MAPLE-PUMPKIN DINNER ROLLS
Every year my family and I visit our local pumpkin patch. Afterward, we come home and enjoy our first autumn meal at which these dinner rolls appear, along with corn chowder and apple pie. -Sabrina Fraley, Georgetown, Kentucky

- In a large bowl, mix cornmeal, brown sugar, yeast, salt, pie spice and 2 cups flour. In a small saucepan, heat 3/4 cup milk, syrup and 2 tablespoons butter to 120°-130°; stir into dry ingredients. Stir in pumpkin and enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Cover and let rest 10 minutes., Divide and shape dough into 16 balls. Place in 2 greased 9-in. round baking pans or cast-iron skillets. Cover with kitchen towels; let rise until doubled, about 1 hour. Preheat oven to 375°., Brush remaining milk over dough. Bake 12-15 minutes or until golden brown., Melt remaining butter; brush over hot rolls. Remove from pans to wire racks; serve warm.

- In a large bowl, dissolve yeast in warm water. Add the pumpkin, butter, sugar, eggs, salt and whole wheat flour; beat until smooth. Stir in enough all-purpose flour to make a soft dough. Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide into three portions. Roll each portion into a 12-in. circle; cut each circle into 12 wedges. Roll up wedges from the wide end and place pointed side down 2 in. apart on greased baking sheets. Curve ends to form crescents., Cover and let rise until doubled, about 30 minutes. Bake at 400° for 12-15 minutes. Remove to wire racks.

PUMPKIN DINNER ROLLS
First saw this recipe posted in the Bread Forum and just had to try it. But since it's not posted here, decided it needed to be so everyone can have it. Add some pumpkin to your dinner rolls to celebrate the season. These rolls even look like mini pumpkins. They are easy to make from scratch and will look so gorgeous on your dinner table The dough recipe is from Delicious Dishes. They were soft and tender with a hint of sweetness. But you can use any of your favorite dinner roll recipe to shape these cute minis. They didn't take as much time as I thought it would.

Steps:
- Pour hot milk in a mixing bowl, add butter and stir to melt. Add sugars, pumpkin puree, salt to the milk and combine well.
- In a small bowl proof yeast in a lukewarm water with a teaspoon sugar. When it gets foamy add to the pumpkin mixture, and add the egg, mix well.
- Add in flour gradually and mix with a wooden spoon until well combined. The dough will be sticky.
- If using electric mixer, attach a dough hook and beat the mixture until the dough itself pulls from the side of the bowl.
- Turn the dough out to a wooden board dusted with a little flour. Knead with hand for 1 minute. Form the dough into a ball shape, place in a greased bowl and cover with a cloth. Let it rise in a warm place until it doubles in volume, about 1 hours.
- Punch the dough to deflate and knead it for a few seconds on a wooden board. Cut the dough in half. Cut each half into about 15 pieces.
- Roll each piece into a ball shape with your hand. Flatten the piece with palm of your hand a little. Using a knife, give 8 cuts on the edge to mimic flower pedals but the leave center uncut.
- Poke the center with your finger to give a deep indentation, and repeat the same procedure to all the other pieces.
- Place them, 2" apart, on a baking pan lined with parchment paper or baking mat, and let them rise again to be doubled, about 45 minutes.
- Preheat oven 350ºF for 20 minutes.
- If the center indentation is not obvious on the rolls, poke them again with your finger.
- Brush with egg wash, if you wish, and bake for 9-12 minutes until the top gets slightly golden.
- Brush the rolls with melted butter or a little honey diluted with water to make it shine if you wish.
- Insert pecan slices on top to mimic pumpkin stem.

HONEY DINNER ROLLS
I first made these in 2000. These are my favorite dinner rolls! I got the recipe out of a cookbook that famous country singers contributed to. This was sent in by Steve Wariner. You'll have no room for dinner after you start eating these! I make my rolls a bit bigger, so of course my yield is considerably less then recipe states.

Steps:
- Combine 2 cups flour and yeast in a large mixer bowl. Heat milk, honey, margarine and salt just until warm (115 to 120°F) and margarine is almost melted, stirring constantly. Add to flour mixture; add eggs.
- Beat at low speed of electric mixer for 30 seconds; scrape sides of bowl constantly. Beat for 3 minutes at high speed. Stir in as much remaining flour as you can mix in with a spoon.
- Turn dough out onto lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 mins). Shape into a ball. Place dough in a greased bowl, then turn it once. Cover dough and let rise in a warm place till double (about 1 hour). Punch dough down; divide in half. Cover again; let rest 10 minutes.
- Cut each dough half into 18 equal pieces. Roll into balls, and place in greased 2 1/2-inch muffin pans. Let rise until doubled (about 30 mins).
- Bake in a 375°F oven for 12 to 15 minutes. Remove from pan. Cool on a wire rack.
- Makes 36 rolls.

- In a large bowl or the bowl of a stand mixer fitted with the kneading hook, stir together the yeast, salt, nutmeg and 3 cups of the flour.
- In a medium saucepan, combine the milk, butter and honey. Heat over medium heat, stirring, until butter is melted and mixture is about 120-130 F. (If it gets too warm, simply stir for a bit until temperature reduces in to this range). Add the milk mixture to the dry ingredients and mix at medium speed for about 2 minutes. Add pumpkin puree and mix for another 2 minutes. Begin adding additional flour, 1/2 cup at a time, to start, and then less as you progress, until you have a moist, smooth but not sticky dough. Turn dough out on to a floured surface and knead a few minutes. Move to a greased bowl, cover with plastic wrap and allow to rise until doubled, about 45 minutes to 1 hour.
- *Note: I like to use a kitchen scale to ensure my rolls all come out the same size. It ensures even cooking and it looks nicer in the pan, as well. Simply weigh out the whole piece of dough. Divide that weight by 2 to determine the weight each half should be. To divide each half in to 12 equal pieces, divide the weight of the half by 12 and make all the rolls that weight.
