PUMPKIN CREAM PIE
Steps:
- Preheat the oven to 375 degrees F and arrange a rack in the bottom third of the oven.
- In a medium bowl, combine the cream cheese, pumpkin puree, cream, brown sugar and pumpkin pie spice. Using electric hand mixer, add the eggs, 1 at a time incorporating completely between each addition.
- Pour the filling into the pie shell and bake on a sheet tray until the filling is mostly set and the crust has browned, about 50 to 60 minutes. The center will still look slightly loose. Remove from the oven and cool to room temperature.
- For Whipped Cream:
- In a chilled bowl, beat the heavy cream with a hand mixer until beginning to thicken. Add the brown sugar and pumpkin pie spice and continue to beat until soft peaks form. Spread the whipped cream over the pie and serve immediately or hold in the refrigerator for up to 2 hours before serving. .

Steps:
- In a large saucepan, combine 2/3 cup sugar, the gelatin, cinnamon, salt and nutmeg.
- Combine egg yolks with milk and add to gelatin mixture.
- Heat, stirring constantly, until mixture thickens slightly.
- Stir in pumpkin. Chill, stirring often, until mixture mounds slightly.
- In a large bowl, beat egg whites until soft peaks form. Gradually add remaining sugar into egg whites.
- Fold in chilled pumpkin mixture into egg whites. Pile into prepared graham cracker crust. Chill until firm.
- To serve, add whipped cream in center of pie, and sprinkle with toasted coconut.

- USE A BLENDER, if you don't it will be stringy. Put pumpkin in blender with, eggs, sugar, cinnamon, pumpkin pie spice, salt, almond extract, and vanilla.

- Preheat oven to 350 degrees. Grease a 13 x 9 x 2 baking dish. Beat margarine and sugar until fluffy.
- Combine oatmeal and flour in a small bowl. Add to creamed mixture of margarine and sugar. Mix well.
- Press evenly onto bottom of prepared pan. Bake 18-20 minutes until light brown. Cool slightly.

This Recipe is My Very Own. I have added the Pumpkin and spices to My liking. I had to use up some Pumpkin I had left over from another recipe and this is what came out of this. Simple & Fabulous!
