Using the batter from pumpkin cheesecake muffins, make homemade pumpkin donuts with brown sugar icing for fall breakfast. This brown sugar icing sets, so the donuts are easy to stack and transport. See recipe notes about turning these into pumpkin muffins or mini pumpkin donuts.

1 and 3/4 cups (219g) all-purpose flour (spoon & leveled)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 and 1/2 teaspoons ground cinnamon
1 teaspoon pumpkin pie spice
1/2 cup (120ml) vegetable oil (or canola oil or melted coconut oil)
3/4 cup (150g) packed light or dark brown sugar
2 large eggs, at room temperature
1 cup (227g) fresh or canned pumpkin puree
1/3 cup (80ml) milk
1 teaspoon pure vanilla extract
3/4 cup (150g) packed light or dark brown sugar
1/4 cup (60ml) milk
1 Tablespoon (14g) unsalted butter
1/2 teaspoon pure vanilla extract
1 and 1/2 cups (175g) sifted confectioners' sugar
pinch of salt, to taste
optional: toppings, see note

Steps:

  • Preheat oven to 350°F (177°C). Spray donut pan with non-stick spray. Set aside.
  • Whisk the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice together in a large bowl until combined. Set aside. In a medium bowl, whisk the oil, brown sugar, eggs, pumpkin puree, milk, and vanilla extract together until combined. Pour the wet ingredients into the dry ingredients, then fold everything together gently just until combined and no flour pockets remain.
  • Spoon the batter into the donut cavities or for ease, I highly recommend using a large zipped-top bag. Cut a corner off the bottom of the bag and pipe the batter into each donut cup, filling about halfway.
  • Bake for 10-11 minutes or until the edges and tops are lightly browned. To test, poke your finger into the top of the donut. If the donut bounces back, they're done. Cool donuts in the pan for 2 minutes then transfer to a wire rack. Re-grease the pan and bake the remaining donut batter. *For mini donuts, bake in a mini donut pan for 8-9 minutes. Cool donuts for at least 10 minutes before icing them.
  • Combine the brown sugar, milk, and butter in a medium saucepan over medium heat. Stir until the butter has melted and mixture is smooth. Bring to a simmer. Allow to simmer for 1 minute then remove from heat and whisk in the vanilla extract and sifted confectioners' sugar until smooth and combined. Taste, then add a pinch of salt if desired- I always add a tiny pinch. Let the icing cool for 5 minutes to slightly thicken. Dip the tops of the pumpkin donuts into the warm icing. If icing is getting too thick as you're dipping, add a little more milk or warm back up in the microwave or on the stove to thin out. Place dipped donuts on a wire rack placed on a baking sheet so any excess icing can drip off. Top with chopped nuts or other toppings if desired. If applied lightly, the icing will eventually set in about 1 hour so you can stack or transport the donuts.
  • Cover leftover donuts tightly and store at room temperature for 1-2 days or in the refrigerator for up to 1 week.

1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon kosher salt
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
½ cup vegetable oil (like canola oil, melted coconut oil, or melted butter)
¾ packed brown sugar
2 large eggs, at room temperature
1 cup fresh or canned pumpkin puree
⅓ cup milk (I used whole milk)
1 teaspoon pure vanilla extract
2 ounces cream cheese, softened
2 tablespoons butter, softened
½ cup powdered sugar, sifted
1 teaspoon pure vanilla extract
2 tablespoons chopped pecan nuts

Steps:

  • Preheat the oven to 350ºF. Spray a donut pan with non-stick spray and set aside.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and pumpkin pie spice and set aside. In another bowl whisk together the oil or melted butter, brown sugar, eggs, pumpkin puree, milk, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and mix until well combined.
  • You can either spoon the batter into the donut holes or use a large piping bag or zipped-top bag which I highly recommend. Simply cut the corner off the bottom of the bag and pipe the batter into each donut hole, filling about halfway. With damp hands press them gently to smooth them out, this also prevents burning the tops.
  • Bake for 10-12 minutes or until the edges and tops are lightly browned. Cool donuts in the pan for 5 minutes then transfer to a cooling rack. Repeat with the remaining batter.
  • In a medium-size bowl, combine the softened butter and cream cheese. Beat until smooth. Add the powdered sugar and vanilla extract. Beat until smooth.
  • Spread the frosting over the top of the cooled donuts. Sprinkle the chopped pecan nuts over the donuts. Best served fresh.
  • Store leftovers in the refrigerator.

3 tablespoons unsalted butter, room temperature
1 egg
2 egg yolks
1 teaspoon vanilla extract
1/2 cup buttermilk, plus
1 tablespoon buttermilk
1 cup pumpkin puree
canola oil (for frying)
8 ounces cream cheese, softened
1/4 cup pumpkin puree
1/4 cup butter, softened
1 tablespoon orange juice
1 teaspoon grated orange zest
1/2 teaspoon vanilla
4 cups confectioners' sugar, sifted

Steps:

  • make the donuts: whisk together the flour, baking powder, salt, cinnamon, ginger, baking soda, nutmeg and cloves. beat sugar and butter in large bowl until blended (mixture will be grainy). beat in egg, then yolks and vanilla. gradually beat in buttermilk; fold in pumpkin in 4 additions. cover with plastic and chill 3 hours.
  • sprinkle a baking sheet lightly with flour. press out part of the dough on floured surface to 1/2 to 2/3 inch thickness. using 2 1/2 inch diameter round cutter, cut out dough rounds until all dough is used. using 1-inch-diameter round cutter, cut out center of each dough round to make doughnuts and doughnut holes. toward the end of making the donuts, i simply formed them into rough patties by hand and poked out the hole with my thumb.
  • place a cooling rack on a baking sheet (for draining the donuts). pour oil into large deep skillet to depth of 1 1/2 inches (or fire up your deep fryer). attach deep-fry thermometer and heat oil to 365 F to 370°F fry doughnut holes in batches until golden brown, turning occasionally, about 2 minutes. using a slotted spoon, transfer to the cooling rack to drain. fry doughnuts, 2 or 3 at a time, until golden brown, adjusting heat to maintain temperature, about 1 minute per side. Using slotted spoon, transfer doughnuts to cooling rack. give the donuts and holes a pat with a paper towel to remove excess oil.
  • make the frosting: soften the cream cheese in the microwave for about 30 seconds. blend in the pumpkin, butter, orange juice, zest and vanilla in a mixer or by hand. add the sugar and beat until light and creamy. spread on donuts or just dip the donuts and holes right into the frosting as you eat.

After getting this recipe from a friend, I have made them over 100 times for family and friends and they are always a hit, especially around Halloween and Thanksgiving! As far as the spices go, less is more; this is not a full-on pumpkin pie or pumpkin bread/cake. They're light and moist cookies with a taste of fall in every bite!

2 teaspoons vanilla extract
1 egg
1 (15 ounce) can pumpkin puree
1 (3 ounce) package cream cheese, softened
¼ cup butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
  • Whisk flour, baking powder, cinnamon, baking soda, nutmeg, and ginger together in a bowl. Beat 1 cup butter, white sugar, brown sugar, 2 teaspoons vanilla extract, and egg with an electric mixer in a separate large bowl, beating until mixture is smooth. Beat in pumpkin puree.
