6 ounces dried Chinese mushrooms
1 lb snow peas
3 tablespoons peanut oil
1/2 cup bamboo shoot, cut into 1/8-inch pieces
1 tablespoon chopped garlic
1 tablespoon chopped ginger
1 teaspoon salt
1/2 teaspoon sugar
2 tablespoons reserve mushroom water

Steps:

  • Cover the mushrooms in a small bowl with warm water. Let sit for 30 minutes to soften. Drain mushrooms and reserve about 2 tablespoons of water. Cut mushrooms into 1/4-inch slices; set aside.
  • Snap tips off of snow peas and remove strings from pods; set aside.
  • Place 3 tablespoons of peanut oil in a wok set over high heat. Add the mushrooms and bamboo shoots and stir-fry for 2 minutes.
  • Add the snow peas, chopped garlic. ginger and stir-fry for another minute.
  • Add the salt, sugar, and mushroom water. Cook for another 2 minutes to evaporate liquid.
  • Serve hot.

Stir-frying retains the sweetness and crunch of these low-calorie snow peas. A blend of soy sauce, ginger, chiles and sesame oil, store-bought kung pao sauce adds heat and flavor to this dish without adding a lot of fat.

1 tablespoon peanut or grapeseed oil
1/2 large sweet onion, such as Vidalia or Maui, thickly sliced
8 ounces snow peas, ends trimmed (about 4 cups)
1/4 cup bottled all-natural kung pao, shiitake soy ginger or other low-sodium stir-fry sauce
2 tablespoons chopped unsalted roasted peanuts or cashews

Steps:

  • Heat a wok or large skillet over high heat and add the oil. Add the onions and stir-fry until just wilted, about 30 seconds. Add the snow peas and stir-fry until nearly crisp-tender, about 2 minutes more. Add the sauce and stir-fry to coat, about 1 minute.
  • Transfer to a platter or large bowl, sprinkle with the nuts and serve.

500 g asparagus
1 green onion
2 teaspoons cornstarch (or as needed)
4 tablespoons vegetable oil (to taste)
1/4 teaspoon salt (to taste)
1/4 teaspoon msg (optional)
1 teaspoon sesame oil (to taste)

Steps:

  • Clean asparagus, cut into 2-in segments, blanch briefly, and drain.
  • Mince green onion. Combine corn starch with 2/3 c water.
  • Heat wok over highest heat. Add oil and swirl to heat. Add green onion and toss one moment until fragrant but not burned. Add asparagus. Add a little water and stir-fry briefly.
  • Season with salt and MSG. Add corn starch mixture and heat to thicken. Turn off heat and drizzle with sesame oil. Transfer to serving dish. Serve as part of a Chinese meal: rice, soup, and a balanced variety of dishes--one per person.

This recipe comes from 'Ji Pin Su Cai' (Best Vegetable Dishes), a 30-cent, 5-inch-square, paperback cookbook from Wal-Mart in China. It's simple home-style Chinese cooking. Chinese cookbooks assume you will know how much of each condiment and seasoning to add, so most of the ingredients are listed 'ge shi liang'--to taste. I've suggested amounts, but you can adjust according to your own preference.

1 tablespoon minced garlic (to taste)
1 green onion (white part only)
1 inch ginger (to taste)
1/4 teaspoon salt (to taste)
1/4 teaspoon msg (to taste)
2 teaspoons rice wine (to taste)
4 tablespoons vegetable oil (to taste)

Steps:

  • Snap ends from snow peas, wash, drain, and chop into bite-size lengths.
  • Cut onion and ginger lengthwise into tiny slivers. Mince garlic.
  • Heat empty wok over highest heat. Add oil and swirl. Add snow peas, and stir-fry until thoroughly hot.
  • Add garlic, ginger, onion, rice wine, salt, msg, stirring quickly after each. Stir-fry until fragrant, and serve as part of a Chinese meal: rice, soup, and a balanced variety of dishes--one per person.
