1 cup orange juice
4 cups vanilla ice cream
1 cup canned pumpkin
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
Black licorice twists, optional

Steps:

  • In batches, place the first 7 ingredients in a blender. Cover and process until smooth, 20-30 seconds. Serve immediately, with licorice stirrers if desired.

1/2 cup pumpkin puree (not pumpkin pie filling)
1/4 cup nonfat milk
1/2 medium ripe banana (cut into chunks and frozen (about 1/3 cup))
1 1/2 cups vanilla frozen yogurt (slightly softened)
1 teaspoon pumpkin pie spice (or 1/2 teaspoon cinnamon, plus a pinch each of ginger, nutmeg, and cloves)
1/4 teaspoon ground cinnamon
1 full sheet graham cracker (plus additional for topping)
Whipped cream (optional for topping)

Steps:

  • To a high-powered blender, add in order the pumpkin puree, milk, banana, frozen yogurt, pumpkin pie spice, and cinnamon. Break the sheet of graham cracker into a few pieces directly into the blender. Blend until smooth, adding more milk 1 tablespoon at a time as needed to reach your desired consistency.
  • Divide into glasses and top with additional crushed graham crackers and whipped cream. Sip immediately.

This is based off of http://greatist.com/health/superfood-pumpkin, but I changed it for myself. I'm saving it here so I remember what I did. The greek yogurt gives it a slight tang. I would imagine using vanilla greek yogurt would make it more of a traditional pie flavor. You can use up to 1 1/2 cups milk. I like to soak the chia seeds in water for about10 minutes, but that's up to you. It's around 233 calories, 24 g protein, 8.1 total fat (1.3 is saturated), 7 g sugars, and 10 g fiber

1 tablespoon chia seeds
1/4 teaspoon cinnamon
1/4 teaspoon pumpkin pie spice
1 dash vanilla extract
artificial sweetener, of your choice (I used 1/2 packet of Stevia)
