WHITE CHOCOLATE CUSTARD
A fantastic custard to serve with fresh fruits. If you love white chocolate this is a custard for you! Yum! I think this recipe would work just a nicely with milk or dark chocolate also.

Steps:
- Place chocolate in a medium heatproof bowl and set aside.
- Combine milk and cream in a medium saucepan and stir.
- over a medium heat until hot but do not allow the mixture to boil.
- Whisk egg yolks, cornflour and sugar in a medium bowl until the mixture is smooth and thick and whisk hot milk mixture, into egg yolk mixture.
- Return mixture to saucepan and whisk constantly, over a low heat for about four minutes, or until custard thickens.
- Pour custard over the chopped chocolate and stir until chocolate is melted.
- Custard can be seved warm or cold.

HOMEMADE BOURBON BISCUIT RECIPE
A classic British chocolate biscuit.

Steps:
- Sift flour, custard powder and cocoa into a large bowl.
- Cream butter and sugar, then stir in the egg. Add the sifted ingredients from the other bowl and mix to an even dough.
- Place onto worktop and using flour, roll out to about 1/8" thickness and cut into fingers.
- Place on lined baking tray.
- Bake for about 12 to 15 minutes, turning half way through baking time to assure even results.
- Place on cooling rack and let cool before filling them.
- Mix all the ingredients together to form a stiff buttercream. Adjust with a few drops of liquid; just don't make the filling too soft.
- Match up two biscuits at a time (they won't all be exactly the same size, believe it or not) and sandwich together with the filling.
- Continue until all the biscuits and filling are used. Enjoy with a steaming hot, cup of tea!

- Measure out your sugar into a bowl, or mixer if you’re using one. Measure the butter and chop into a few small pieces before adding to the bowl.
- Crack the egg into a separate bowl before adding it, along with the vanilla, into the sugar/butter mixture.
- Weigh out the flour and custard powder then add to your mixture. Pulse your mixture together (ie mix it slowly and not too much) until it comes together into a bit of a dough.
- Chop the chocolate into small chunks then add it into your biscuit dough. Stir them in with a spoon or by hand.
