My husband came up with this creation for Easter dinner, as Tilapia is indigenous to the sea of Galilee. It remains the best fish I have ever put in my mouth, absolutely beyond restaurant quality.

2 eggs
1 teaspoon lemon pepper
1 teaspoon garlic pepper
1 cup ground almonds
1 cup freshly grated Parmesan cheese
8 (6 ounce) tilapia fillets
¼ cup all-purpose flour for dusting
6 tablespoons butter
salt to taste
1 cup freshly grated Parmesan cheese
8 sprigs parsley
8 lemon wedges

Steps:

  • Beat the eggs with the lemon pepper and garlic pepper until blended; set aside. Stir together ground almonds with 1 cup of Parmesan cheese in a shallow dish until combined; set aside. Dust the tilapia fillets with flour, and shake off excess. Dip the tilapia in egg, then press into the almond mixture.
  • Melt butter in a large skillet over medium-high heat. Cook tilapia in melted butter until golden brown on both sides, 2 to 3 minutes per side. Reduce heat to medium, and season fillets with salt if desired. Sprinkle the tilapia with the remaining Parmesan cheese, cover, and continue cooking until the Parmesan cheese has melted, about 5 minutes.
  • Transfer the tilapia to a serving dish, and garnish with parsley springs and lemon wedges to serve.

1/2 cup dry white wine or chicken broth
1/4 cup fresh lemon juice
3 tablespoons finely chopped shallots
3/4 cup whipping (heavy) cream
1 teaspoon grated lemon peel
1/4 cup cold firm butter, cut into 4 pieces
1/4 teaspoon salt
1/8 teaspoon white pepper
4 skinless tilapia fillets or other medium-firm fish fillets (6 oz each)
1/4 teaspoon salt
1 tablespoon vegetable oil
1/4 cup chopped toasted hazelnuts (filberts) or almonds

Steps:

  • In 2-quart saucepan, heat wine, lemon juice and shallots to boiling over medium-high heat. Boil uncovered 4 minutes, stirring occasionally, until liquid is reduced by half.
  • Add whipping cream to pan and heat to boiling, stirring occasionally. Boil uncovered 6 minutes, stirring occasionally, until sauce is thickened and reduced to about 1/2 cup. Remove from heat and add lemon peel. Beat in butter, 1 piece at a time, with wire whisk, adding the next piece only after the first has been completely beaten in and melted. When all of the butter has been beaten in, add 1/4 teaspoon salt and the white pepper. Cover to keep warm.
  • Sprinkle fish with 1/4 teaspoon salt; set aside.
  • In 12-inch skillet (preferably nonstick), heat oil over medium-high heat until shimmering and hot. Add fish and cook 3 minutes. Flip and cook 3 minutes longer or until edges begin to brown and fish flakes easily with fork.
  • To serve, spoon sauce over fish and sprinkle with nuts.

3 c snow pea pods, trimmed
4 4 to 5 ounce skinless tilapia fillets
sea salt and fresh ground pepper
1 tsp flour
1 Tbsp olive oil
2 Tbsp butter
1/4 c sliced almonds
1 Tbsp snipped fresh parsley if desired

Steps:

  • 1. In a large sauce pan place enough salted water for cooking the snow pea pods. Bring the water to boiling and add pea pods.
  • 2. Cook for 2 minutes. Remove pan from heat; drain and set aside.
  • 3. Meanwhile, season one side of the fish with salt and pepper; sprinkle with flour.
  • 4. Heat a large skillet over medium high heat and add olive oil and tilt pan to coat with oil. Return pan to heat and add fish with floured side up.
  • 5. Cook fish for 4 to 5 minutes until it is easy to remove with a spatula.
  • 6. Gently turn fish and cook for 2 to 3 minutes more or until fish flakes easily with a fork or is golden brown.
  • 7. Arrange peas on a serving platter and place fish on top of peas. (I arranged 4 serving plates instead of serving platter)and served roasted potatoes as a side dish.
  • 8. In the same skillet reduce heat to medium and add butter.
  • 9. When butter begins to melt, stir in almonds.
  • 10. Cook for 30 to 60 seconds or until butter is melted and nuts are lightly toasted (don't let the butter burn).
  • 11. Spoon butter mixture over fish fillets. Sprinkle with parsley if desired and serve hot.

Steps:

  • In a shallow dish, combine the flour, paprika, garlic powder, salt and pepper. One side at a time, coat the tilapia fillets in the flour. Set aside.
  • In a large cast iron skillet over medium-high heat, melt 1/4 cup of the butter. Once the butter is melted and beginning to sizzle, add the tilapia fillets side by side in the skillet. Cook the fish for about 5-6 minutes before flipping and cooking for another 5-6 minutes on the other side, or until it flakes easily with a fork*.
  • When the fish is cooked, remove it to a plate and keep warm in the oven. Add the remaining butter to the skillet, and once the butter starts sizzling use a spatula to scrape up any brown bits, and squeeze the lemon juice into the pan. 12 tablespoons butter, divided
½ cup shallots, minced
¼ cup white wine
Zest of one lemon
3 tablespoons lemon juice
½ teaspoon kosher salt
¼ teaspoon white pepper
1 tablespoon fresh thyme
1 pound tilapia filets
2 tablespoons all-purpose flour
¼ teaspoon garlic powder
¼ teaspoon onion powder
½ teaspoon paprika
¼ teaspoon table salt
¼ teaspoon white pepper
2 tablespoon extra-virgin olive oil

Steps:

  • Begin by making the sauce. It can be served room temperature.*
  • In a medium saute pan, melt two tablespoons of the butter over medium low heat and once melted, add the shallots and cook until soft, about four minutes.
  • Add wine and cook to evaporate.
  • Add zest, lemon juice, salt, pepper and thyme and cook for two minutes until most of the liquid has evaporated, leaving about a tablespoon of liquid with the solids.
  • Turn the heat to low and start stirring in four tablespoons of butter letting them melt into the sauce. Add four more tablespoons of butter stirring in to melt and mix in.

  • In a small bowl, mix flour, garlic powder, onion powder, paprika, salt and pepper. Pour into a small sifter and sift over both sides of the fish.
  • Heat a large skillet or saute pan over medium heat and add the olive oil.
  • Once the oil is hot, add all of the fish filets and cook for about five minutes, turning half way through.
  • Remove to a platter and drizzle some sauce over the fish and serve the rest on the side.
