1 tablespoon vegetable oil
1 lb boneless skinless chicken breast, diced
1 cup onion, chopped
1/2 cup carrot, sliced
1 cup celery, sliced
1/2 cup bell pepper, chopped
2 cups solid pack pumpkin
2 cups chicken broth
16 ounces green chili sauce
1 1/4 cups hominy
1/2 cup sour cream
3 tablespoons cilantro, chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon oregano
1/2 teaspoon cumin

Steps:

  • Heat oil in large saucepan over medium-high heat.
  • Add chicken, onion, and carrot, cook fo 3-4 minutes or until chicken no longer pink.
  • Add celery and bell pepper; cook for 3-4 minutes or until vegetables are slightly tender.
  • Stir in pumpkin, broth, green chili, hominy, sour cream, cilantro, and remaining spices/herbs.
  • Reduce heat to low; cook, stirring occasionally, for 10-15 minutes or until flavors are well blended.
  • CROCK POT INSTRUCTION:.
  • Follow step 1-2 as stated above.
  • Once chicken is cooked; add to crockpot with remaining ingredients (with exception of sour cream!).
  • Cook on low 6-8 hrs; stir in sour cream prior to serving.

A puréed salsa made with roasted pumpkin seeds helps give this posole a rich flavor and chowderlike texture.

1 large yellow onion, cut into wedges
3 large poblano chiles
1 serrano chile
1 1/2 pounds tomatillos, husks removed, rinsed
4 unpeeled garlic cloves
2 dried ancho chiles, stemmed and seeded
About 1 cup salted, roasted pumpkin seeds (pepitas), divided
2 cans (29 oz. each) white hominy, rinsed and drained
5 to 6 cups vegetable broth
About 5 tsp. dried Mexican oregano, divided
1 teaspoon ground cumin
1 large zucchini, cut into large dice
Accompaniments: corn tortillas, cilantro leaves, thinly sliced green onions, and crumbled cotija cheese

Steps:

  • Preheat broiler with oven rack 3 in. from heat. Set yellow onion, poblanos, serrano, tomatillos, and garlic on a rimmed baking sheet. Broil, turning, until vegetables are browned to blackened all over, 15 to 30 minutes, moving them to a bowl as browned. Let cool.
  • Toast ancho chiles in a large pot over medium heat until fragrant, pressing down with tongs and turning occasionally, about 3 minutes. Turn off heat.
  • Peel and seed poblanos and serrano. Peel garlic. Whirl serrano, garlic, onion, tomatillos and any juices, and 1/2 cup pumpkin seeds in a food processor until very smooth. Pour into pot with whole anchos (they'll fall apart as they cook). Coarsely chop poblanos and add to pot.
  • Stir in hominy, 5 cups broth, 2 tsp. oregano, and the cumin. Cover, bring to a boil over high heat, then reduce heat and simmer, stirring occasionally, until cumin flavor is mellow, about 45 minutes. Discard any large pieces of ancho chile.
  • Stir zucchini into posole and simmer just until tender, about 5 minutes. Stir in more broth if you'd like a thinner soup.
  • Ladle posole into bowls and serve with remaining pumpkin seeds and oregano and other accompaniments to taste.

1 tablespoon vegetable oil
1 lb boneless skinless chicken breast, cut into 1 inch pieces
1 cup chopped onion
1/2 cup sliced carrot

1/2 chopped red bell pepper
1 3/4 cups solid pack pumpkin
1 3/4 cups chicken broth
1 1/4 cups hominy
1/2 cup sour cream (I prefer fat free)
3 tablespoons chopped fresh cilantro (Parsley may be substituted)
1/2 teaspoon salt
1/2 teaspoon ground black pepper (I prefer freshly ground)
1/2 teaspoon dried oregano, crushed
1/2 teaspoon ground cumin
1/8 teaspoon ground nutmeg (I promise this is good)

Steps:

  • HEAT oil in a large saucepan over medium-high heat.
  • Add chicken, onion and carrot; cook for 3 to 4 minutes or until chicken is no longer pink.
  • Add celery and bell pepper; cook for 3 to 4 minutes or until vegetables are crisp-tender.
  • STIR in pumpkin, broth, hominy, sour cream, cilantro, salt, pepper, oregano, cumin, and nutmeg.
  • Reduce heat to low; cook, stirring occasionally, for 10 to 15 minutes or until flavors are blended.

