Delicious Pumpkin Snack Mix has popcorn, peanuts, cheerios, chex, candy corn, and mallow pumpkins. It's perfect for fall!

4 cups popped popcorn ((we used Kettle Corn))
1 1/2 cup cherrios ((we used Honey Nut))
1 1/2 cup Rice CHEX
1/2 cup peanuts
1/3 cup brown sugar
1/4 cup light corn syrup
2 tbsp butter
1 tsp vanilla extract
1/4 tsp baking soda
1/2 cup candy corn
1/2 cup candy pumpkins

Steps:

  • Line large pan with parchment paper.
  • In a bowl mixed popped popcorn, cereal and peanuts. Spread out evenly onto parchment-lined pan.
  • In a sauce pan, combine brown sugar, syrup and butter. Bring to boil and let boil for 2 minutes. Remove from heat and add vanilla and baking soda. Stir until mixed well. Pour over popcorn mixture and toss with a spoon until evenly coated.
  • Bake at 250 for 15 minutes. Take out and stir. Bake for another 10 minutes. Let cool.
  • Add in ½ cup candy corn and ½ cup candy pumpkins and mix well.

3 quarts popped popcorn
4 cups Cheerios
4 cups Corn or Rice Chex
2 cups salted peanuts
1 cup packed brown sugar
3/4 cup light corn syrup
1/4 cup butter, cubed
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1 package (16 ounces) candy pumpkins

Steps:

  • In a large greased roasting pan, combine the popcorn, cereal and peanuts. In a large saucepan, combine the brown sugar, corn syrup and butter; bring to a rolling boil. Boil for 6 minutes, stirring occasionally. Remove from the heat; quickly stir in vanilla and baking soda until mixture is light and foamy. , Immediately pour over popcorn mixture; toss to coat. Bake, uncovered, at 250° for 1 hour, stirring every 15 minutes. Cool completely. Stir in candy pumpkins.

Steps:

  • 1. In 1-gallon container with cover, mix all ingredients; cover tightly.
  • Store at room temperature.
