tbsp liquid smoke
2 tsp salt

Steps:

  • Soak the dried chilies in 2 cups of hot water for at least 30 minutes, making sure to reserve the water.
  • Dice the onion and garlic and sauté them in the same pot the BBQ sauce is being made in.
  • Remove the chilies from the water, rough chop them, and throw them into the pot, seeds and all. Give everything a good stir and let it cook for 1 to 2 minutes, continue stirring.
  • Add the ketchup, 1 cup of chili water, honey, molasses, brown sugar, lemon juice, lime juice, apple cider vinegar, Worcestershire, and liquid smoke.
  • Let everything cook for ten minutes or so on low heat. Stir regularly to keep everything from boiling over. Use a blender to puree everything until it's smooth
  • Add the salt and cook on a low simmer, occasionally stirring to prevent a mess, for at least 30 minutes, but better for an hour or two.

I adapted this luscious dish from a recipe from Chicago's fabulous iSalpicon! restaurant. Most quail is semi-boneless, only some bones in the drumsticks and wings, so it's very easy to fully enjoy every delectable morsel. Plan on two birds per person. Prep time includes marinating the quail overnight.

4 semi-boneless quail
4 tablespoons olive oil
1 1/2 ounces pure dried ancho chile powder
2 tablespoons chopped garlic
3/4 tablespoon vegetable oil
1/4 onion, finely chopped
2 tablespoons pure dried ancho chile powder
4 tablespoons honey
1 cup chicken broth
2 teaspoons cornstarch, dissolved in
2 teaspoons cold water
salt
1 pinch ground cinnamon
1 pinch ground cloves

Steps:

  • In a plastic zipper bag, combine the olive oil, 1-1/2 ounces ancho chile powder, and garlic with the quail and refrigerate overnight.
  • To make the sauce: saute the onion in the vegetable oil in a medium saucepan until onion is transparent and soft but do not brown.
  • Add the ancho chile powder, and pinches of cinnamon and cloves and stir together for a minute or two; then add the chicken broth and bring to a boil.
  • Reduce heat and add honey, stirring over low heat until dissolved.
  • Stir in the cornstarch dissolved in water and whisk sauce until thickened.
  • Season with salt to taste.
  • To prepare the quail: Remove quail from marinade.
  • On a very hot grill or skillet, cook quail skin side down for about 5 minutes; flip over and cook for another 4 or 5 minutes or until medium-rare (some pink is fine).
  • Serve with ancho-honey sauce drizzled over.

1 lb boneless chicken breast (thin sliced by Purdue)
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons ground ancho chili pepper (divided)
3/4 cup flour
1 teaspoon sugar
3 egg whites (or AllWhites for best results)
vegetable oil (for deep frying)
2 tablespoons barbecue sauce (Famous Dave's Sweet n' Zesty)
3/4 cup chili sauce
1/2 cup honey
1/2 cup brown sugar
2 tablespoons butter

Steps:

  • Salt and lightly pepper both sides the chicken breast.
  • Liberally add the ancho chili pepper onto both sides of the breasts.
  • Cut the breasts into 1 inch cubes.
  • Whisk the egg whites.
  • In a Ziploc bag or mixing bowl, combine the flour, sugar, and 2 tablespoons of Acho Chili Pepper.
  • Take a handful of the cut chicken and dip into the egg whites. (coat well).
  • Place the chicken in the flour mixture and shake well. (coat well).
  • Place the chicken in the deep fryer at 355 degrees for 6 to 7 minutes. Drain on rack and set aside on paper towel. (NOTE: You do not have to fry all at once. Fry in batches for best results.).
  • For sauce:.
  • Melt butter in non stick pan. (medium heat).
  • Stir in honey and brown sugar until well blended.
  • Stir in Chili and Barbeque sauces.
  • Add remaining tablespoon of Ancho Chili pepper. Stir.
  • Bring to boil then let simmer for 5 minutes.
  • Place the chicken in a Tupperware bowl.
  • Pour sauce over chicken.
  • Put the top over Tupperware and shake chicken and sauce until chicken is evenly coated with sauce.
  • Serve over rice, with cajun fries, or food of your choice.

1/2 cup virgin olive oil
4 tablespoons chopped garlic
3 ounces ancho chile powder
8 medium glove-boned (semi-boneless) quail
3 ounces ancho chiles (about 7 whole)
2 cups boiling water
1 1/2 tablespoons canola oil
1/2 medium onion, finely chopped
1/2 cup honey
Salt
Pinch cinnamon
Pinch ground cloves

Steps:

  • For the marinade: In a glass bowl mix the olive oil, garlic, and ancho chile powder. Add the quail, cover, and refrigerate for at least 4 hours, or overnight, if possible.
  • For the sauce: Stem, seed and devein the chiles. Place them, 1 or 2 at a time, in a dry cast-iron skillet that has been heated to medium-hot. Cook over medium-high heat, turning several times, until toasted, 40 to 60 seconds. Transfer to a bowl and cover with boiling water; soak 20 minutes.
  • Meanwhile, heat oil in a large saucepan over medium heat. Add onion and cook gently until soft; 5 to 6 minutes. Set aside.
  • Strain chiles, reserving the liquid. Transfer chiles to a blender and add about 1 cup of the reserved liquid. Puree until smooth, then push the mixture through a medium mesh strainer into a saucepan with the onion. Stir in honey, salt, and seasonings. Heat to boil, reduce heat, and simmer gently 8 minutes.
  • On a very hot grill or cast-iron skillet, set the quail skin-side down, for about 4 minutes. Flip the quail and cook on the other side for about 2 minutes or until cooked to medium-rare.
  • Put 3 ounces of sauce on a dinner plate and put the quail on top.

