Steps:
- Tip the flour into a bowl and add the baking powder. Measure the milk into a jug and stir in the butternut squash, followed by the egg yolk.
- Make a well in the centre of the flour and gradually add the milk mixture until you have a lump-free batter. Alternatively, tip everything into a blender and whizz it.
- Whisk the egg white until stiff, then fold it into the batter.
- Heat a non-stick pan and cook 1 large or 3 small pancakes at a time (if making small pancakes, use 1 tbsp for each). Wait until lots of bubbles have risen to the top and the surface has begun to dry out before turning them over, but keep an eye on the base to make sure it doesn't get too brown. Repeat with the remaining mixture.

Steps:
- Whisk together the pancake mix, white sugar, cinnamon, the 1/3 teaspoon nutmeg, and ginger; set aside. Beat together the eggs, milk, pumpkin, and vegetable oil. Combine the two mixtures, stirring just until all ingredients are moistened.
- Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Bubbles will start to form in the pancakes. Cook until the edges of the pancakes start to look dry, and a bubble popped near the edge holds its shape. Flip the pancakes over, and continue cooking until the other side is golden brown. Repeat with remaining batter, adding more oil to the griddle if necessary. Stack the pancakes on a plate and keep warm until serving. For larger batches, keep pancakes warm in a single layer on a cooling rack positioned over a baking sheet in a 300 degrees F oven (150 degrees C).
- Place whipping cream in a small, deep, chilled bowl. Add the 2 tablespoons sugar, vanilla, and nutmeg; beat using a mixer with chilled beaters on medium-high speed until soft peaks form.

PUMPKIN PANCAKES
Easy to make and delicious. I made these for my kids when I had some left over canned pumpkin. Great warm breakfast in the fall. If you're feeling really creative, you can even make them in the shape of little pumpkins and put eyes, nose and mouth on them with raisins! The kids love them, and so do the adults!!!

- Preheat the oven to 350F. Use cooking spray or avocado oil to grease a 12 count muffin pan, or use baking muffin liners.
- In a large mixing bowl, mix the pumpkin puree, milk, brown sugar, vanilla, and egg until well combined. Add the pancake mix, pumpkin pie spice and cinnamon, then mix until combined. Divide all the batter between the prepared 12 muffin tin wells. They’ll be filled about 3/4 of the way to the top. Sprinkle the tops with pumpkin seeds or chocolate chips if you want!
- Bake muffins in the preheated oven for 20-22 minutes. Muffins are done baking when a toothpick comes out clean. Let them cool for a couple minutes, then use a butter knife around the edges of the muffins to gently loosen from the sides. Place muffins on a cooling rack and let them cool completely. Store in an airtight container on the counter for up to 4 days.