Absolute perfect main course for a cold Sunday. This is the best Posole I've ever had. Needs nothing in my opinion. Don't skimp on the chiles and make sure there is enough "broth" in the finished thing. My favorite way to eat it is with a warm tortilla and fresh lettuce, tomatoes and a dollop of sour cream.

2 heads garlic
1/2 cup extra virgin olive oil
6 hatch New Mexico green chilies, roasted, peeled, seeded and chopped (also available frozen in the grocers freezer)
2 tablespoons kosher salt (or to taste)
5 -6 lbs pork shoulder (cut in 2 inch pieces)
1 tablespoon black pepper
4 quarts posole (cooked, takes hours) or 4 quarts canned white hominy (drained)
1 tablespoon dried Mexican oregano
2 yellow onions, chopped
2 avocados, chopped
2 lemons, cut into 16 wedges
1 bunch radish, thinly sliced
3 ripe tomatoes, chopped
1/2 head iceberg lettuce, shredded
4 tablespoons Mexican oregano
1/2 cup salsa, your favorite
1/2 cup sour cream
1 cup cheddar cheese, grated
1/2 cup pico de gallo

Steps:

  • INSTRUCTIONS:.
  • Preheat oven to 400°F.
  • Slice off tops of garlic heads, about 1/4.
  • Place garlic, cut side up, on a piece of foil big enough to just wrap the garlic completely.
  • Drizzle garlic heads with extra virgin olive oil.
  • Sprinkle garlic with a pinch of kosher salt and a couple grinds of pepper.
  • Wrap garlic in foil and place on middle oven rack for about 45 minutes.
  • Remove and let cool.
  • Heat 1/3 Cup olive oil in a large heavy skillet over mod. high heat.
  • Add chiles to oil until just soft, don't crowd the pan.
  • Remove chiles and set aside.
  • Salt and pepper pork well.
  • Add pork to pan one at a time, don't crowd the pan. Sear meat on all sides, remove to drain and work in batches.
  • In a heavy 4-5 qrt. pot over med. high heat, add pork and chilies.
  • Add 1/2 Cup water to pan.
  • Press garlic heads to squeeze out garlic and add to pan.
  • Add posole, salt and pepper. Stir.
  • Add 4 qrts of water to pan, cover and bring to a boil.
  • As soon as everything comes to a boil, reduce heat to a simmer, uncover and simmer for 3 hours. Pork should be very tender.
  • About 30 minutes before posole is done, prepare garnishes and set out for serving.

1 large white onion, halved lengthwise and thinly sliced
6 garlic cloves, chopped
2 1/2 teaspoons salt
3 lb skinless boneless chicken thighs
1/2 cup hulled (green) pumpkin seeds (not roasted; 2 1/4 ounce)
1 lb tomatillos, husked
2 fresh jalapeño chiles, quartered (including seeds)
3/4 cup chopped fresh cilantro
1 teaspoon dried epazote or oregano (preferably Mexican), crumbled
2 tablespoons vegetable oil
2 (15-oz) cans white hominy, rinsed and drained
Accompaniments: diced radish; cubed avocado tossed with lime juice; shredded romaine; chopped white onion; lime wedges; dried oregano

Steps:

  • Cook chicken:
  • Bring 8 cups water, bay leaf, half of onion, half of garlic, and 1 teaspoon salt to a boil, covered, in a 6-quart heavy pot, then reduce heat and simmer 10 minutes. Add chicken and poach at a bare simmer, uncovered, skimming off any foam, until just cooked through, about 20 minutes. Transfer chicken to a cutting board to cool. Pour broth through a fine-mesh sieve into a large bowl, discarding solids, and reserve. When chicken is cool enough to handle, coarsely shred with your fingers.
  • Make sauce while chicken cools:
  • Cook pumpkin seeds in a dry small skillet over low heat, stirring occasionally, until puffed but not browned (seeds will pop as they puff), 6 to 7 minutes. Transfer to a bowl to cool completely, then finely grind in coffee/spice grinder.
  • Simmer tomatillos and remaining onion in remaining cup water in a 3-quart saucepan, covered, until tender, about 10 minutes. Drain vegetables and purée in a blender with jalapeños, 1/4 cup cilantro, epazote, remaining garlic, and remaining 1 1/2 teaspoons salt.
  • Heat oil in a 4- to 5-quart heavy pot over moderately high heat until hot but not smoking, then add purée (use caution as it will splatter and steam). Cook, uncovered, stirring frequently, until thickened, about 10 minutes. Stir in pumpkin seeds and 1 cup reserved broth and simmer 5 minutes. Stir in shredded chicken, hominy, and 3 more cups reserved broth and simmer, partially covered, 20 minutes.
  • Stir in remaining 1/2 cup cilantro and serve pozole in deep bowls with accompaniments.