4 garlic cloves, crushed
4 teaspoons sambal oelek (Indonesian paste available at some grocery stores and most Asian stores)
3 tablespoons honey
2 tablespoons soy sauce
2 teaspoons brown sugar

Steps:

  • Note: I make it this way for my family which still has a nice kick, if it is for a party or just me I use 1/4 cup sambal oelek as I like it really spicy so adjust amount for heat.
  • Cut quail in half length ways. Combine all marinade ingredients in a storage container or large bowl marinate several hours or over night.
  • Preheat oven to 190°C place quail on wire rack over baking dish, reserve marinade,.
  • cook quail for approximately 25 minutes or until browned and crisp and cooked through, brush with marinade a couple of times during cooking.
  • Can be made as a starter for 4 or a main course for 2. You can also double ingredients for 4, as a main.
  • Serve over deep fried vermicelli noodles with stir fried vegetables.
  • This is also a good marinade for chicken wings or drumsticks.

This easy-to-make red chili sauce recipe is a flavor POWERHOUSE and essential for Mexican or Tex-Mex cuisine, made with lightly toasted ancho peppers. Perfect for enchiladas, chilaquiles, tacos and so much more.

5 ancho chili peppers
1 tablespoon vegetable oil
½ cup chopped white onion
½ cup chopped red onion
4 garlic cloves (chopped)
1 Roma tomato (chopped)
2 tablespoons red wine vinegar
1 teaspoon ground cumin
1 tablespoon Mexican oregano
Salt and pepper to taste
1-2 tablespoons honey (optional)
Soaking water or stock for thinning

Steps:

  • Dry roast the ancho peppers on a hot pan about 1-2 minutes per side. The peppers will puff slightly and the skins will begin to turn red.
  • Set them into a large pot of boiling water and remove from heat. Let them soak covered in water for 30 minutes.
  • Remove the stems and coarsely chop the anchos. Reserve the soaking liquid.
  • Set the chopped anchos into a food processor.
  • Heat the oil in a pan to medium heat and add the onion. Cook about 5 minutes to soften.
  • Add the garlic and tomato and cook another minute or so, until you can smell the garlic. Add them to the food processor.
  • Add the vinegar, cumin, oregano and a bit of salt and pepper along with about 1 cup of the soaking liquid. Process until it smooths out.
  • The sauce will be thick at this point. You can add more soaking liquid to achieve your desired consistency.
  • Give it a taste. You can adjust with salt and pepper and this point, and if you feel it needs a touch of sweetness, add the honey and process a bit more.
  • Press the sauce through a coarse strainer into a bowl. I use a wooden spoon to push it through.
  • Store in the fridge in an airtight container.
  • As a tasty variation, add up to 15 ounces (1 can) of tomato sauce while cooking, or after you strain the ancho chili sauce to simmer. It makes for an outstanding final sauce. Or, swirl in anywhere from 1 tablespoon to a cup of the ancho chili sauce to tomato sauce to liven up any dish.

A lamb lovers dream! This is one of my favorite lamb recipes. I've had so many requests after serving this at dinner parties that I decided to post it here. Get the shanks in the oven. Make the glaze and topping, then take an hour long nap, have a bath, and presto! Dinner's ready! Bon Appetite.

2 tablespoons olive oil
4 lamb shanks
1 onion, chopped
2 cloves garlic, minced
2 dried ancho chiles - chopped, stemmed and seeded
2 cups chicken broth
4 cups tomato puree
1 teaspoon ground cumin
1 bay leaf
salt and pepper to taste
6 dried ancho chiles, stemmed and seeded
4 cups boiling water
½ cup honey
1 teaspoon grated orange zest
1 cup plain yogurt
2 tablespoons chopped fresh cilantro
salt to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Heat oil in large Dutch oven or enamel baking pot. Sear shanks on all sides and set aside. In the same pot, saute onion and garlic 2 to 3 minutes. Add 2 ancho chilies, tomatoes and chicken stock. Season with cumin, bay leaf, salt and pepper. Boil briefly, then return shanks to pan.
  • Cover and bake in preheated oven for 2 to 2 1/2 hours. Meat should be just ready to fall off the bone.
  • To make the glaze: Cover 6 ancho chilies with boiling water, and soak for 10 minutes. In a food processor, combine chilies, 1 cup water, honey and orange zest. Process until smooth; set aside.
  • To make the topping: In a small bowl, mix together yogurt, cilantro and salt. Cover, and refrigerate.
  • When the shanks are done, remove them from the Dutch oven, and place them into an oiled roasting pan. Increase oven temperature to 400 degrees F (200 degrees C). Spread glaze over shanks and return to oven until light crust forms, 6 to 10 minutes. Serve on large plates surrounded by tomato base and topped with the refreshing yogurt mixture.

About 12 semi-boneless quail (1 or 2 per person)

Steps:

  • Soak ancho chile in 1 cup of hot water for 30 minutes.
  • Preheat grill to medium-high.
  • Place ancho chile and soaking water, garlic, honey, and salt in a blender. Cover and puree until smooth.
  • Place quail, breast side down, on preheated grill for 3 to 4 minutes or until skin is browned. Turn quail over and baste generously with pureed sauce. Cook for another 3 to 4 minutes.