3 egg whites
1 (21 ounce) can pumpkin
1/4 cup brown sugar (more if desired) or 1/4 cup artificial sweetener (more if desired)
3 teaspoons cinnamon
1 teaspoon nutmeg
1 egg yolk
1/2 cup milk

Steps:

  • Preheat oven to 380 °F.
  • Beat egg whites in medium bowl until stiff. Set aside.
  • Using electric mixer, blend pumpkin, sugar, cinnamon, nutmeg, egg yolk and milk in large bowl.
  • Fold 1/3 of egg whites into pumpkin blend. Continue to fold in egg whites 1/3 at a time until egg whites are completely folded inches.
  • Have small ramekins or coffee cups at ready with wax paper placed around edges and inside (trust me, it's easier to clean).
  • Pour pumpkin/egg mix into cups until almost full (leave about a half inch or more at the top as they will rise).
  • Place cups on baking tray and put into oven.
  • Bake for 30-45 minutes
  • DO NOT OPEN OVEN TO CHECK ON SOUFFLES! USE OVEN LIGHT!
  • Top with whipping cream/ice cream, brown sugar, nuts, cinnamon/nutmeg or any other desired toppings.

4 dried guajillo or pasilla chilies
2 tablespoons canola oil, divided
1-1/2 cups boiling water
2 pounds boneless pork, cut into 1-inch cubes
1/2 cup chopped onion
4 garlic cloves, minced
3 cups chicken broth
2 cans (29 ounces each) hominy, rinsed and drained
1-1/2 teaspoons dried Mexican oregano

Steps:

  • In a Dutch oven, saute chilies in 1 tablespoon oil for 1-2 minutes or until heated through, pressing with a spatula (do not brown). Using a slotted spoon, transfer chilies tn a bowl; add boiling water. Soak for 20 minutes or until softened; remove stems and seeds, reserving water., In the Dutch oven, brown pork in remaining oil in batches, sauteing onion and garlic with the last batch of pork. Return pork to pan and add broth. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until meat is tender., Transfer chilies and soaking liquid to a blender; cover and process until smooth.   • Drain and rinse the hominy. Put it into a large pan and cover with water by 1-inch. Add the bay leaf and garlic and bring to a boil over a high heat. Cover, and reduce the heat to low. Simmer for 2-3 hours or until the hominy has burst into ‘flowers”. Check the pot from time to time and add more water if it looks dry.
  • While the hominy is cooking, with a peeler, take off little patches of skin all over the pumpkin halves until they look polka dotted! This is purely decorative and can be left out if you don''t have a lot of time. (FYI - butternut squash has harder skin and must be completely peeled) Cut the halves into ½ " dice. Set aside.
  • Heat the oil in a large soup pot over a medium-high flame. When it ripples, add the onion and sauté stirring until it starts to soften and turn transparent. Add the pumpkin cubes sprinkle with a little sea salt, mix well and cover. Turn the heat down to medium low and sweat the vegetables for about 10 minutes or until the pumpkin has started to soften, and the onion is really soft. The onion should not brown so stir the pot occasionally to make sure it doesn’t stick. Add 6 cups of water or stock, and the cooked hominy along with any liquid left in the pot. Bring to a boil, cover then turn the heat to medium low and simmer until the pumpkin is tender but not mushy, about 20 minutes.
  • While the soup is cooking, prepare the garnish. Mix the cilantro, shallot and jalapeno together in a little bowl. Put the other garnishes into separate bowls. Eat the soup with a squeeze of lime juice, and a little of the other garnishes to taste.
